Hi! so I was looking for a cooking community and I stumbled across this one... so I joined... I love cooking and will try just about anything... I enjoy Mongolian Barbecue and Italian food, amongst many other food type things... looking forward to swapping recipes, learning new things... I gues Ill close with a recipe of sorts...

Pasta Martel (named for likeawoman, who comes over for dinner sometimes...)

+ 4 chicken thighs, skinned boned and cubed into bite size pieces (I suppose one could use breast meat instead)
+ 2 cans diced tomatoes (fresh is better, but we don't always have the time, now do we)
+ 1/2 medium-large red onion
+ 1 1/2 cups baby portabella mushrooms, sliced (optional, as Martel hates mushrooms)
+ 2 tbsp. Italian Seasonings (oregano, basil, etc) (fresh basil gives a serious KICK)
+ 1 tbsp. garlic powder OR 1 small clove of garlic minced
+ 2 tbsp. black pepper, fresh ground
+ 1/4 cup balsamic vinegar
+ olive oil

cube chicken first and marinate in all of the vinegar, a dash of olive oil and all of the spices while preparing the rest of the ingredients
saute chiken in olive oil (amount to taste)and marinade, adding onions and mushrooms as chicken cooks
when chicken is cooked through add diced tomatoes and simmer until tomatoes begin to break down to sauce consistency
serve over angel hair pasta tossed with olive oil and oregano

serves: 3-ish

theres lots of room to adjust here and seasonings are all "guess-timates," basically this is just something really easy to throw together that looks nice on the table
