9 months after using it on a daily bases heavily! it's still the sharpest tool in the box :)
the maintenance that i've done is sharpen after every use, and every 3 months i've sharpened it using a whetstone. even now with a little over 3 months since the last stone sharpening i can shave using the knife!!!
very well balanced, glides through the ingredients rather than just cutting, solid like really solid it only chipped once (i hit it on metal edge by mistake), slicing 10 pounds of chicken breast to 1 mm slices was never easier! as a plus cutting onions using this knife when properly sharpened it doesn't make you cry.
Truly love this knife, and i would recommend it to anyone.
worth mentioning the price went up from when i bought it for 99+tax still it's worth it, it's the last knife you will buy and the jack of all trades.
* I also have a set of victorinox knifes, they are perfect for a budget and everyday restaurant use, and they are dirty cheap! but some of the best. They don't compare with this one but for the price you should consider them.
* Japanese knifes are definitely much sharper but not as comfortable to use as this one, maybe it's mental because they are seriously expensive so i tend to be way more careful!
anyway just buy it. it's the best 8" chef knife knife zwilling have produced
