Bu çalışma 1986-1988 yıllarında Uludağ Üniversitesi, Ziraat Fakültesi, Bahçe Bitkileri Bölümünde ... more Bu çalışma 1986-1988 yıllarında Uludağ Üniversitesi, Ziraat Fakültesi, Bahçe Bitkileri Bölümünde yapılmıştır, Çalışmada Marmara Bölgesinde yetiştirilen önemli bazı sofralık üzüm çeşitlerinden Alphonse Lavaliee, Amasya beyazı, Erenköy beyazı, Hafızali, Irikara, Kardinal, Kozak beyazı, Kozak siyahı, Müşküle ve Razakı 'nın soğukta muhafaza kabiliyetleri ile optimum muhafaza süreleri belirlenmiştir. Araştırmada elde edilen sonuçlar özet olarak aşağıda verilmiştir, Kardinal üzüm çeşidi hariç tutulacak olursa diğer çeşitlerin suda eriyebilir kuru madde miktarları muhafaza süresince genellikle azalmıştır. Aynı şekilde çeşitlerin muhafaza başlangıcında yüksek olan titre edilebilir asit miktarı, 100 tane ağırlığı, tane sapı ve salkım iskeletinde nem miktarı ve tanenin ayrılma kuvveti muhafaza süresince azalma göstermiştir, Buna karşı pH'lan, çürüme oranları ve genel SD2 miktarı muhafaza süresince artmıştır. Bunun yanında, son yıllarda yoğun kent yaşamından bunalan ve doğal hayata özlem duyan insanlar için turizm seçeneklerine yenileri eklenmiştir. Kırsal turizm olarak adlandırılan bu yeni turizm şekli ülkemiz için yeni filizlenen ve gelecek vaat eden turizm seçeneğidir. Tarım turizmi ise Kırsal turizmin bir koludur. Çaltşmanın sonuçlarına göre, Mayıs ayında dikilen çeşitler içerisinden Tufts, Lester, Pocahontas, Chandler, Se/va, 2 16 ve Douglas bitki başına ortalama verim ve meyve ağtrlığt açısından Bursa için uygun çeşitler olarak belirlendi. Diğer taraftan, Cruz, Pajaro ve Addie çeşitlerinin Mayts ayı dikim-Leri de Bursa için ümitvar bulundu.

Bu durum, ozellikle isleme kosullarinda bir standardin olmamasi nedeniyle, cogu zaman pekmezin kalite degerinde azalmalara ve ayrica hidroksimetilfurfural (HMF) gibi insan sagligina zararli bilesiklerin fazla miktarda olusumuna neden olabilmektedir. Bu calismada; Bursa’nin 4 farkli ilcesinde yetistirilen Eksenez uzum cesidinden geleneksel olarak uretilen pekmezlerin uretim asamalari ile bazi fiziksel ve kimyasal ozellikleri uzerinde durulmustur. Pekmez ornekleri incelenen parametrelere gore farkliliklar gostermistir. Olive and olive oil, which are irreplaceable ingredients in our breakfasts, many meals and salads in Turkish kitchen, are the primary source of income for the families in Mudanya. Mudanya has a historical past and it has a significant potential in terms of rural tourism, culture tourism and marine tourism due to its current development and location. Olive and olive oil, which are very important in kitchen tourism, are also potential sources for sustainable rural tourism. The more efficient use of olive and olive oil for these areas will provide significant contributions to the development of Mudanya tourism and to the economic strength of the people of the region.

In this study, some physical and chemical properties of pekmez samples produced using the traditi... more In this study, some physical and chemical properties of pekmez samples produced using the traditional method with fourteen different grape cultivars were investigated. The water-soluble dry matter, pH, titratable acidity and hydroxymethylfurfural (HMF) content of the samples were determined to be 66.19-80.57%, 3.59-5.23, 0.27-1.81 g 100 g-1 and 5.93-762.22 mg kg-1, respectively. The mean fructose and glucose contents of the pekmez samples were determined to be 28.42 g 100 g-1 and 31.67 g 100 g-1, respectively. The densities and electrical conductivities varied between 1.33-1.43 g cm-3 and 1.96-4.51 mS cm-1, respectively. The content of the macro element K identified in the pekmez samples (4449.86 mg kg-1) was greater than that of Ca (1275.52 mg kg-1), P (369.96 mg kg-1), Mg (344.79 mg kg-1) and Na (119.56 mg kg-1). The pekmez samples have antioxidant activities, ranging between 38.20 to 64.45 μmol TE g-1. Six phenolic compounds, caffeic acid, ellagic acid, ferulic acid, gallic acid, p-coumaric acid and rutin hydrate, were identified in the pekmez samples, and significant differences were observed between samples (P<0.01).

Different hydrogen peroxide vapour applications were tested to decrease the spoilage after harves... more Different hydrogen peroxide vapour applications were tested to decrease the spoilage after harvest and especially during storage, and to present a high quality product to the market for a longer time. Liquid hydrogen peroxide at 30–35 % concentration was applied for 5, 10, 15 and 20 minutes after vaporizing at 30, 40 and 60 °C. The grapes were stored for 3 months in cold rooms at 0 ± 1 °C, immediately after harvest. At the end of 3 months' storage, 10 and 20 minute-applications of 40 °C vaporized hydrogen peroxide and 5 and 10 minutes applications of 60 °C vaporized hydrogen peroxide gave better results with respect to decrease in microorganisms compared with other applications. Rosa canina L. fruits, known as brier rose or rose hip, grow naturally in Bursa (Turkey) and its ... more Rosa canina L. fruits, known as brier rose or rose hip, grow naturally in Bursa (Turkey) and its environs. In this study, rose hips were harvested at two different maturity periods. Some of them were then dried naturally and others processed traditionally as rose hip marmalade. Phenolic acids (ellagic acid, ferulic acid, caffeic acid, p-coumaric acid, p-hydroxybenzoic acid, protocatechuic acid), ascorbic acid, flavonols (quercetin, kaempferol,myricetin, (+)-catechin) were detected with LC-ESI-MS/MS (Liquid Chromatography Electrospray Ionization Mass Spectrometry). Mineral compounds (Na, Mg, K, Ca, P) were detected using ICP-OES (Inductively Coupled Plasma Optic Emission Spectroscopy) in fresh and processed rose hip samples. The lycopene level was also determined in the samples. Statistical differences were found in all parameters related to the maturity and processing methods in the observed samples. It was found that quercetin and (+)- catechin were the main phenolic acids.

Catechol oxidase, peroxidase and esterase isoenzyme banding patterns of 29 cultivars made it possible to distinguish between 29 Turkish grape cultivars. It was conculuded that all of the three enzyme systems provided the most usefull data as it was possible to distinguish all 29 grape cultivars.

Leaves of Vitis vinifera (Fam. Vitaceae) cv. 'Sultani Ç ekirdeksiz' cultivated in Manisa-Alaş ehi... more Leaves of Vitis vinifera (Fam. Vitaceae) cv. 'Sultani Ç ekirdeksiz' cultivated in Manisa-Alaş ehir in western Turkey, were processed with or without brine. Fresh, brined, and nonbrined leaves (after being subjected to 3 months of fermentation) were sampled and extracted with distilled water under reflux. Antioxidant, anti-inflammatory, and anti-nociceptive activities of the water extracts were investigated using in vitro and in vivo methods. Free radical scavenging activity (1,1-diphenyl-2picrylhydrazyl, DPPH • assay), iron(III) reductive activity (reducing power activity assay), capacity of inhibition of linoleic acid peroxidation (ferric thiocyanate and thiobarbituric acid method), antinociceptive activity (p-benzoquinone-induced abdominal constriction test), and anti-inflammatory activity (carrageenan-induced hind paw edema model) were used to determine biological activities of the extracts. In addition, the contents of total phenolics, flavonoids, and flavonols in the extracts were determined by spectrophotometrical methods. Results were compared with those of ascorbic acid, butylated hydroxytoluene, and gallic acid as reference antioxidants. The extracts of fresh, brined, and nonbrined leaves showed almost the same activity in all antioxidant assays. These extracts inhibited the oxidation of linoleic acid to the same extent as BHT. Compositions of the extracts were analyzed by a reverse phase HPLC-PDA method. The occurrence of hydroxycinnamic acids (e.g., caffeic acid) and flavonoids (e.g., quercetin) was verified in the extracts. The content of total flavonoids as well as quercetin was increased by fermentation.

In this study, some physical and chemical properties of pekmez samples produced using the traditi... more In this study, some physical and chemical properties of pekmez samples produced using the traditional method with fourteen different grape cultivars were investigated. The water-soluble dry matter, pH, titratable acidity and hydroxymethylfurfural (HMF) content of the samples were determined to be 66.19-80.57%, 3.59-5.23, 0.27-1.81 g 100 g-1 and 5.93-762.22 mg kg-1, respectively. The mean fructose and glucose contents of the pekmez samples were determined to be 28.42 g 100 g-1 and 31.67 g 100 g-1, respectively. The densities and electrical conductivities varied between 1.33-1.43 g cm-3 and 1.96-4.51 mS cm-1, respectively. The content of the macro element K identified in the pekmez samples (4449.86 mg kg-1) was greater than that of Ca (1275.52 mg kg-1), P (369.96 mg kg-1), Mg (344.79 mg kg-1) and Na (119.56 mg kg-1). The pekmez samples have antioxidant activities, ranging between 38.20 to 64.45 μmol TE g-1. Six phenolic compounds, caffeic acid, ellagic acid, ferulic acid, gallic acid, p-coumaric acid and rutin hydrate, were identified in the pekmez samples, and significant differences were observed between samples (P<0.01).

Liquid hydrogen peroxide at 30–35 % concentration was applied for 5, 10, 15 and 20 minutes after vaporizing at 30, 40 and 60 °C. The grapes were stored for 3 months in cold rooms at 0 ± 1 °C, immediately after harvest. At the end of 3 months' storage, 10 and 20 minute-applications of 40 °C vaporized hydrogen peroxide and 5 and 10 minutes applications of 60 °C vaporized hydrogen peroxide gave better results with respect to decrease in microorganisms compared with other applications. In this study, rose hips were harvested at two different maturity periods. Some of them were then dried naturally and others processed traditionally as rose hip marmalade. Phenolic acids (ellagic acid, ferulic acid, caffeic acid, p-coumaric acid, p-hydroxybenzoic acid, protocatechuic acid), ascorbic acid, flavonols (quercetin, kaempferol,myricetin, (+)-catechin) were detected with LC-ESI-MS/MS (Liquid Chromatography Electrospray Ionization Mass Spectrometry). Mineral compounds (Na, Mg, K, Ca, P) were detected using ICP-OES (Inductively Coupled Plasma Optic Emission Spectroscopy) in fresh and processed rose hip samples. The lycopene level was also determined in the samples. Statistical differences were found in all parameters related to the maturity and processing methods in the observed samples. It was found that quercetin and (+)- catechin were the main phenolic acids.

Leaves of Vitis vinifera (Fam. Vitaceae) cv. 'Sultani Ç ekirdeksiz' cultivated in Manisa-Alaş ehi... more Leaves of Vitis vinifera (Fam. Vitaceae) cv. 'Sultani Ç ekirdeksiz' cultivated in Manisa-Alaş ehir in western Turkey, were processed with or without brine. Fresh, brined, and nonbrined leaves (after being subjected to 3 months of fermentation) were sampled and extracted with distilled water under reflux. Antioxidant, anti-inflammatory, and anti-nociceptive activities of the water extracts were investigated using in vitro and in vivo methods. Free radical scavenging activity (1,1-diphenyl-2picrylhydrazyl, DPPH • assay), iron(III) reductive activity (reducing power activity assay), capacity of inhibition of linoleic acid peroxidation (ferric thiocyanate and thiobarbituric acid method), antinociceptive activity (p-benzoquinone-induced abdominal constriction test), and anti-inflammatory activity (carrageenan-induced hind paw edema model) were used to determine biological activities of the extracts. In addition, the contents of total phenolics, flavonoids, and flavonols in the extracts were determined by spectrophotometrical methods. Results were compared with those of ascorbic acid, butylated hydroxytoluene, and gallic acid as reference antioxidants. The extracts of fresh, brined, and nonbrined leaves showed almost the same activity in all antioxidant assays. These extracts inhibited the oxidation of linoleic acid to the same extent as BHT. Compositions of the extracts were analyzed by a reverse phase HPLC-PDA method. The occurrence of hydroxycinnamic acids (e.g., caffeic acid) and flavonoids (e.g., quercetin) was verified in the extracts. The content of total flavonoids as well as quercetin was increased by fermentation.
