This paper describes a class project that engaged undergraduate students as researchers to learn ... more This paper describes a class project that engaged undergraduate students as researchers to learn about the concepts and practices involved in conducting and sharing research regarding hospitality and tourism. The class project focused on helping students learn how to conduct qualitative research, specifically interviews, and to understand the tourism-related aspirations, behaviors, and future travel intentions of their peers. Results of the project were shared with community partners involved in tourism promotion in the local area, as a service learning project. In this paper, the project is described and implications for teaching, research, and service are offered. Suggested practices for working with students as researchers are also provided.

In this session, presenters engage participants in discussion abouta multifaceted endeavor at a regional comprehensive university to integrate SoTL into campus culture. The university is a member of the CASTL group that has adopted the theme, Integrating SoTL into Institutional Culture: Philosophy, Policy and Infrastructure.” We focus on 1) Strategies for establishing and sustaining a cross-disciplinary SoTL Faculty Learning Community (FLC), 2) A model of a new SoTL wiki/blog, a website that allows users to edit any page or to create new pages within the website, 3) The institutional context in which the SoTL FLC and the SoTL wiki/blog are among several components of a SoTL initiative

This study investigated how one type of student evaluation of teaching (SET) tool and a team appr... more This study investigated how one type of student evaluation of teaching (SET) tool and a team approach to evaluating a course helped to provide feedback in an online, synchronous and asynchronous course and an in-person, face-to-face course through a Scholarship of Teaching and Learning (SoTL) study. Student observational narratives and responses to a feedback tool were gathered for two undergraduate courses, one that was offered face-to-face (n=167) and one that was taught online (n=155), over several semesters. The most important factors, with regard to the teaching of the courses, were ensuring that the courses were well organized in terms of assignments and course platform sites, being careful to communicate succinctly and thoughtfully, and showing care and concern for students. Implications are provided.

This case study describes the virtual international learning experiences of a class of undergradu... more This case study describes the virtual international learning experiences of a class of undergraduate hospitality and tourism students from a public university in the United States with classes from universities in Mexico, China, and Japan without ever leaving home through a global understanding partnership. The experiences of the students are chronicled through observations of the class and an analysis of students' reflections on their experiences. Suggestions are provided for educators interested in promoting students' and their own intercultural competence through virtual international experiences with other students and instructors.

ABSTRACT College educators may have concerns about the reading habits of their students in genera... more ABSTRACT College educators may have concerns about the reading habits of their students in general and within disciplines, and may wish to understand more about their students’ reading habits. Therefore, this Scholarship of Teaching and Learning (SoTL) study investigated students’ perceptions of their own reading habits; 124 surveys were collected from hospitality and tourism students at a university in the southeastern United States. Students at higher levels reported reading more than others, grade point average was related to reading, and several themes connected to their reading habits were identified. Based on the results of the study, implications are discussed, strategies for encouraging reading are provided, and further research is suggested.

ABSTRACT This survey research study explored the perceptions of hospitality and tourism educators... more ABSTRACT This survey research study explored the perceptions of hospitality and tourism educators and students regarding the rapid move to online education due to the coronavirus pandemic during the spring of 2020. Nearly a third of the educators were new to online education; fewer of the students had not taken online classes previously. Most respondents liked the flexibility of online courses, but many did not think that online courses met the same standards as face-to-face classes. Educators were more likely to look forward to their next online classes than students and to perceive that online courses take a lot of preparation, while students felt that there were more technical issues involved in online classes. There were significant differences regarding perceptions of the pandemic between students and educators, with students typically feeling more affected by the pandemic than faculty members. Implications for educators, students, and the industry are provided.

With the increase in intermediaries in the online marketplace for lodging accommodations, such as... more With the increase in intermediaries in the online marketplace for lodging accommodations, such as Airbnb, Vacation Rental by Owner, Home Away, and Flip Key, opportunities for consumers to book lodging accommodations and for home owners to rent out their own homes, condominiums, and bedrooms are growing. While some research has investigated travelers' motivations for using these services, little work has addressed the motivations and behaviors of owners. This qualitative study used interpretative phenomenological analysis to analyze data collected from interviews with current owners. Themes that emerged from the analysis, pertaining to the description of the providers, included identity, motivations, and drawbacks; while those related to the daily operations of the facility included advantages, features, and logistics. Ultimately, the study found that providers of alternative lodging are focused on respect between hosts and guests, developing meaningful relationships, and acquiring all the necessary resources to operate.

The number of restaurateurs owning farms or gardens that supply part of their operations' fresh p... more The number of restaurateurs owning farms or gardens that supply part of their operations' fresh produce and other food products has increased considerably over the past few years. This phenomenon, termed ''hyper-local,'' involves a significant commitment that goes well beyond purchasing local food. Hyper-local restaurateurs take on the tasks of a farmer/gardener, a job that requires a variety of skills and presents numerous challenges. While some research studies have addressed local purchasing, local farm-to-restaurant relationships and decision making, and various consumer issues, very little work has focused on the hyper-local phenomenon. Therefore, this exploratory qualitative study was undertaken to understand the reasons why some restaurateurs are entering the farming business and to learn about the financial, operational, and customer-related benefits and challenges encountered by restaurateurs operating their own farms. A case study approach was used to gather information from three restaurateurs that currently own and operate farms that provide products for their restaurants. The study explores the benefits, rewards, and challenges of these types of operations, their possible financial issues, motivations of the restaurateurs, and issues that could impact the growth potential of this trend.

To attract a transient market, hotels primarily use several distribution channels, such as the fo... more To attract a transient market, hotels primarily use several distribution channels, such as the following: the hotel directly, central reservation offices, travel agents, and online booking systems. Yet, little attention has been paid to the revenue management implications with regard to the focus on distribution channels. The purpose of this study was to examine the effects of channels and prices on brand dimensions and to study the role of hotel loyalty membership in the relationships. A 2 (channel) × 2 (price) × 2 (loyalty membership) quasi-experiment was designed to test the research objectives. Multivariate Analysis of Variance was used to test significant differences. The findings provide implications for the industry.
