The world is precariously dependent on a limited number of food crop species despite its wealth of
traditional, locally-adapted underutilized species. These plants have many advantages like easier to grow
and hardy in nature, producing a crop even under adverse soil and climatic conditions. These neglected and
underutilized species (NUS) play a crucial role in the food security, income generation and food culture of
the rural poor. They are also often more resilient than staple crops, because they are better adapted to grow
in marginal areas, with little need for irrigation, pesticides and fertilizers. Yet the lack of attention by
mainstream research and development programs means their potential value is under-estimated and underexploited,
with many under threat of disappearance. The belief behind this mode of eating underutilized
fruit crops is good for health and acts as a remedy for various ailments like relief of strain muscle, laxative,
sedative, herbal hair lotion shampoo for antioxidant, dysentery, diarrhoea, jaundice, cough etc. This could
be attributed due to the presence of phytochemical in these minor fruit crops that enhance the power of
immunity of human body.

cheese using carrot pulp with different concentrations of carrot pulp
used 3%, 6%, 9%, 12% and 15% coded as T1, T2, T3, T4, and T5
respectively, then these cottage cheese were sensory evaluated by a
panel of 5 members drawn from the faculty of college. The code “T3”
i.e. 9% was found to be the most acceptable after scoring in a 9-point
hedonic scale with an average of 39.25 and standard deviation of 0.5.
The t test was applied in which the score was taken into consideration
and a comparative study was made between the low fat cottage cheese
and the experimental cottage cheese prepared. Next the nutritional
analysis of the cottage cheese was done and it was observed that it
contains moisture about 66.57%, ash 2.63%, fat 0.29%, protein 8.05%,
calcium 216.6mg, vitamin A 375.8mcg, carbohydrate 6.8g, mineral
(%) 2.63%. A presumptive coliform test was done which was found to
be absent.

Time has helplessly watched women suffering in the form of discrimination, oppression, exploitation, degradation, aggression, humiliation. Indian women through the countries remained subjugated and oppressed because society believed in clinging on to orthodox beliefs for the brunt of violence-domestic as well as public, Physical, emotional and mental. Crimes against women are a social menace, and a costly public health problem. It can take the form of threats, verbal abuse, battering, rape, and murder. It is an escalating pattern of coercive behaviour that includes physical, sexual, and psychological assaults. It can explode anywhere, anytime, and within any economic class. Violence against women is simply not a women's rights issue but a human rights issue. Many women, victims of domestic violence, live in fear of pain and death. They are isolated, often lacking in self-esteem. They tend to blame themselves for what is happening and they try to explain away the bruises and broken bones. It might not be easy to identify domestic violence at first. While some relationships are clearly abusive from the outset, abuse often starts subtly and gets worse over time.

School going children continue to need healthy foods and nutritious snacks. They have a consistent but slow rate of growth and usually eat four to five times a day (including snacks). A healthy diet helps children grow and learn. It also helps prevent obesity and weight-related diseases, such as diabetes. Teaching children about nutrition can be rewarding and amusing. It is crucial to engage children, invoke curiosity and remain positive about health and food. Teaching kids about nutrition is a vital part of their education, and better way to do it than with interactive nutrition activities. “Health education covers the continuum from disease prevention and promotion of optimal health to the detection of illness to treatment, rehabilitation, and long-term care.” A survey was conducted among the girls of class 9 with the objective to assess their nutritional status, to identify consciousness among girls regarding weight and to provide them the knowledge of health hazards by eating junk foods. it was observed that most of the girls were very much aware about their health and eating habits and although their preferences were towards junk food/ street food/ canteen food yet more weightage was given to healthy homemade foods but the concept of balanced diet among them was not very much clear. Girls were very much conscious about their diet and weight few of them usually avoid eating a lot of things because of the fear of gaining weight though they were not much aware of proper dietary habits yet they prefer dieting and to a lot of extent followed wrong practices of dieting, it was very clear that very few girls were depended upon the concept of healthy eating while others were least concerned with the idea of being healthy in relation to eating healthy as they want to look slim but do not want to survive on nutritious foods.

These plants have many advantages like easier to grow and hardy in nature, producing a crop even under adverse soil and climatic conditions. These neglected and underutilized species (NUS) play a crucial role in the food security, income generation and food culture of the rural poor. They are also often more resilient than staple crops, because they are better adapted to grow in marginal areas, with little need for irrigation, pesticides and fertilizers. Yet the lack of attention by mainstream research and development programs means their potential value is under-estimated and under-exploited, with many under threat of disappearance. The belief behind this mode of eating underutilized fruit crops is good for health and acts as a remedy for various ailments like relief of strain muscle, laxative, sedative, herbal hair lotion shampoo for antioxidant, dysentery, diarrhoea, jaundice, cough etc. This could be attributed due to the presence of phytochemical in these minor fruit crops that enhance the power of immunity of human body. The ample presence of these underutilized minor fruit crops and their adaptation in the local climate and thus their expansion in length and breadth of the state can be achieved without much hurdle. Once a systematic scientific intervention is achieved the fullest use of these crops can be launched through value addition.

The study comprised of enriching cottage cheese made of skimmed milk with vitamin A using carrot pulp. Different concentrations of carrot pulp i:e, 3% , 6%, 9%,12% and 15% coded as T1,T2,T3,T4 and T5 respectively were used to prepare the cottage cheese which were later sensory evaluated by a panel of five members drawn from the faculty of college. Among all the five concentrations, T3 was found to be most acceptable after scoring on a 9-point hedonic scale with an average of 39.25 and a standard deviation of .5.
The chi-square test was applied in which the score was taken into consideration and a comparative study was made between the low fat cottage cheese (control) and experimental cottage cheese prepared. The nutritional analysis of cottage cheese was done and the vitamin A content was found to be 375.8mcg, calcium 216.6mg, carbohydrate 22.46g and protein 8.05g.

Nutrition and food science have each enhanced the development of an abundant, nutritious,
safe food supply in which primordial prevention stands of utmost importance in maintaining
an individual’s health. Primordial prevention consists of actions to minimize future hazards
to health and hence inhibit the establishment factors (environmental, economic, social,
behavioural, cultural) known to increase the risk of disease. A healthy diet should contain all
of the required nutrients and sufficient calories to balance energy expenditure and provide for
growth and maintenance throughout the life cycle. Each stage of the life cycle has specific
nutrient needs starting from infancy to old age each person requires a different lifestyle and
different nutrients for body growth and development. Primordial also includes improving
sanitation (such that exposure to infectious agents does not occur), establishing healthy
communities, promoting a healthy lifestyle in childhood (for example, through prenatal
nutrition programs and supporting early childhood development programmes), or developing
green energy approaches Educating consumers, producers and manufacturers in producing
healthier foods would definitely result in a better and a healthy future. Recommendations for
each disease include a decrease in dietary fat, awareness of caloric intake and enhancement
of nutrient density including an increase in fruit and vegetables which is only possible by
educating people about its impact on their health. These recommendations also impact
obesity and diminish the compounding of other disease states affected by excessive body
weight. Current gaps in knowledge are also identified that could improve health. Improved
quality and availability of nutritious foods, proper sanitary condition, green energy approach
and much more will result in a healthier, more productive population. A decrease in the
occurrence and duration of chronic disease might diminish the cost of health care and allow
these resources to further benefit the nation.

Food security at domestic level is achieved when all people, at all times have physical, social
and economic access to sufficient, safe and nutritious foods to meet their dietary needs and
food preferences for a healthy and active life. Food security is essentially built on three
pillars: food availability, food access, and food utilization. The “at all times “element of the
food security definition makes risk and associated vulnerability and important element of
the food security concept. Food availability was considered as a good measure but recently
food sufficiency is accorded high priority in the food policies. Domestic level security is year
round access to an adequate supply of nutritious and safe food to meet the nutritional needs of
all household members. Women are generally responsible for food selection and preparation.
Women are the key to food and nutrition security at domestic levels. Food and nutritional
security requires that household members have access not only to food but also to health care,
a hygienic environment and knowledge of personal hygiene.

Family structures are defined in terms of their internal composition. The number of
members that integrate the family and their relationship, the marital status pf parents
and the responsibility of raising the youth. The study was conducted on 110 youth (15 to
24yrs) age group of urban slum area of Lucknow city on the basis of multistage random
sampling to cover the area of study. The tools used in this study were predesigned and
pretested questionnaire for family level information. Education achievement test of youth
was measured using adult education achievement test (Mallya V.V,Mallya K.C.,Dubey L.N
- .The study has shown that highest and lowest number of study subjects 37(70.21%)
and 15(29.78%) were doing the job resp. Associate factor such as dropout 65(59.09%) and
personal habits represent similar pattern of hierarchy in respect to educational achievement as
per family structure. The value ranges in descending manner that is 15(23.07%), 12(18.46%),
17(26.15%), 12(18.46%) and 09(13.84%) corresponding value with achievement level.
Same pattern was observed in personal habits i: e; 63(57.91%), 31(28.44%), 31(28.44%),
26(23.85%) and 10(09.17%). Age wise educational achievement was highly significant
(p<.000) while the relationship between reason for job selection and educational achievement
with family structure was non-significant (p>.892).addiction pattern and educational
achievement with family structure was highly significant (p<.001).

for the youth to be aware about the society and its issues. Internet has an effect on nearly
every aspect of youth life both socially and mentally. Social networking provides a platform
for discussion on such issues; there are frequent online expressions of offline behaviours, as
clique forming, bullying and sexual experimentation. Youth and adolescents are at some risk
as they navigate and experiment with social media because of their limited capacity for self-
regulation and susceptibility to peer pressure. Paediatricians are now playing a vital role to
help families understand these sites and their usage so as to monitor for potential problems
with cyber-bullying, Facebook depressions and exposure to inappropriate content. Social
networking sites appear helpful in building networking, academic group to achieve better

In the glare of high tech advance, we tend to overlook some of the most basic aspect of reproductive health care. Women’s health is integrally linked to women’s access to available resources, and with women’s reproductive and productive role in our society. Maternal health is a concept that encompasses family planning, preconception, prenatal and postnatal care. Reproductive health is defined by the WHO as “a state of physical, mental and social wellbeing in all matters relating to the reproductive system at all stages of life. The study was conducted to know the pre and post condition of maternal health, outcome after delivery at government hospitals. The tools used were predesigned and pre tested schedule comprising of family and individual schedule. The study was conducted on 120 patients out of which 66.66% were enrolled for delivery and 15% for abortion. Among the patients 61.66% women’s were from Muslim background, 91.63% were just literate while 4.6% were illiterate. The outcome of pregnancy was 20.83% gave caesarean birth while 45.83% had normal delivery. The most common problems faced by the mothers were UTI Infection (45.83%), high blood pressure (80%) feeding problem (57%) and toxaemia (33.33%).

Regular intakes of probiotics and prebiotics have an enhanced effect on immune infections, colonic integrity, decreased incidence of intestinal infections, improved digestion, elimination and much more. Research has shown that both probiotics and prebiotics may be useful in achieving these positive effects depending upon the selection of proper product, strain and dosing guidelines of commercial and household products rich in both. Foods like idlis, dosas, lassietc are some of the lactobacillus fermented cereals and legumes that are commonly consumed at household level while products like yogurt, kefir, buttermilk, sour cream, milk and soy products like tofu, soy milk, beer etc. prepared at commercial levels are probiotic rich foods. The two most common subtypes of prebiotics are the closely related inulins and fructo- oligosaccharides, or FOS and galacto –oligosaccharides (GOS) which are synthesized from lactose. Prebiotic rich foods at household level include oats, barley, broccoli, brussels sprouts, cauliflower etc. While commercial products like fermented dairy products breakfast cereals, sauces, soups, sportsdrinks, snack bars etc. contains GOS.The role of probiotics has been found to work efficiently inGIT conditions., whileother health problem such as gingivitis, periodontitisand also reduce the side effects associated with treatment for helicobacterpylori infection ,while the prebiotics having an optimal ‘gut’ microflora increase resistance to pathogenic bacteria, lower blood ammonia increase stimulation of the immune response and reduce the risk of cancer

The world is precariously dependent on a limited number of food crop species despite its wealth of traditional, locally-adapted underutilized species. In many cases, the underutilised species have a much higher nutrient content than globally known species or varieties, even though they may not be fully suited to conventional production systems. These plants have many advantages like easier to grow and hardy in nature, producing a crop even under adverse soil and climatic conditions. These neglected and underutilized species (NUS) play a crucial role in the food security, income generation and food culture of the rural poor. They are also often more resilient than staple crops, because they are better adapted to grow in marginal areas, with little need for irrigation, pesticides and fertilizers. Yet the lack of attention by mainstream research and development programs means their potential value is under-estimated and under-exploited, with many under threat of disappearance. The belief behind this mode of eating underutilized fruit crops is good for health and acts as a remedy for various ailments like relief of strain muscle, laxative, sedative, herbal hair lotion shampoo for antioxidant, dysentery, diarrhoea, jaundice, cough etc. This could be attributed due to the presence of phytochemical in these minor fruit crops that enhance the power of immunity of human body. The ample presence of these underutilized minor fruit crops and their adaptation in the local climate and thus their expansion in length and breadth of the state can be achieved without much hurdle. Once a systematic scientific intervention is achieved the fullest use of these crops can be launched through value addition.

The study comprised of enriching cottage cheese made of skimmed milk with vitamin A using carrot pulp. Different concentrations of carrot pulp i:e, 3% , 6%, 9%,12% and 15% coded as T1,T2,T3,T4 and T5 respectively were used to prepare the cottage cheese which were later sensory evaluated by a panel of five members drawn from the faculty of college. Among all the five concentrations, T3 was found to be most acceptable after scoring on a 9-point hedonic scale with an average of 39.25 and a standard deviation of .5.
The chi-square test was applied in which the score was taken into consideration and a comparative study was made between the low fat cottage cheese (control) and experimental cottage cheese prepared. The nutritional analysis of cottage cheese was done and the vitamin A content was found to be 375.8mcg, calcium 216.6mg, carbohydrate 22.46g and protein 8.05g.

safe food supply in which primordial prevention stands of utmost importance in maintaining
an individual’s health. Primordial prevention consists of actions to minimize future hazards
to health and hence inhibit the establishment factors (environmental, economic, social,
behavioural, cultural) known to increase the risk of disease. A healthy diet should contain all
of the required nutrients and sufficient calories to balance energy expenditure and provide for
growth and maintenance throughout the life cycle. Each stage of the life cycle has specific
nutrient needs starting from infancy to old age each person requires a different lifestyle and
different nutrients for body growth and development. Primordial also includes improving
sanitation (such that exposure to infectious agents does not occur), establishing healthy
communities, promoting a healthy lifestyle in childhood (for example, through prenatal
nutrition programs and supporting early childhood development programmes), or developing
green energy approaches Educating consumers, producers and manufacturers in producing
healthier foods would definitely result in a better and a healthy future. Recommendations for
each disease include a decrease in dietary fat, awareness of caloric intake and enhancement
of nutrient density including an increase in fruit and vegetables which is only possible by
educating people about its impact on their health. These recommendations also impact
obesity and diminish the compounding of other disease states affected by excessive body
weight. Current gaps in knowledge are also identified that could improve health. Improved
quality and availability of nutritious foods, proper sanitary condition, green energy approach
and much more will result in a healthier, more productive population. A decrease in the
occurrence and duration of chronic disease might diminish the cost of health care and allow
these resources to further benefit the nation.

the food security concept. Food availability was considered as a good measure but recently
food sufficiency is accorded high priority in the food policies. Domestic level security is year
round access to an adequate supply of nutritious and safe food to meet the nutritional needs of
all household members. Women are generally responsible for food selection and preparation.
Women are the key to food and nutrition security at domestic levels. Food and nutritional
security requires that household members have access not only to food but also to health care,
a hygienic environment and knowledge of personal hygiene.

members that integrate the family and their relationship, the marital status pf parents
and the responsibility of raising the youth. The study was conducted on 110 youth (15 to
24yrs) age group of urban slum area of Lucknow city on the basis of multistage random
sampling to cover the area of study. The tools used in this study were predesigned and
pretested questionnaire for family level information. Education achievement test of youth
was measured using adult education achievement test (Mallya V.V,Mallya K.C.,Dubey L.N
- .The study has shown that highest and lowest number of study subjects 37(70.21%)
and 15(29.78%) were doing the job resp. Associate factor such as dropout 65(59.09%) and
personal habits represent similar pattern of hierarchy in respect to educational achievement as
per family structure. The value ranges in descending manner that is 15(23.07%), 12(18.46%),
17(26.15%), 12(18.46%) and 09(13.84%) corresponding value with achievement level.
Same pattern was observed in personal habits i: e; 63(57.91%), 31(28.44%), 31(28.44%),
26(23.85%) and 10(09.17%). Age wise educational achievement was highly significant
(p<.000) while the relationship between reason for job selection and educational achievement
with family structure was non-significant (p>.892).addiction pattern and educational
achievement with family structure was highly significant (p<.001).

It is crucial to engage children, invoke curiosity and remain positive about health and food. Teaching kids about nutrition is a vital part of their education, and better way to do it than with interactive nutrition activities. “Health education covers the continuum from disease prevention and promotion of optimal health to the detection of illness to treatment, rehabilitation, and long-term care.” A survey was conducted among the girls of class 9 with the objective to assess their nutritional status, to identify consciousness among girls regarding weight and to provide them the knowledge of health hazards by eating junk foods. it was observed that most of the girls were very much aware about their health and eating habits and although their preferences were towards junk food/ street food/ canteen food yet more weightage was given to healthy homemade foods but the concept of balanced diet among them was not very much clear. Girls were very much conscious about their diet and weight few of them usually avoid eating a lot of things because of the fear of gaining weight though they were not much aware of proper dietary habits yet they prefer dieting and to a lot of extent followed wrong practices of dieting, it was very clear that very few girls were depended upon the concept of healthy eating while others were least concerned with the idea of being healthy in relation to eating healthy as they want to look slim but do not want to survive on nutritious foods.

In the glare of high tech advance, we tend to overlook some of the most basic aspect of reproductive health care. Women’s health is integrally linked to women’s access to available resources, and with women’s reproductive and productive role in our society. Maternal health is a concept that encompasses family planning, preconception, prenatal and postnatal care. Reproductive health is defined by the WHO as “a state of physical, mental and social wellbeing in all matters relating to the reproductive system at all stages of life. The study was conducted to know the pre and post condition of maternal health, outcome after delivery at government hospitals. The tools used were predesigned and pre tested schedule comprising of family and individual schedule. The study was conducted on 120 patients out of which 66.66% were enrolled for delivery and 15% for abortion. Among the patients 61.66% women’s were from Muslim background, 91.63% were just literate while 4.6% were illiterate. The outcome of pregnancy was 20.83% gave caesarean birth while 45.83% had normal delivery. The most common problems faced by the mothers were UTI Infection (45.83%), high blood pressure (80%) feeding problem (57%) and toxaemia (33.33%).

Regular intakes of probiotics and prebiotics have an enhanced effect on immune infections, colonic integrity, decreased incidence of intestinal infections, improved digestion, elimination and much more. Research has shown that both probiotics and prebiotics may be useful in achieving these positive effects depending upon the selection of proper product, strain and dosing guidelines of commercial and household products rich in both. Foods like idlis, dosas, lassietc are some of the lactobacillus fermented cereals and legumes that are commonly consumed at household level while products like yogurt, kefir, buttermilk, sour cream, milk and soy products like tofu, soy milk, beer etc. prepared at commercial levels are probiotic rich foods. The two most common subtypes of prebiotics are the closely related inulins and fructo- oligosaccharides, or FOS and galacto –oligosaccharides (GOS) which are synthesized from lactose.
