The aim of this study was to obtain of chan seeds oil by supercritical uids, and to evaluate its ... more The aim of this study was to obtain of chan seeds oil by supercritical uids, and to evaluate its physicochemical properties and its quality. The optimal extraction conditions were 450 bar, 80°C, and 193 min with an extraction yield of 9.21% and 62.36% recovery. The viscosity of the oil was 104.13 mPa s, and the activation energy was 2.104 KJ/mol; primary and secondary oxidation was 1.681 and 0.662. The quality of the oils was evaluated with saturated fatty acids (SFAs), monounsaturated fatty acids (MUFAs), polyunsaturated fatty acids (PUFAs), and unsaturated fatty acids (UFAs). They were also determined the atherogenicity (AI), (6.70-8.27) and thrombogenicity indices (TI), (0.075-0.094); and the hypocholesterolemic/hypercholesterolemic (HH) ratio, (19.12-33.84). The oils presented high content of fatty acids ω 3, 6, and 9, and the oxidizability was from 6.70 to 8.27, indicating good stability. The characteristics of the oil extracted were compared with the oil obtained conventionally.

An electromechanical prototype and a personal computer are used. The measured parameters are: pressure, pH, system temperature and the velocity of the bolus. The system uses a personal computer for acquiring, processing and storing the results. On the other hand, the PC sends digital signal to the system for the prototype control. The results obtained allow one to reproduce an approximation of the motor behavior of the stomach

The conditions for producing high fructose syrup from the fructans contained in the head of the A... more The conditions for producing high fructose syrup from the fructans contained in the head of the Agave tequilana Weber var. blue were determined and their physicochemical properties were compared with those of commercial corn syrup (Frudex-55 ®). Both syrups behave as Newtonian fluids and showed no significant differences (p < 0.05) in density, moisture, water activity, total solids, total reducing sugars and direct reducing sugars. It takes 4.4 kg of fresh agave head to obtain 1 kg of syrup with 70°Brix and 87.92 ± 1.28% fructose. As a result of its highest fructose-glucose ratio, agave syrup has lower viscosity and surface tension than the corn syrup. Due to its high content of fructans, the head of the A. tequilana Weber var. blue is a promising raw material for the industrial production of high fructose syrups.

This paper presents the analysis of the electromyographic signals from rat stomaches to identify ... more This paper presents the analysis of the electromyographic signals from rat stomaches to identify and classify contractions. The results were validated with both visual identification and an ultrasonic system to guarantee the reference. Some parameters were defined and associated to the energy of the signal in frequency domain and grouped in a P vector. The parameters were statistically analyzed and according to the results, an artificial neuronal network was designed to use the P vectors as inputs to classify the electrical signals related to the contraction conditions. A first approach classification was performed with and without contraction classes (CR and NCR), then the same database were subdivided in four classes: with induced contraction (ICR), spontaneous contraction (SCR), without contraction due a post mortem condition (PMR) or under physiological conditions (PNCR). In a two-class classifier, performance was 86%, 93% and 91% of detections for each electrogastromyografic (EGMG) signal from each of three pairs of electrodes considered. Because in the four-class classifier, enough data was not collected for the first pair, then a three-class classifier with 82% of performance was used. El objetivo del trabajo consistió en desarrollar un biosensor de glucosa basado en las propiedade... more El objetivo del trabajo consistió en desarrollar un biosensor de glucosa basado en las propiedades electroquímicas de un compósito grafito-epoxi-platino-glucosa oxidasa. La industria de alimentos y bebidas demanda métodos analíticos rápidos, precisos y confiables para evaluar y asegurar la calidad de sus productos y optimizar sus procesos. El desarrollo de biosensores enzimáticos amperométricos representa una opción viable que satisface estos requerimientos. El potencial de trabajo y la caracterización de la respuesta del biosensor desarrollado se determinaron por voltamperometría de barrido lineal y amperometría, respectivamente. La respuesta del biosensor fue máxima a 600 mV, su tiempo de respuesta fue de 20 segundos en un intervalo de concentración de respuesta lineal de 0.1 a 5 mM de glucosa y sensibilidad de 1.4 μA/mM. La estabilidad y vida útil del biosensor desarrollado dependen de la frecuencia de uso y el biocompósito actúa como reservorio de enzimas y de mediador electroquímico.

In this work, hairy root cultures of Brassica oleracea var. italica (broccoli) were established in an airlift with mesh bioreactor to produce isoform 1 of the human growth hormone (hGH1) as a model therapeutic protein. The hGH1 cDNA was cloned into the pCAMBIA1105.1 binary vector to induce hairy roots in hypocotyls of broccoli plantlets via Agrobacterium rhizogenes. Most of the infected plantlets (90%) developed hairy roots when inoculated before the appearance of true leaves, and keeping the emerging roots attached to hypocotyl explants during transfer to solid Schenk and Hildebrandt medium. The incorporation of the cDNA into the hairy root genome was confirmed by PCR amplification from genomic DNA. The expression and structure of the transgenic hGH1 was assessed by ELISA, western blot, and MALDITOF-MS analysis of the purified protein extracted from the biomass of hairy roots cultivated in bioreactor for 24 days. Production of hGH1 was 5.1 6 0.42 mg/g dry weight (DW) for flask cultures, and 7.8 6 0.3 mg/g DW for bioreactor, with productivity of 0.68 6 0.05 and 1.5 6 0.06 mg/g DW*days, respectively, indicating that the production of hGH1 was not affected by the growth rate, but might be affected by the culture system. These results demonstrate that hairy root cultures of broccoli have potential as an alternative expression system for production of hGH1, and might also be useful for production of other therapeutic proteins. The L1 protein is the main component of the HPV capsid, and form highly antigenic virus- like particles (VLPs). They are commercially available as VLP-based vaccine; however their high cost has motivated to investigate for alternative production processes. Hairy roots cultures, a plant based biotechnology, offer a viable alternative as they can be propagated in bioreactors or regenerated to produce whole plants. In this work we present the results of use hairy roots of broccoli to produce this L1 protein. The l1 gene from the HPV 16 was cloned in broccoli via Agrobacterium rhizogenes transformation. The transformation was proved by PCR, restriction reactions, and β-glucuronidase assays. In this work, we investigated the polyphenol profile and antioxidant activity of edible tejocote (Crataegus pubescens) fruit extracts by micellar electrokinetic chromatography (MEKC) and HPLC/UV. The major phenolic compounds in the pulp extracts were (+)-catechin (9.17 ± 0.20 mg/100 mg dry fruit), (−)-epicatechin (4.32 ± 0.11 mg/100 mg dry fruit), and chlorogenic acid (5.60 ± 0.24 mg/100 mg dry fruit). The total phenolic content was 168.6 ± 0.9 mg gallic acid equivalent/g dry fruit; the total proanthocyanidin content was 84.6 ± 1.4 mg cyanidin/100 g dry fruit; and the total flavonoid content was 55.89 ± 1.43 mg quercetin/g dry fruit. Interestingly, procyanidins (dimers, trimers, and tetramers of (−)-epicatechin and (+)-catechin) were detected in the extract.
