The revelation that eating can pose risks makes consumers rethink the ways they choose and eat fo... more The revelation that eating can pose risks makes consumers rethink the ways they choose and eat foods. Today market choice becomes more shaped by references to safety. This book is focused on concepts of safe and risky food consumption and consumer trust as a strategy aimed at avoiding food risks. First, it addresses approaches to trust and risk within social sciences, as well as maps the field of sociological understanding of consumer trust. Further, it presents general institutional conditions for consumer trust in Russia. It is followed by a summary description of the food market and tendencies in food consumption. Finally, discourses connected to food risks, safety and consumer trust are explored on the basis of semi- structured interviews with consumers and food experts, i.e. representatives of the food market, state control and consumer organizations. This book is to be useful to researchers in Sociology and Marketing fields, or anyone else who is interested in food safety issues.

The management and project management literature is largely prescriptive. The paper examines the role and potential of strategic trust development and management to improve operations in the project business and enhance client satisfaction, analysing trust as social capital. The analysis is supported by data gathered through CROL®: a customer relationship monitoring process of over 30,000 customer relationships covering 5 years of global operations by companies in the project business. The analysis focuses on the connection between self-awareness, performance, improvement and the impact upon both relationships and financial performance – social capital in the ‘balance sheet’. Introduction: In the Russian Federation, social studies focus on the general attitude towards a h... more Introduction: In the Russian Federation, social studies focus on the general attitude towards a healthy diet as well on the analysis of food content. However, there is a lack of qualitative studies that reveal how people embed healthy eating in everyday life. The article discusses how people reflect on health aspects in determining the concept of a proper dinner and what is considered healthy or unhealthy to eat and whether ordinary eaters follow the principles of healthy eating in actual life. Methods: The data and findings are based on empirical research conducted by the authors in 2013 and 2014. The everyday eating practices of inhabitants of St Petersburg were investigated. The data were collected through a survey and in-depth interviews. Results: The findings show that people identify a proper meal by means of the food composition, food categories, product qualities, cooking methods, time and regularity, as well as the social environment and health benefits. Авторы исходят из того, что здоровое питание-социально конструируемое понятие, а само питание-социальная практика, глубоко погруженная в социальный контекст. Статья основана на материалах эмпирического исследования, выполненного авторами в январе-марте 2018 г. Цель исследования-выявить факторы развития практик здорового питания. Основной метод сбора первичной информации-экспертное полуструктурированное интервью. В качестве экспертов выступали «продвинутые» потребители и профессионалы, чья деятельность связана с системой здорового питания. Опрошено 30 экспертов, из них «продвинутых» потребителей-13, экспертов-профессионалов-17. Результаты исследования свидетельствуют, что информанты связывают здоровое питание с потреблением здоровых продуктов и соблюдением правильного рациона питания. В то же время «продвинутые» потребители рассматривают здоровое питание преимущественно как исключение воздействия вредных факторов на здоровье. Эксперты-профессионалы фокусируются на связи здорового питания со здоровым образом жизни. Наиболее значимым фактором перехода к здоровому питанию является личная мотивация, которая зависит как от ценностей, убеждений человека, его личного опыта, так и от воздействия внешних факторов (ближайшее окружение, информационное поле питания, рынок здоровой еды, институты социального контроля питания). К ключевым социальным факторам здорового питания относятся возраст, уровень образования и культуры, уровень дохода потребителей. ключевые слова: здоровое питание, практики, факторы здорового питания, «продвинутые» потребители, эксперты-профессионалы.

The paper works towards establishing value for trust in project business, particularly the financ... more The paper works towards establishing value for trust in project business, particularly the financial value of trust to project business. Concepts of trust are revisited. Rational explanations of trust are shown wanting, calculations of trust and danger being misrepresentations of how the willingness to trust is formed. The paper argues for the need to establish the interpretative and socially constructed nature of trust, primarily based upon prior experiential and psycho-motive learning in relation to current situational factors. Trust and its relationship to forming expectations and generating confidence are considered. Empirical findings are mobilised to show how trust contributed to value in a financial sense. Value is not an absolute in this context for value is empirically and theoretically shown to relate directly to expectations. Value is defined as an asset and is thus part of social capital for projects and in embedded in firms.
