In order to differentiate milks from different species, we carried out a comparative analysis of ... more In order to differentiate milks from different species, we carried out a comparative analysis of TAG from cow, buffalo, goat, and sheep milk fat based on 13 C NMR experiments. NMR spectroscopy, although less sensitive than other techniques, does not require an extensive chemical manipulation of samples and can easily highlight the differences in the content of short-chain acyl groups in the four milk species. The resonances were assigned and quantified, and by using only three NMR parameters in data clustering with fuzzy logic analysis, we were able to distinguish goats' milk from sheep's milk, and both of these milks from cows' and buffaloes' milks. This appears to be an important result, considering the ease and rapidity with which milk identification can be obtained. From 13 C NMR spectra of TAG, the positional distribution of FA chains on the glycerol backbone can also be easily evaluated.

Density and water self-diffusion in ethanol-water mixtures are measured as a function of the temp... more Density and water self-diffusion in ethanol-water mixtures are measured as a function of the temperature and for several alcohol concentrations in the water rich region. An extension of the five species model for liquid water, in which H bond cooperativity is taken into account, is proposed to interpret the temperature and concentration trends of the mixture density, solvent self-diffusion and near infrared spectra. This approach allowed us to extract some significant parameters characteristic of the solvent water H bond network such as the probability of forming H bonds, the degree of cooperativity, the supercooling and superheating limit temperatures and the distribution of water molecules among the five species. The emerging picture suggests that alcohol acts upon the water H bond network as a structure maker in the normal temperature region and, probably, as a structure breaker in the supercooled one. Moreover, a progressive disappearance of the H bond network cooperativity is observed as the alcohol concentration is increased.

Hydrogels have been widely used in tissue engineering as a support for tissue formation and/or to... more Hydrogels have been widely used in tissue engineering as a support for tissue formation and/or to deliver drug locally. A novel procedure for the in situ rapid chemical gelation of aqueous solutions of hyaluronan (HA) was employed. HA was functionalised with an arm bearing a terminal azido group (HAAA). When HAAA was mixed with a series of dialkyne reagents of different length, a 1,3-dipolar cycloaddition ("clickchemistry") reaction took place in the presence of catalytic amount of Cu(I) resulting in fast gelation at room temperature. The resulting gels were characterised in terms of degree of cross-linking by 1 H HR-MAS NMR. The kinetic of gelation and the determination of elastic moduli as well as the degree of swelling and the controlled release of a model drug, were studied as a function of chemical nature of the dialkyne group, catalyst concentration, HAAA concentration and temperature. All these variables allowed the swelling ratio and the extent of release of a drug, doxorubicin, entrapped within the gel, to be modulated. In all cases the kinetic of release reached the stationary state within 150 h. The height of the plateau was dependent on the overall (chemical and topological) degree of cross-linking.

Hybrid foams based on polyurethane and polysiloxane-domains were designed in terms of chemical st... more Hybrid foams based on polyurethane and polysiloxane-domains were designed in terms of chemical structure and hierarchical morphology to improve the thermal insulation capability of conventional polyurethane foams. Polysiloxane-domains by solegel approach reacted with polyols to produce a polysiloxane-reactive-adduct, which completed its formation into polysiloxane aerogel-like structure during the polyurethane foaming process. Hybrids with 5wt% of the polysiloxane-domains exhibited a 22% reduction in thermal conductivity in comparison with pristine PUR. The chemical structure and the hierarchical morphology were studied by means of SAXS/WAXS and 29 Si and 13 C NMR. In particular the hybrid structure consisted of coarse polysiloxane-fractal-aggregates composed of silica nanoparticles embedded in the polyurethane matrix. Morphological analysis revealed a decrease of the cell size with the increase of the siloxane content ascribed to the nucleation effect of polysiloxane-domains during the foaming. The cell size reduction and the formation of hybrid-aerogel-like structures within the cell-walls are considered the key factors to reduce the thermal conductivity of hybrid foams.

The capability of the as obtained hybrid foam to adsorb toxic compounds from the mainstream of tobacco smoke was investigated by using a cellulose-active carbon-cellulose triple filter model, and the results were compared to those obtained for neat PU foam and the standard cigarette filter tip.The results of this study showed that the ultramilled alumina particles enhanced both thermal stability and hydrophilicity of the neat PU foam. Furthermore, the as-obtained hybrid PU/Al2O3 foam was able to improve the adsorption of nitrosamines, acetamide, idroquinone, cresol and small aminic and aldehydic molecules, if compared to neat PU foam and standard cigarette filter tip, evidencing potential as tobacco smoke filter.

The NMR profiles of aqueous cheese extracts were acquired as a function of time during storage of cheese inside and outside the original package. From the NMR spectra 15 metabolites are quantified and used in a kinetic degradation model and in a multivariate algorithm in order to evaluate the changes in the metabolic composition of cheese stored under different conditions.

This preliminary work deals with the influence of packaging on the degradation of an Italian soft... more This preliminary work deals with the influence of packaging on the degradation of an Italian soft cheese studied by NMR. The NMR profiles of aqueous cheese extracts were acquired as a function of time during storage of cheese inside and outside the original package. From the NMR spectra 15 metabolites are quantified and used in a kinetic degradation model and in a multivariate algorithm in order to evaluate the changes in the metabolic composition of cheese stored under different conditions.
