Takalar Regency is one of the seaweed cultivations centers in South Sulawesi with an average total production of 1 million tons of dried seaweed per year. One of the potential locations for cultivation is Aeng Batu Batu Village, where most of its residents make cultivation as their main source of income. Despite the success in cultivating seaweed, the level of welfare of the people is low and classified as poor. This is because they do not have alternative income while the price of dried seaweed is relatively cheap. Thus, it is important to increase the added value of seaweed through a diversification program, including making seaweed lotion. The activity collaborated with a group of women as partners aimed to provide knowledge and skills on how to make seaweed lotion which is potential as an alternative income. This study aims to evaluate the processing and quality characteristics of sea cucumber Bohadschia vitiensis at Kambuno Island in Sembilan Islands, Bone Gulf, South Sulawesi, Indonesia. Fish is a highly perishable food material, so the quality is very susceptible to degradation. The... more Fish is a highly perishable food material, so the quality is very susceptible to degradation. The damage to the fish may occur starting from catching or harvesting, post-harvest handling to distribution, and consumers. The primary factor causing quality degradation in fish is the activity of enzymes and bacteria, which ultimately shortens the shelf life of the fish. This study aimed to analyze the effect of different icing methods on the quality of mackerel tuna (Euthynnus affinis). This study used a completely randomized factorial design (RAL)involving 2 factor treatments with 3 levels, and each treatment was carried out in 3 replicates. The treatments used were the fish icing method (bulk, 1-layered fish, and 2layered fish)with a ratio of ice and fish 1:1 and a storage durationof 12, 24, and 36 hours. The quality indices analyzed included histamine level, total volatile bases nitrogen (TVB-N), peroxide value, and total plate count (TPC). Results indicated that after 36 h of storage the histamine, TVB-N, peroxide and TPC contents of the mackerel tuna had increased to 8.1-19.4 mg/100g, 47.9 mgN/100g, 48.1 mEq/kg, and 1.8 x 10 3 colony/g, respectively from the initial values of 8.1 mg/100g, 25.7 mgN/100g, 5.3 mEq/kg and 2.6 x 10 2 colony/g, respectively. Sharp increases were observed in the 1-layered and especially in the 2-layered fish icing methods, while in the bulk icing methods the values of the parameters remained similar to that of the control fish.

Penelitian ini bertujuan untuk mengetahui penggunaan Rhodamin B pada produk terasi yang dipasarkan di Kota Makassar. Pada penelitian ini digunakan Teknik Accidental Sampling . Sampel diambil dari pasar modern (Lotte Mart dan Hypermart), dan pasar tradisional (Pabaeng-baeng, Daya, Terong). Sampel dianalisis menggunakan test kit dan colorimeter di Laboratorium BIOCHEM (Makanan Sehat) Jurusan Kimia Universitas Brawijaya. Skipjack and tuna are fisheries commodities that are often used as raw material for smoked fish in several districts in South Sulawesi. This study aims to evaluate the level of histamine in smoked fish products in South Sulawesi. Smoked fish samples were immediately taken from processors in Bulukumba, Bone and Sinjai districts using the Purpossive Sampling method. Analysis of histamine levels was carried out at the Laboratory of the Application Center for Fisheries Product Quality South Sulawesi used spectrophotometry based on SNI 2354.10: 2009. The results determined the value of histamine levels of smoked fish products in South Sulawesi as required by SNI 2725: 2013 which was 3.00-7.32 mg / kg.
Cypermethrin is synthetic pyrethroid insecticide, having toxic effects and harmful to humans. It ... more Cypermethrin is synthetic pyrethroid insecticide, having toxic effects and harmful to humans. It is commonly used by farmers to control pests on cotton and vegetables, but now it used by Jambal Roti’s producer to depress the damage of the products. The aim of study was to determine the concentration of cypermethrin residues on products of Jambal Roti made from Giant Catfish (Arius thalassinus Ruppell). Samples of Jambal Roti were taken from the small, medium and large-scale producer in Lamongan District, East Java with Accidental Sampling Technique. Cypermethrin residues were analyzed using gas chromatography. The results showed that products of Jambal Roti on a small scale producer contain cypermethrin of 1.491-2.124 mg/kg, medium scale of 0.298-0.830 mg/kg and large scale processing 0.0270.257 mg/kg. This concentration is over the maximum residue limits permitted by the SNI (Indonesian National Standard) and the Codex of Alimentarius Commission of 0.05 mg/kg.

Salah satu kebiasaan masyarakat pesisir menggunakan cangkang sotong sebagai obat asma, dengan cara meminum rebusan cangkang sotong yang telah dikeringkan. Penelitian ini bertujuan untuk mengetahui potensi cangkang sotong ( Sepia sp) sebagai antiinflamasi pada penderita penyakit asma. Penelitian ini dilakukan di Laboratorium Teknologi Hasil Perikanan Fakultas Ilmu Kelautan dan Perikanan Universitas Hasanuddin. Dilakukan pengamatan parameter fitokimia yaitu steroid, triterpenoid, flavonoid, alkaloid, tannin, saponin, glikosida dan polifenol. Hasil menunjukkan bahwa cangkang sotong mengandung beberapa senyawa yang dapat berperan sebagai antiinflamasi seperti steroid, triterpenoid, alkaloid, tanin dan glikosida. This research aims to determine the use of hazardous chemicals in fishery products that are marke... more This research aims to determine the use of hazardous chemicals in fishery products that are marketed in the city of Makassar. In this study used the Accidental Sampling Technique. Samples are taken from the center of Makassar souvenirs, traditional markets, and modern markets. The fishery products used as samples are crackers, meatballs, and brains. Hazardous chemicals evaluated for use are borax and formalin. The samples were analyzed using a test kit and colorimeter at the BIOCHEME Laboratory (Healthy Food) Department of Chemistry,University of Brawijaya. The results show that fish meatball products marketed in Makassar City do not contain borax, but contain formalin 11.2 - 13.13 ppm. Brain-brain products do not contain borax and do not contain formaldehyde, fish/shrimp crackers marketed in Makassar City do not contain formaldehyde but 33% contain borax with an average, level of 10.39 ppm.

Penelitian ini bertujuan untuk mengetahui pengaruh sipermetrin terhadap kadar ureum dan kreatininTikus Wistar ( Rattus norvegicus ). Tikus diberi perlakuan paparan sipermetrin dengan dosis 0.00 mg/kg (K-), 0.05 mg/kg, 0.60 mg/kg, 1.10 mg/kg, 1.60 mg/kg, 2.15 mg/kg dan daging ikan yang mengandung sipermetrin 1.73 mg/kg (kontrol positif : K+). Kadar ureum dan kreatinin darah tikus ditetapkan berdasarkan metode Enzymatic Photometric . Penelitian ini bertujuan untuk mengetahui penggunaan bahan kimia berbahaya pada produk perikanan ... more Penelitian ini bertujuan untuk mengetahui penggunaan bahan kimia berbahaya pada produk perikanan yang dipasarkan di Kota Makassar.Pada penelitian ini digunakan TeknikAccidental Sampling. Sampel diambil dari pusat oleh-oleh Makassar, pasar tradisional dan pasar modern. Produk perikanan yang dijadikan sampel adalah kerupuk, bakso dan otakotak. Bahan kimia berbahaya yang dievaluasi penggunaannya adalah boraks dan formalin. Sampel dianalisis menggunakan test kit dan colorimeter di Laboratorium BIOCHAME (Makanan Sehat) Jurusan Kimia Universitas Brawijaya. Hasil menunjukkan bahwa, produk bakso ikan yang dipasarkan di Kota Makassar tidak mengandung boraks, tetapi mengandung formalin 11.2-13.13 ppm. Produk otak-otak tidak mengandung boraks dan tidak mengandung formalin, kerupuk ikan/udang yang dipasarkan di Kota Makassar tidak mengandung formalin tetapi 33% mengandung boraks dengan kadar rata-rata 10.39 ppm.

This study aims to determine the quality and food safety of smoked stingray fish products produced in Jeneponto Regency, South Sulawesi Province. Samples of smoked stingrays were taken from processors in Jeneponto Regency used the Purpossive Sampling method. Enterobacter aerogenes is one of the bacteria that has an important role in converting histidine ... more Enterobacter aerogenes is one of the bacteria that has an important role in converting histidine to histamine in fish. When consumed, histamine in fish can cause poisoning and even death. The growth of bacteria that cause damage to fish can be inhibited in several ways, including the addition of compounds that have the potential to act as bacteriostatic or even bactericide. One of the plants that has the potential as a source of bactericide compounds is drumstic tree (Moringa oleifera Lamk.). This study aimed to determine the effectiveness of several concentrations of Moringa leaves extract using distilled water and ethanol in the inhibition of Enterobacter aerogenes bacteria as a histamine producer. The results showed that distilled water and ethanol extracts of Moringa leaves had an effective inhibition against Enterobacter aerogenes. The distilled water extract at a 40% concentration produced the largest inhibition zone (14.73 cm) while that of the ethanol extract at a 40% concentration was 10.57 cm. The distilled water extract of Moringa leaves is suitable for use because it is cheap, practical, safe for consumption and does not leave any unsafe residue on food.

The existence of janitor fish threatens the sustainability of the endemic fish of Tempe Lake in Wajo Regency. Until now, there has been no study regarding the quality and food safety for the use of suckermouth catfish in the regency. This study aims to analyzed the heavy metal content of lead (Pb), mercury (Hg) and arsenic (As) of janitor fish in Wajo Regency. Samples of janitor fish were taken from three districts in Wajo Regency used a purpossive sampling technique. Analysis of histamine levels was carried out at the Laboratory of the Application Center for Fisheries Product Quality South Sulawesi used spectrophotometry based on SNI 2354.10: 2009. The results determined the value of histamine levels of smoked fish products in South Sulawesi as required by SNI 2725: 2013 which was 3.00-7.32 mg / kg.

It is commonly used by farmers to control pests on cotton and vegetables, but now it used by Jambal Roti’s producer to depress the damage of the products. The aim of study was to determine the concentration of cypermethrin residues on products of Jambal Roti made from Giant Catfish (Arius thalassinus Ruppell). Samples of Jambal Roti were taken from the small, medium and large-scale producer in Lamongan District, East Java with Accidental Sampling Technique. Cypermethrin residues were analyzed using gas chromatography. The results showed that products of Jambal Roti on a small scale producer contain cypermethrin of 1.491-2.124 mg/kg, medium scale of 0.298-0.830 mg/kg and large scale processing 0.0270.257 mg/kg. This concentration is over the maximum residue limits permitted by the SNI (Indonesian National Standard) and the Codex of Alimentarius Commission of 0.05 mg/kg.

Penelitian ini bertujuan untuk mengetahui potensi cangkang sotong ( Sepia sp) sebagai antiinflamasi pada penderita penyakit asma. Penelitian ini dilakukan di Laboratorium Teknologi Hasil Perikanan Fakultas Ilmu Kelautan dan Perikanan Universitas Hasanuddin. Dilakukan pengamatan parameter fitokimia yaitu steroid, triterpenoid, flavonoid, alkaloid, tannin, saponin, glikosida dan polifenol. In this study used the Accidental Sampling Technique. Samples are taken from the center of Makassar souvenirs, traditional markets, and modern markets. The fishery products used as samples are crackers, meatballs, and brains. Hazardous chemicals evaluated for use are borax and formalin. The samples were analyzed using a test kit and colorimeter at the BIOCHEME Laboratory (Healthy Food) Department of Chemistry,University of Brawijaya. The results show that fish meatball products marketed in Makassar City do not contain borax, but contain formalin 11.2 - 13.13 ppm. Brain-brain products do not contain borax and do not contain formaldehyde, fish/shrimp crackers marketed in Makassar City do not contain formaldehyde but 33% contain borax with an average, level of 10.39 ppm.

Sampel diambil dari pusat oleh-oleh Makassar, pasar tradisional dan pasar modern. Produk perikanan yang dijadikan sampel adalah kerupuk, bakso dan otakotak. Bahan kimia berbahaya yang dievaluasi penggunaannya adalah boraks dan formalin. Sampel dianalisis menggunakan test kit dan colorimeter di Laboratorium BIOCHAME (Makanan Sehat) Jurusan Kimia Universitas Brawijaya. Hasil menunjukkan bahwa, produk bakso ikan yang dipasarkan di Kota Makassar tidak mengandung boraks, tetapi mengandung formalin 11.2-13.13 ppm. Produk otak-otak tidak mengandung boraks dan tidak mengandung formalin, kerupuk ikan/udang yang dipasarkan di Kota Makassar tidak mengandung formalin tetapi 33% mengandung boraks dengan kadar rata-rata 10.39 ppm.

Samples of smoked stingrays were taken from processors in Jeneponto Regency used the Purpossive Sampling method. When consumed, histamine in fish can cause poisoning and even death. The growth of bacteria that cause damage to fish can be inhibited in several ways, including the addition of compounds that have the potential to act as bacteriostatic or even bactericide. One of the plants that has the potential as a source of bactericide compounds is drumstic tree (Moringa oleifera Lamk.). This study aimed to determine the effectiveness of several concentrations of Moringa leaves extract using distilled water and ethanol in the inhibition of Enterobacter aerogenes bacteria as a histamine producer. The results showed that distilled water and ethanol extracts of Moringa leaves had an effective inhibition against Enterobacter aerogenes. The distilled water extract at a 40% concentration produced the largest inhibition zone (14.73 cm) while that of the ethanol extract at a 40% concentration was 10.57 cm. The distilled water extract of Moringa leaves is suitable for use because it is cheap, practical, safe for consumption and does not leave any unsafe residue on food.
