RESUMEN El desarrollo de estrategias educativas en el area de seguridad alimentaria llevadas a ca... more RESUMEN El desarrollo de estrategias educativas en el area de seguridad alimentaria llevadas a cabo en terreno permite al alumnado conocer la situacion real de las empresas del sector alimentario. Al mismo tiempo, como el principal objetivo es satisfacer necesidades reales de una comunidad, el trabajo realizado en terreno tiene un impacto directo sobre la sociedad. En el presente trabajo estudiantes de la asignatura Higiene y Seguridad Industrial de la licenciatura en Tecnologia de los Alimentos desarrollaron una lista de chequeo como herramienta de auditoria de inocuidad alimentaria para posteriormente aplicarla en terreno evaluando las fortalezas y debilidades de la herramienta desarrollada. La estrategia docente de combinar las actividades teorico-practicas con actividades practicas en terreno permitio al alumnado aplicar los conocimientos teoricos en situaciones reales. The current growing demand for healthier products from meat consumers has forced the industry and... more The current growing demand for healthier products from meat consumers has forced the industry and the scientific-technological area to innovate with new functional meat products. These new products must have a better formulation and include extra benefits with the objective of not being a threat to consumer health. In this context, the addition of probiotic bacteria as part of the formulation has become an important strategy that allows not only the improvement of meat products, but also the addition of greater added value. However, the production of probiotic meat products implies an important control in their manufacture to achieve functional meat products with real human health beneficial.

Córdoba is an important region for the production of pork. In this study we estimated the prevalence and risk factors associated with Salmonella at different stages of pig production chain (farms, slaughterhouses and pork sausages industries). The observed prevalence of farms in this study was higher than reported by EU. The main Risk Factors could be linked to the lack of good manufacturing practices in the whole pork chain in the region.

The study of the prevalence of Salmonella spp. in the pig and pork production chain is important ... more The study of the prevalence of Salmonella spp. in the pig and pork production chain is important to reduce the risk of spreading this pathogen into the human population. The aim of this study was to estimate the prevalence of Salmonella spp. in pigs and pork products from Córdoba. Mesenteric lymph nodes samples from 580 finishing pigs from different pig farms , and 420 samples (83 batches) of fresh pork products (the so-called "chorizo fresco de cerdo") from different retailers were analyzed. ISO 6579:2002 standard protocol was used for Salmonella isolation. Prevalence of Salmonella spp. in finishing pigs in Córdoba was 41.5% (95%CI 37.6%-45.6%). According to pig´s origin the province was split in North, Central and South region. The prevalence observed in each region was 49.5%, 43.0% and 36.0% respectively. The significantly higher prevalence observed in the North may be associated with the precarious conditions of the pig production sector in that area, compared to the better pig producing practices in the southern region. Prevalence of Salmonella spp. in fresh pork products was 17.4% (95%CI 15.8%-23.4%). Based on the Argentine Food Codex criteria, 34/83 (40.9%) of the analyzed batches should be rejected given the presence Salmonella spp. positive. In addition, total coliforms were also analyzed on these pork samples following national legislation and 42 (63.0%) of the batches should have been rejected according to coliform total count. Overall, only 13% of the batches fulfilled both criteria for acceptance. In conclusion, the high prevalence of Salmonella spp. in pig farms and of Salmonella spp. and coliforms in these type of pork products suggested important safety breakdowns along the pig production and pork elaboration processes. An important effort should be done to reach suitable hygienic and sanitary standards for pig and pork production in the province of Córdoba.

The growing relevance of pigs as reservoir of Salmonella spp. has prompted several countries to set up surveillance and control programs to fight Salmonella infection in swine and reduce public health risk. In the last decade, pork production in Córdoba increased significantly to become one of the most important pig production provinces in Argentina. The aim of this study was to estimate Salmonella spp. prevalence and associated risk factors in large scale-farms in this province. Mesenteric lymph nodes (MLN) of 580 pigs from 20 finishing large-scale farms were collected between 2014 and 2015 to estimate Salmonella infection. A prevalence of 41.5% (95%CI: 37.6-45.6%) was observed. Two major risk factors were significantly associated with Salmonella infection, both related to the pre-slaughter period (distance from the farm to the slaughterhouse and lairage time), highlighting the need to pay special attention to pre-slaughter practices in the province. Shortening transport times and complying with national regulations for lairage time at slaughter may help to reduce the prevalence of infection. Sixteen different serovars were identified, being S. Anatum and S. Typhimurium the most prevalent ones. Moreover, two isolate of the monophasic variant of Salmonella Typhimurium (I 4,5,12:i:-) resistant to enrofloxacin and which also displayed multidrug resistance was isolated for first time from pigs in Córdoba. The moderate to high levels of antimicrobial resistance detected for antibiotics commonly used in the pig sector suggested the need for implementing a plan to limit their use in the province.

Se determinó la seropositividad para infección chagásica en perros, conocidos reservorios de esta enfermedad. Se dividió al área urbana del pueblo en 10 zonas, y se tomaron 90 muestras en total, de una población canina estimada de 767 animales. El diagnóstico serológico se realizó con el test de ELISA y con Inmunofluorescencia Indirecta. El 11,11% de las muestras resultaron positivas a las dos pruebas. La mitad de los propietarios de los perros afectados no conocían la enfermedad. Los resultados obtenidos en la localidad de La Para aportan información valiosa para la ejecución de acciones sanitarias profundas en la localidad y en la región, debido a la demostración de alta prevalencia de seropositividad en los perros y la falta de datos de prevalencia en población humana actualizados en la región.
