This journal is now private - unless you have a LJ account and I either know you or have become online friends with you, you won't be able to read it.As one who worked in the media and understands the scramble to get information about people, I will be keeping my private life as private as I can... not that I ever expect to be put under the microscope.This is about as close as you'll find to being my biography... and it's not for just anyone's eyes.current mood: contemplative (comment on this) Monday, March 22nd, 201010:49 pm- Cream of Zucchini Soup 1 small sweet onion, chopped1 tsp garlic (more to taste)10-12 zucchini, diced3 tbsp. butter4 1/2 c. water4 tbsp chicken boullion1 cube vegetable boullion 1-2 tsp thyme3 tsp celery seed 2 tsp parsley1 bay leaf1/2 to 2 cups heavy cream or half and half Saute onion and garlic in butter in large pot until soft and golden. Add a dash of pepper.Add zucchini and saute until soft. A small layer of liquid will form on top.Add water, boullion and spices.Bring to a boil and then reduce heat to a simmer. Cook at least 30 minutes but can simmer up to four hours with a very tight fitting lid.Remove bay leaf.CAREFULLY puree the soup in batches in the blender or food processor. Return to saucepan and heat to a simmer. Slowly add the cream or half and half until soup reaches desired consistency. Add pepper to taste. Serve hot or cold. Sub in diced celery for celery seed, if desired. See More1/2 large sweet onion, diced3 cloves garlic, minced (about 3 tbsp)1/2 tsp thyme1 tsp parsley1 tsp celery seedsalt & pepper to tasteCombine butter, onion and garlic in saucepan. Saute until onion is soft. Add mushrooms and spices. Cover and simmer until mushrooms are soft. Add chicken and cover. Saute 5 minutes to warm chicken, then remove from heat.8 cups low sodium chicken broth (MUST be low sodium)2 cups arborio rice2 tbsp olive oil1/3 cup of dry white wine1 tbsp minced garlic1/4 cup of dry white wine1/4 cup parmesan cheeseIn a large stockpot, heat chicken broth to boiling (or nearly) and cover so it doesn't evaporate.In a large pan, heat oil. Add rice and saute until opaque. Add 1/3 cup of wine and saute until almost evaporated. Add garlic and stir thoroughly. Carefully add 1 cup of broth to rice and stir on high heat until all liquid is absorbed, about two minutes. Continue adding broth in 1 cup portions, cooking it down and stirring. When rice plumps to triple size and is soft to the bite, remove from heat. Discard remaining broth. If necessary, add more boiling broth or boiling water. Add remaining wine.Turn off heat and stir in mushroom chicken mixture. Add cheese and stir thoroughly. Serve hot. Add pepper and/or more cheese if needed. Thank you so much.I am in utter and complete shock. Just. Wow. I never, ever, in my life, thought that I would have such a positive impact on someone. My life has been full of such utter selfish, stupid bullshit, and I have done so many negative things and hurt so many people, including myself, that I am just astounded.
