Consumers undertake entrepreneurial behaviors when sharing resources, goods and services for thei... more Consumers undertake entrepreneurial behaviors when sharing resources, goods and services for their own use in a wide range of contexts: from food procurement and energy production to shared accommodation, transport and software development. Yet, literature strands on entrepreneurship and shared forms of consumption still remain surprisingly distant. Building upon the empirical cases of Alternative Food Networks (AFNs) in Europe, this research introduces the notion of entrepreneurship in consumption as a social process where individuals innovatively recombine resources in order to use shared goods and services that create value for them and/or society. Either intended as joint access or ownership, sharing unlocks and stimulates consumers’ entrepreneurial behaviors. Depending on the organizational mechanisms governing the sharing process, though, consumers act differently: they recombine resources within or outside their organization when they respectively share decisions or ownership over common resources....

These scares, together with environmental and ethical concerns, caused consumers to reflect upon the quality of the beef they eat. The aim of this paper is to identify which quality characteristics influence the incidence of local beef consumption on the total consumption of beef. It is assumed in this study that such choice is a response to a process of quality evaluation, which occurs combining specific quality attributes and socially constructed food quality criteria strictly linked to a socially fair dimension of local productions. Organic Plus attributes strengthen the sustainability of the organic products and differentiate t... more Organic Plus attributes strengthen the sustainability of the organic products and differentiate them from the 'conventionalized' organic ones. Products with Organic Plus attributes seem appreciated by organic consumers. However, research on consumers' preference for Organic Plus is still scarce, leaving gaps in the understanding of the consumers' characteristics of organic products with Plus attributes. In order to enrich the knowledge of consumers' preference for organic products with Plus attributes, the present study aims to achieve three Objectives: (1) identifying which Plus attributes, among fair prices to local farmers, integration of people with disabilities and eco-friendliness, are most sought after among Italian consumers of organic products (2) measuring, through the willingness to pay elicitation techniques, the level of preference for the various plus attributes; (3) determine which psychological, socio-demographic and contextual factors influence the purchasing choice of organic consumers for the three Plus attributes. Better knowledge of consumers' preference for organic Plus attributes, as well as the psychological and socio-demographic characteristic can provide useful indications to better-tailored marketing strategies on specific consumers' profiles.

The spread of Food Community Networks (FCNs) is mainly due to new and confirmed policies for cons... more The spread of Food Community Networks (FCNs) is mainly due to new and confirmed policies for consumption, testing new social paradigms aimed at promoting sustainable development in rural areas through the active reorganization of the agricultural and food industry. As a result, there is a set of rules deriving from complex relational structures competing to define self-organized collective action for sustainability. This paper analyses the structure of relations within FCNs. With this end in view, research on the experience of FCNs has been done, in particular of Solidarity Purchasing Groups (henceforth SPGs) in Sicily (Southern Italy). By applying Social Network Analysis, the article identifies what role each participant in the network plays; that is, who can influence long-term collective action.

Purpose-This paper aims to illustrate the organisational and managing models characterising the c... more Purpose-This paper aims to illustrate the organisational and managing models characterising the craft beer producers in Sicily (Southern Italy) and the main issues of the provision of raw materials. Design/methodology/approach-A direct survey involving the overall population of 41 craft breweries operating in Sicily in 2016 was carried out. Then 29 questionnaires were collected for exploratory analysis. A hierarchical cluster analysis was also performed out to group companies by similar structural, productive and economic features. Findings-The findings of the survey showed a Sicilian craft beer industry characterised by a substantial dependence on the import of malts hops and yeasts and the limited use of local raw materials among brewers. Furthermore, the characteristics of the processing plants and the sales channels appear to influence the diversification of the products and the turnover levels of the Sicilian craft beer producers. Originality/value-This is the first study describing the craft brewing industry in Sicily. The findings contribute to enrich the knowledge on the organisational models applied in the craft beer industry. In particular, the findings could contribute to shed light on some critical issues about the provision of raw materials, suggesting possible paths for the successful development of the craft beer industry in the region.

According to research, Mediterranean area has shown large climate shifts in the last century and it has been identified as one of the most prominent "Hot-Spots" in future climate change projections. Since agriculture is an economic activity which strongly depends on climate setting and is particularly responsive to climate changes, it is important to understand how such changes may affect agricultural profitability in the Mediterranean region. The aim of the present study is to assess the expected impact of climate change on permanent crops cultivated in Sicilian region (Southern Italy). By using data from Farm Accountancy Data Network and Ensembles climatic projections for 2021-2050 period, we showed that the impact of climate change is prominent in this region. However, crops respond to climatic variations in a different manner, highlighting that unlike the strong reduction in profitability of grapevine and citrus tree, the predicted average Net Revenue of olive tree is almost the same as in the reference period (1961-1990).

The growth of diet-related diseases is becoming an important societal concern and a challenge for... more The growth of diet-related diseases is becoming an important societal concern and a challenge for a more sustainable society. This has developed important trends in food consumption, including the increasing demand for food with a natural attribute and with health claims (e.g., enriched food). Consumers tend to evaluate these two attributes as superior ones and tend to pay a premium price for them. Accordingly, the value added by producers also will upturn if they take into consideration the consumers' preferences. However, to the best of our knowledge, consumer preference over the two types of products (natural and enriched) is not yet completely clear. The present study tries to contribute to reducing this gap by analyzing Hungarian consumer preferences for natural fruit juices over enriched ones and exploring the drivers which guide consumer choices for the two attributes. For this purpose, we analyze young consumers' willingness-to-pay (WTP) for natural and enriched fruit juices using a seemingly unrelated regression (SUR) to derive the two value-added activities. Our results show that the fruit juice with the natural attribute is preferred over the enriched one, and that there is a common feature behind the perception of the two attributes, namely the healthiness. Based on the natural fruit juice characteristic, these results open space for local production in gardens or in small-medium sized farms. This could have beneficial effects, both for sustainable development of rural areas and for the promotion of healthy food systems towards sustainability in food consumption.

The present study focuses on farmers operating in two Regions of Italy, namely Sicily and Campania, somewhat representative of areas with high potential of investments in new bioenergy supply value chain. Farmers were asked to choose whether to participate or not in a collective investment regulated by contract schemes. Monetary trade-offs were then computed among contract attributes. A specific questionnaire was submitted to a sample of farmers selected on the basis of their potential capability of investments. A stated preference modelling approach was implemented so that farmers could make a choice between alternative contracts reporting varying attribute levels. If energy-producing companies are paying attention to biofuel production aiming at a diversification of their activities, results show that farmers' participation needs to be managed through contracts that take care of investment length, warranty on investment return, and risk management.

The current study explored consumers' preferences for natural versus enriched foods and identifie... more The current study explored consumers' preferences for natural versus enriched foods and identified the underlying driving forces behind consumer interest towards both attributes. A laboratory experiment with 200 respondents was carried out, applying the incentive compatible Becker-DeGroot-Marschak mechanism to measure consumers' willingness to pay for natural and enriched attributes of chewing gum. Empirical findings reveal that the two attributes are evaluated similarly by consumers. Furthermore, structural equation modelling identified a strong interdependence between the natural and the enriched attributes, suggesting they are complementary rather than substitutes/alternatives in consumers' food choices. Indeed, preferences for natural and for enriched attributes are influenced by different motivations nonetheless share a common driver: the general interest for healthy food.

Despite the benefits of sustainable innovations in the agricultural sector being widely recognize... more Despite the benefits of sustainable innovations in the agricultural sector being widely recognized, their adoption rate remains below the level designated by the 2030 Sustainable Development Goals. To understand the reasons behind this phenomenon, the current systematic literature review (SLR) provides a comprehensive overview of factors affecting farmers' innovation adoption behavior in developed countries. A total of 44 studies, published since 2010, were identified, analyzed, and summarized. The analysis revealed that specific innovation characteristics foster the innovation adoption process, together with individual psychological and socio-demographic features. It emerged that the path to adopting sustainable innovations can be driven by environmental values; for example, when comparing organic and conventional farming, organic farmers have a stronger environmental view and are more likely to take less into account economic gains. On the contrary, complexity of innovation, a high degree of innovation aversion, and a low perceived control over innovation are among the core barriers to the innovation adoption. Findings provide important insights on potential research avenues that could further depict farmers' adoption dynamics of sustainable innovations.

The consumption of dried fruits in place of unhealthy snacks, which are rich in sugars, salt, and... more The consumption of dried fruits in place of unhealthy snacks, which are rich in sugars, salt, and fats, could represent a valid option for reaching the daily intake recommended by the WHO for fruits and for encouraging the adoption of a sustainable diet. However, the consumption of dried fruits is lower than that of unhealthy snacks, especially among young people. Therefore, to foster young people’s intentions to consume dried fruits instead of unhealthy snacks, it is important to identify the factors underlying millennials’ consumption intentions. Using a convenience sample of 174 Italian millennials, this paper aimed to understand the factors influencing young people’s intentions to consume dried fruits by measuring their willingness to pay a price premium. The empirical analysis has been carried out by administering an online questionnaire to 273 consumers within a hypothetical context. A multiple price list has been provided in order to measure the price premium for 1 kg of oranges transported by EVs comparing with the ones transported by traditional vehicles. A Tobit regression model has been used for the data analysis in order to identify the most influential factors affecting the consumers’ WTP. Results suggest that consumers’ WTP is mainly influenced by environmental attitudes, knowledge and possibility of engaging in responsible purchasing, and the approval of friends and relatives (social norms). However, few studies have analysed consumers’ points of view of innovations on organic food, limited to the change in the natural food composition or the enrichment of the nutritional contents of the product. This study, using experimental auctions, aims to overcome this gap by enriching the knowledge on organic consumers’ preference for organic food with functional characteristics. Specifically, this study analyses the willingness to pay (WTP) of 110 Italian consumers for organic eggs enriched with omega-3 polyunsaturated fatty acids (PUFA), compared to standard organic eggs, and the factors underlying this choice. Based on the natural fruit juice characteristic, these results open space for local production in gardens or in small-medium sized farms. This could have beneficial effects, both for sustainable development of rural areas and for the promotion of healthy food systems towards sustainability in food consumption.

The present study focuses on farmers operating in two Regions of Italy, namely Sicily and Campania, somewhat representative of areas with high potential of investments in new bioenergy supply value chain. Farmers were asked to choose whether to participate or not in a collective investment regulated by contract schemes. Monetary trade-offs were then computed among contract attributes. A specific questionnaire was submitted to a sample of farmers selected on the basis of their potential capability of investments. A stated preference modelling approach was implemented so that farmers could make a choice between alternative contracts reporting varying attribute levels. If energy-producing companies are paying attention to biofuel production aiming at a diversification of their activities, results show that farmers' participation needs to be managed through contracts that take care of investment length, warranty on investment return, and risk management.

A laboratory experiment with 200 respondents was carried out, applying the incentive compatible Becker-DeGroot-Marschak mechanism to measure consumers' willingness to pay for natural and enriched attributes of chewing gum. Empirical findings reveal that the two attributes are evaluated similarly by consumers. Furthermore, structural equation modelling identified a strong interdependence between the natural and the enriched attributes, suggesting they are complementary rather than substitutes/alternatives in consumers' food choices. Indeed, preferences for natural and for enriched attributes are influenced by different motivations nonetheless share a common driver: the general interest for healthy food.

Despite the benefits of sustainable innovations in the agricultural sector being widely recognize... more Despite the benefits of sustainable innovations in the agricultural sector being widely recognized, their adoption rate remains below the level designated by the 2030 Sustainable Development Goals. To understand the reasons behind this phenomenon, the current systematic literature review (SLR) provides a comprehensive overview of factors affecting farmers' innovation adoption behavior in developed countries. A total of 44 studies, published since 2010, were identified, analyzed, and summarized. The analysis revealed that specific innovation characteristics foster the innovation adoption process, together with individual psychological and socio-demographic features. It emerged that the path to adopting sustainable innovations can be driven by environmental values; for example, when comparing organic and conventional farming, organic farmers have a stronger environmental view and are more likely to take less into account economic gains. On the contrary, complexity of innovation, a high degree of innovation aversion, and a low perceived control over innovation are among the core barriers to the innovation adoption. Findings provide important insights on potential research avenues that could further depict farmers' adoption dynamics of sustainable innovations.

The empirical analysis has been carried out by administering an online questionnaire to 273 consumers within a hypothetical context. A multiple price list has been provided in order to measure the price premium for 1 kg of oranges transported by EVs comparing with the ones transported by traditional vehicles. A Tobit regression model has been used for the data analysis in order to identify the most influential factors affecting the consumers’ WTP. Results suggest that consumers’ WTP is mainly influenced by environmental attitudes, knowledge and possibility of engaging in responsible purchasing, and the approval of friends and relatives (social norms).
