Le bouillon d'os est un element important de l'alimentation traditionnelle des Amerindien... more Le bouillon d'os est un element important de l'alimentation traditionnelle des Amerindiens d'Amerique du Nord. Il est obtenu en fracturant et en faisant bouillir certains os, en particulier ceux de cervides, ce qui permet d'obtenir une certaine quantite de gras. Dans le cadre de notre recherche, des bouillons d'os ont ete prepares et analyses pour en etablir la valeur nutritive. partir des resultats de notre experimentation, nous nous proposons ici d'explorer brievement l'interet de cet aliment comme source de gras, nutriment essentiel de survie.

The McDonald, Droulers and Mailhot-Curran sites are part of the St. Anicet cluster of St. Lawrenc... more The McDonald, Droulers and Mailhot-Curran sites are part of the St. Anicet cluster of St. Lawrence Iroquoian villages, located in southern Quebec. After many years of archaeological excavations, the three sites have yielded large quantities of faunal remains, including numerous bone tools and manufacturing debris. The assemblages are currently being analysed as part of a new research project aiming at a better understanding of the exploitation of the faunal resources by the St. Lawrence Iroquoians. To attain this goal, an integrative approach was developed, combining the insights provided by a series of methods and techniques developed in the field of archaeological sciences (archaeometry), namely zooarchaeological, technological, functional (microwear), and biomolecular analyses.This paper presents the first results of these analyses.
