Interest in the possible uses of these residues is growing, because they constitute a potential cheap and abundant source of compounds with high total antioxidant capacity (TAC) associated with total phenolic content (TPC) and biophenols such as hydroxytyrosol (HC) and oleuropein (OC), which could be used as nutraceuticals or as natural substitutes for synthetic antioxidants. However, studies that characterize specific cultivars, interannual variability, and different drying methods are lacking. This work investigates the TAC, TPC, HC and OC in olive (Olea europaea L.) leaves under four drying methods (vacuum-drying, oven-drying, freeze-drying and air-drying). The present work describes the encapsulation of probiotics using a by-product as wall material an... more The present work describes the encapsulation of probiotics using a by-product as wall material and a process feasible to be scaled-up: coacervation of soybean protein concentrate (SPC) by using calcium salts and spray-drying. SPC was extracted from soybean flour, produced during the processing of soybean milk, by alkaline extraction following isoelectric precipitation. Two probiotic strains were selected for encapsulation (Lactobacillus plantarum CECT 220 and Lactobacillus casei CECT 475) in order to evaluate the ability of SPC to encapsulate and protect bacteria from stress conditions. The viability of these encapsulated strains under in vitro gastrointestinal conditions and shelf-life during storage were compared with the most common forms commercialized nowadays. Results show that SPC is a feasible material for the development of probiotic microparticles with adequate physicochemical properties and enhanced significantly both probiotic viability and tolerance against simulated gastrointestinal fluids when compared to current available commercial forms.

En los ultimos anos, el desequilibrio de la MI se ha relacionado con las enfermedades no transmisibles. Abstract Resveratrol is a polyphenol present on natural products with a wide range of beneficial ... more Abstract Resveratrol is a polyphenol present on natural products with a wide range of beneficial properties including antioxidant, anti-inflammatory and chemoprotective effects. However, its low water solubility and rapid presystemic metabolism hampers its absorption and systemic bioavailability. This study investigates the potential of a nanoparticle-based system for the oral delivery of resveratrol in humans and its impact on pharmacokinetics. Resveratrol-loaded zein nanoparticles were prepared and characterized prior to its administration to humans. These nanoparticles displayed a mean size of 331 nm with an encapsulation efficiency of 87%. A single dose of 250 mg of resveratrol was administered to 16 healthy volunteers and the concentrations of resveratrol and its metabolite resveratrol-3-0-D-glucuronide were estimated. The formulation was well tolerated and showed quantifiable plasma levels of resveratrol and its metabolite (Cmax 21.80 and 986.29 ng/mL, respectively). Therefore, this nanoparticle-based formulation has shown a great potential as a nutraceutical for the oral administration of resveratrol.

Dla Jego zbawczej władzy otwórzcie (…) szerokie dziedziny kultury" (22 października 1978) zawiera zachętę, a jednocześnie wymóg, by współczesny człowiek otworzył się na prawdę o fundamencie ludzkiego istnienia, źródle kultury śródziemnomorskiej i europejskiej cywilizacji. Jest wołaniem o to, by przyjął on na nowo tę prawdę i dawał jej świadectwo. W zaproponowanym Czytelnikowi numerze "Wrocławskiego Przeglądu Teologicznego" znalazły się artykuły badaczy, będących przedstawicielami różnych dziedzin wiedzy, którzy przyjrzeli się dziełom Papieża i jego działalności pod kątem uobecniania przyjętej prawdy, czyli jego własnej realizacji wytyczonego zadania. Refleksja autorów dotyczy również spuścizny intelektualnej i duchowej Świętego, w różnym stopniu zakorzenionej w odbiorcach, powołujących się jednakże na jej wpływ. Wynikami badań z zakresu teologii podzieliło się czterech reprezentantów środowisk akademickich. Ks. dr hab. Stanisław Zarzycki, prof. KUL, ukazał spojrzenie Jana Pawła II na współczesną kulturę, której źródłem i stałym natchnieniem powinna być-zdaniem Papieża-wiara. W przeciwnym wypadku kultura staje się znakiem nieprzyjęcia prawdy o człowieku. Ks. dr hab. Bogdan Giemza SDS, prof. PWT we Wrocławiu, wyjaśnił pojęcie nowego feminizmu. Nowy feminizm wiąże się w myśli Jana Pawła II z godnością kobiety, która przejawia się nie tylko w zdolności do stawania się darem dla innych, jako matka, ale i w twórczym zaangażowaniu w życie rodzinne i społeczne we współpracy z mężczyznami. Ks. mgr Maciej Dalibor SDS przedstawił interesującą refleksję nad sakramentem małżeństwa, który odczytał, w myśl nauczania papieskiego zawartego w katechezach środowych Mężczyzną i niewiastą stworzył ich, jako łaskę dawaną przez Boga ludziom, aby umacniać i uzdrawiać łączące ich relacje. Ks. dr hab. Stefan Radziszewski przybliżył współczesny "rysopis kapłana", który wyłania się z wypowiedzi księży z pokolenia Jana Pawła II, zebranych i opublikowanych w lubelskim kwartalniku "Akcent".

Here, we evaluated the eventual anti-obesity properties of an ethanolic broccoli extract (BE), selected by a tested ability to reduce Caenorhabditis elegans fat content. Two doses (14 and 140 mg/kg animal) of BE were evaluated in a diet-induced obesity (DIO) Wistar rat model. After 10 weeks of BE supplementation, animals exhibited reduced body weight gain and food efficiency, decreased atherogenic index of plasma and improved glucose tolerance in comparison with non-supplemented rats. BE also reduced the retroperitoneal fat mass and adipocyte size, all associated to down-regulation of Cebpa, Srebp1, Fasn and Adipoq expression in adipocytes. Finally, BE significantly decreased liver steatosis, accompanied by the up-regulation of Acot8 and Acox1, and the down-regulation of Fasn, Fatp4 and Srebf1 expression in hepatocytes. Our data provides new knowledge about the potential role of broccoli components in the prevention of metabolic syndrome.

Abstract The impact of nano-encapsulation of a phenol extract from grape pomace on human plasma p... more Abstract The impact of nano-encapsulation of a phenol extract from grape pomace on human plasma pharmacokinetic parameters and urine clearance of phenolic metabolites was examined. A dealcoholised red wine was used as the vehicle for enrichment with both non-encapsulated and nano-encapsulated phenol extracts in a randomised cross-over pharmacokinetic study. The analysis of plasma only showed an increase in the concentration of syringic acid sulphate, catechin sulphate and catechin glucuronide, whereas urine data, especially at interval of 0–6 hours, showed an increase in most of the metabolites from stilbenes, flavan-3-ols, phenolic acids and anthocyanins after the intake of phenol-enriched wines compared with the control wine. The nano-encapsulation of the extract slightly enhanced the bioavailability of malvidin-3- O -glucoside, as observed in the higher urine excretion of its native form and its microbial metabolites syringic and gallic acids. Metabolic pathways of different phenolic groups were proposed, with special emphasis on novel pathways of hydroxytyrosol generation.

This work reviews the requirements that must be fulfilled for a full characterization of the active substance, comprising origin, elaboration, or extraction method, and chemical/microbiological composition, using validated analytical methods. The review focuses not only on establishing the specifications of the final active ingredient or food but also on ensuring homogeneity between batches. In addition, the article discusses the methodologies and conditions of the stability studies that need to be performed on food and food constituents to verify that the relevant compounds--chemical and microbiological active ingredients--will get to the consumer in the intended state and concentration to accomplish the claimed health effect over shelf life.

ABSTRACT The aim of this work was to study and compare the effect of pulsed electric field (PEF) ... more ABSTRACT The aim of this work was to study and compare the effect of pulsed electric field (PEF) treatment on the content of individual anthocyanins, phenolic acids, flavanols, and flavonols of three grape varieties from two vintages. For this purpose, the treatment showing to induce the highest release of phenolic compounds out of four different PEF applications assayed during the 2011 vintage was applied in 2012. The same continuous system was used over three grape varieties: Graciano, Tempranillo, and Grenache. Additionally, the influence of PEF on the physicochemical composition of the grapes was also studied. The effect of PEF treatment in the amount of individual phenolic compounds released and in the values of the physicochemical parameters analysed was qualitatively similar yet quantitatively different between the two years of study. Considering that the initial values of the physicochemical parameters were dependent on the vintage, it was observed that the lower the initial values the higher their increase after PEF treatment. Hence, the lower the initial values the higher the benefit obtained by PEF treatment. Furthermore, the influence of PEF treatment depended on the variety treated. For instance, Tempranillo was the variety showing the most significant differences in the content of individual anthocyanins upon PEF treatment, while Grenache variety showed major differences in the content of gallic acid, catechin, and epicatechin. Graciano variety showed almost no differences in the amount of individual phenolic compounds released after PEF application. For the three varieties, colour intensity, TPI, and total anthocyanins were increased by PEF application during the two assayed vintages, as well as antioxidant activity in 2012.

Alimentary proteins can be viewed as an adequate material for the preparation of nanoparticles an... more Alimentary proteins can be viewed as an adequate material for the preparation of nanoparticles and microparticles. They offer several advantages such as their digestibility, price and a good capability to interact with a wide variety of compounds and nutrients. The aim of this work was to prepare and characterize casein nanoparticles for the oral delivery of folic acid. These nanoparticles were prepared by a coacervation process, stabilized with either lysine or arginine and, finally, dried by spray-drying. For some batches, the effect of a supplementary treatment of nanoparticles (before drying) with hydrodynamic high pressure on the properties of the resulting carriers was also evaluated. The resulting nanoparticles displayed a mean size close to 150 nm and a folic acid content of around 25 mg per mg nanoparticle. From the in vitro release studies, it was observed that casein nanoparticles acted as gastro-resistant devices and, thus, folic acid was only released under simulated intestinal conditions. For the pharmacokinetic study, folic acid was orally administered to laboratory animals as a single dose of 1 mg/kg. Animals treated with folic acidloaded casein nanoparticles displayed significantly higher serum levels than those observed in animals receiving an aqueous solution of the vitamin. As a consequence the oral bioavailability of folic acid when administered in casein nanoparticles was calculated to be around 52%, a 50% higher than with the traditional aqueous solution. Unfortunately, the treatment of casein nanoparticles by hydrodynamic high pressure modified neither the release profile of the vitamin nor its oral bioavailability.

However, its low water solubility and rapid presystemic metabolism hampers its absorption and systemic bioavailability. This study investigates the potential of a nanoparticle-based system for the oral delivery of resveratrol in humans and its impact on pharmacokinetics. Resveratrol-loaded zein nanoparticles were prepared and characterized prior to its administration to humans. These nanoparticles displayed a mean size of 331 nm with an encapsulation efficiency of 87%. A single dose of 250 mg of resveratrol was administered to 16 healthy volunteers and the concentrations of resveratrol and its metabolite resveratrol-3-0-D-glucuronide were estimated. The formulation was well tolerated and showed quantifiable plasma levels of resveratrol and its metabolite (Cmax 21.80 and 986.29 ng/mL, respectively). Therefore, this nanoparticle-based formulation has shown a great potential as a nutraceutical for the oral administration of resveratrol.

Dla Jego zbawczej władzy otwórzcie (…) szerokie dziedziny kultury" (22 października 1978) zawiera zachętę, a jednocześnie wymóg, by współczesny człowiek otworzył się na prawdę o fundamencie ludzkiego istnienia, źródle kultury śródziemnomorskiej i europejskiej cywilizacji. Jest wołaniem o to, by przyjął on na nowo tę prawdę i dawał jej świadectwo. W zaproponowanym Czytelnikowi numerze "Wrocławskiego Przeglądu Teologicznego" znalazły się artykuły badaczy, będących przedstawicielami różnych dziedzin wiedzy, którzy przyjrzeli się dziełom Papieża i jego działalności pod kątem uobecniania przyjętej prawdy, czyli jego własnej realizacji wytyczonego zadania. Refleksja autorów dotyczy również spuścizny intelektualnej i duchowej Świętego, w różnym stopniu zakorzenionej w odbiorcach, powołujących się jednakże na jej wpływ. Wynikami badań z zakresu teologii podzieliło się czterech reprezentantów środowisk akademickich. Ks. dr hab. Stanisław Zarzycki, prof. KUL, ukazał spojrzenie Jana Pawła II na współczesną kulturę, której źródłem i stałym natchnieniem powinna być-zdaniem Papieża-wiara. W przeciwnym wypadku kultura staje się znakiem nieprzyjęcia prawdy o człowieku. Ks. dr hab. Bogdan Giemza SDS, prof. PWT we Wrocławiu, wyjaśnił pojęcie nowego feminizmu. Nowy feminizm wiąże się w myśli Jana Pawła II z godnością kobiety, która przejawia się nie tylko w zdolności do stawania się darem dla innych, jako matka, ale i w twórczym zaangażowaniu w życie rodzinne i społeczne we współpracy z mężczyznami. Ks. mgr Maciej Dalibor SDS przedstawił interesującą refleksję nad sakramentem małżeństwa, który odczytał, w myśl nauczania papieskiego zawartego w katechezach środowych Mężczyzną i niewiastą stworzył ich, jako łaskę dawaną przez Boga ludziom, aby umacniać i uzdrawiać łączące ich relacje. Ks. dr hab. Stefan Radziszewski przybliżył współczesny "rysopis kapłana", który wyłania się z wypowiedzi księży z pokolenia Jana Pawła II, zebranych i opublikowanych w lubelskim kwartalniku "Akcent".

Here, we evaluated the eventual anti-obesity properties of an ethanolic broccoli extract (BE), selected by a tested ability to reduce Caenorhabditis elegans fat content. Two doses (14 and 140 mg/kg animal) of BE were evaluated in a diet-induced obesity (DIO) Wistar rat model. After 10 weeks of BE supplementation, animals exhibited reduced body weight gain and food efficiency, decreased atherogenic index of plasma and improved glucose tolerance in comparison with non-supplemented rats. BE also reduced the retroperitoneal fat mass and adipocyte size, all associated to down-regulation of Cebpa, Srebp1, Fasn and Adipoq expression in adipocytes. Finally, BE significantly decreased liver steatosis, accompanied by the up-regulation of Acot8 and Acox1, and the down-regulation of Fasn, Fatp4 and Srebf1 expression in hepatocytes. Our data provides new knowledge about the potential role of broccoli components in the prevention of metabolic syndrome.

A dealcoholised red wine was used as the vehicle for enrichment with both non-encapsulated and nano-encapsulated phenol extracts in a randomised cross-over pharmacokinetic study. The analysis of plasma only showed an increase in the concentration of syringic acid sulphate, catechin sulphate and catechin glucuronide, whereas urine data, especially at interval of 0–6 hours, showed an increase in most of the metabolites from stilbenes, flavan-3-ols, phenolic acids and anthocyanins after the intake of phenol-enriched wines compared with the control wine. The nano-encapsulation of the extract slightly enhanced the bioavailability of malvidin-3- O -glucoside, as observed in the higher urine excretion of its native form and its microbial metabolites syringic and gallic acids. Metabolic pathways of different phenolic groups were proposed, with special emphasis on novel pathways of hydroxytyrosol generation.

This work reviews the requirements that must be fulfilled for a full characterization of the active substance, comprising origin, elaboration, or extraction method, and chemical/microbiological composition, using validated analytical methods. The review focuses not only on establishing the specifications of the final active ingredient or food but also on ensuring homogeneity between batches. In addition, the article discusses the methodologies and conditions of the stability studies that need to be performed on food and food constituents to verify that the relevant compounds--chemical and microbiological active ingredients--will get to the consumer in the intended state and concentration to accomplish the claimed health effect over shelf life.

ABSTRACT The aim of this work was to study and compare the effect of pulsed electric field (PEF) ... more ABSTRACT The aim of this work was to study and compare the effect of pulsed electric field (PEF) treatment on the content of individual anthocyanins, phenolic acids, flavanols, and flavonols of three grape varieties from two vintages. For this purpose, the treatment showing to induce the highest release of phenolic compounds out of four different PEF applications assayed during the 2011 vintage was applied in 2012. The same continuous system was used over three grape varieties: Graciano, Tempranillo, and Grenache. Additionally, the influence of PEF on the physicochemical composition of the grapes was also studied. The effect of PEF treatment in the amount of individual phenolic compounds released and in the values of the physicochemical parameters analysed was qualitatively similar yet quantitatively different between the two years of study. Considering that the initial values of the physicochemical parameters were dependent on the vintage, it was observed that the lower the initial values the higher their increase after PEF treatment. Hence, the lower the initial values the higher the benefit obtained by PEF treatment. Furthermore, the influence of PEF treatment depended on the variety treated. For instance, Tempranillo was the variety showing the most significant differences in the content of individual anthocyanins upon PEF treatment, while Grenache variety showed major differences in the content of gallic acid, catechin, and epicatechin. Graciano variety showed almost no differences in the amount of individual phenolic compounds released after PEF application. For the three varieties, colour intensity, TPI, and total anthocyanins were increased by PEF application during the two assayed vintages, as well as antioxidant activity in 2012.

Alimentary proteins can be viewed as an adequate material for the preparation of nanoparticles an... more Alimentary proteins can be viewed as an adequate material for the preparation of nanoparticles and microparticles. They offer several advantages such as their digestibility, price and a good capability to interact with a wide variety of compounds and nutrients. The aim of this work was to prepare and characterize casein nanoparticles for the oral delivery of folic acid. These nanoparticles were prepared by a coacervation process, stabilized with either lysine or arginine and, finally, dried by spray-drying. For some batches, the effect of a supplementary treatment of nanoparticles (before drying) with hydrodynamic high pressure on the properties of the resulting carriers was also evaluated. The resulting nanoparticles displayed a mean size close to 150 nm and a folic acid content of around 25 mg per mg nanoparticle. From the in vitro release studies, it was observed that casein nanoparticles acted as gastro-resistant devices and, thus, folic acid was only released under simulated intestinal conditions. For the pharmacokinetic study, folic acid was orally administered to laboratory animals as a single dose of 1 mg/kg. Animals treated with folic acidloaded casein nanoparticles displayed significantly higher serum levels than those observed in animals receiving an aqueous solution of the vitamin. As a consequence the oral bioavailability of folic acid when administered in casein nanoparticles was calculated to be around 52%, a 50% higher than with the traditional aqueous solution. Unfortunately, the treatment of casein nanoparticles by hydrodynamic high pressure modified neither the release profile of the vitamin nor its oral bioavailability.
