Here's another suggestion: add a make variable that isn't used or anything else, has a default empty value, and is used to create the compilation command. Let's say $LARGEFILE.
Then the configure command would be
% LARGEFILE='-D_LARGEFILE64_SOURCE -D_FILE_OFFSET_BITS=64' ./configure
and that should work on all shells, and without having to permanently export a variable to the environment, which I think we should avoid recommending.
