Piña colada shrimp babies
sauce:
1/3 cup light rum
1/3 tbsp coconut milk
1 and 1/2 cups crushed pineapples
1/2 cup coconut flakes
2 cherries diced
batter:
1 cup Coconut flakes
1/4 cup flour
1 tsp. salt
1/8 tsp. pepper
1 lb. cleaned shrimp
1 egg, slightly beaten
oil for frying
MIX coconut, flour, salt and pepper. Dip shrimp in egg; roll in coconut mixture.
HEAT oil in large deep skillet on medium heat to 325°F.
ADD shrimp; cook 3 to 4 minutes on each side or until golden brown. Drain on paper towels.
To make the sauce: blend the rum, coconut milk, and pineapple until it is the consistency of apple sauce, pour into a bowl and mix in the coconut flakes and the diced cherries. Serve in a dish made for dipping and organize the shrimp around the dish in a pile. add whole cherries as an edible garnish that will be tasty with the sauce.
