If you grow your own herbs and you always seem to have more then you can use or give away, arrange them with a few fresh flowers in a vase, forming an herb bouquet. This different presentation not only looks great, but ti's also very aromatic.

Basil wilts so qickly, but it perks up if you set it in cool water for about 30 minutes. Then blot the leaves dry and store them at room temparature in a ziploc bag- if basil is stored in teh fridge, it turns black.

Herbs can be snipped quickly in a glass using kitchen shears (scissors). Place the herbs in a glass, stick your shears inside, and cut the herbs into the size you want without bruising them.

Herbs to Butter

A simple way to use leftover fresh herbs is to make compound butter.

Leftover fresh herbs are too expensive to throw away. With any leftovers you can make compound butter and freeze it. Finely chop herbs and mix into soft butter. Then roll this mixture in plastic wrap and freeze. The herbs won't turn black and you're making something you can really use as a spread!

To cut fresh, leafy herbs such as cilantro and parsley, use a pizza wheel rather than a knife- Just run the wheel over the washed leaves in multiple directions. The wheel also prevents bruising the leaves, a common problem when mincing with a a knife.
