The regional features of physical development, the imbalance in the distribution of basic nutrients in the structure of the energy value of the diet, the discrepancy between energy consumption and energy expenditure were revealed. Low awareness about the methods of reducing body weight indicates the need to introduce educational programs.

The medical and biological substantiation of the composition was carried out and a specialized food product was developed for nutrition of female athletes of children and adolescents (12-17 years), that provides the intake an easily digestible of hem form’s iron and vitamins involved in iron metabolism in the body for at least 15 % and no more than 50% of the recommended daily intake.

This study evaluates the vitamin status of football players based on the data of actual nutrition and concentration of biomarkers in blood serum in the competition period of sports activity. Materials and Methods. The research involved 22 football players (men aged 245 years, body mass index 22.90.2 kg/m2). Intake of С, В1, В2, РР, A vitamins and beta-carotene was evaluated using the 24-hour nutrition reproduction method. Concentrations of ascorbic acid, riboflavin, retinol, tocopherols, beta-carotene in blood serum were determined in fasting condition on the next day after a competition. Results. A reduced intake of vitamin A and beta-carotene relative to the recommended level was found in 86.0% of examined individuals, and of vitamins В1, В2, РР, and C in 77.2, 68.1, 36.3 and 63.6%, respectively. A study of biomarkers of provision with vitamins showed a reduced riboflavin concentration in blood serum relative to the norm (5 ng/ml) and the optimal level (10 ng/ml) in 45.4% and...

In recent decades, various biomedical and technological strategies have been implemented in the development of specialized food products, including those for the nutrition of athletes. Proteins of milk and whey occupy an important place among the functional ingredients. Despite the fact that the average per capita consumption of protein in the structure of the diet in the Russian Federation over the past few years has been at a satisfactory level (in 2019 - 80.4 g/day, in 2020 - 81.4 g/day), for athletes with high body weight and extremely high energy consumption (4000 kcal/day and above), these values will be insufficient. In connection with this, special attention should be paid to various protein fractions in the development of SPP at a consumption level of ...

We searched SCOPUS, PubMed, Embase, CrossRef, Medline, Cochrane library, eLibrary, and CyberLeninka. A total of 3310 records published between January 1980 and December 2021 were screened. We identified 34 relevant studies conducted in Russia, Norway, the USA, Canada, and Finland for the synthesis. Overall, the consumption of reindeer meat reduces arterial hypertension and atherosclerosis due to many polyunsaturated fatty acids (linoleic, linolenic, arachidonic) and vitamin C, which balances lipid fractions. Venison is an effective means of preventing obesity and adapting to cold due to the content of a complete set of essential trace elements, amino acids, and even L-carnitine. The high content of vitamin C and microelements (iron, zinc, copper) in reindeer meat is likely to increase the body’s...

Terms in the nutrition of athletes are interpreted in different ways. In the Russian Federation, there are normative act regulating definitions of athletes' nutrition, specialized foodstuffs and biologically active food additives for athletes, and parameters of diets. Uniformity in the use of terminology will lead to uniqueness and accuracy of descriptions and analysis of research results, as well as an understanding of recommendations in the field of nutrition of athletes.

Materials and methods: 30 athletes (20 men and 10 women) were surveyed whose middle age was 20,9±0,75 и 19,4±0,5 years old, respectively. The studies were conducted in the immunology laboratory of Federal Researcher Centre of Nutrition and Biotechnology, and in the Federal Research and Clinical Center for Sports Medicine and Rehabilitation of the Federal Medical and Biological Agency of Russia. Study was conducted during pre-competition period, simultaneously with profound medical examination. Data collection of surveyed athletes' dietary intakes was carried out using questionnaire-polling method of 24-hour nutrition replication. The measure of consume food amounts was performed by using the «Servings album of products and dishes». The estimation of nutrients and energy consumption was carried out using an electronic database of the chemical composition of products and dishes. Results: estimation of the energy and nutritional value of the athletes diet has shown a discrepancy between the obtained values and the recommendations for this group of physical activity. Levels of diet's energy value amounted to 4043±230 (3732 – 4498 kcal/day) by men and 3479±156,4 (3228 – 3795 kcal/day) by women. The ratio of caloric intake of proteins, fats and carbohydrates in the diets of athletes was 14.5%, 37.3%, 48.1% for men, and 15.8%, 33.3% and 50.8% for women, respectively. In this, for athletes who generally train endurance the recommended ratio of protein, fat and carbohydrates in the diet is 13-15%, 24-25% and 58-61%, respectively according to various literary data. Conclusions: among surveyed athletes, there was a tendency towards exceed energy intake due to fat (37.3±2.7% in men; 33.3±2.5% in women) and insufficient carbohydrate intake (48.1±3.1% and 50, 8±2.3%, respectively) with normal levels of protein intake (14.5±1.3% for men; 15.8±2.3% for women). Despite the fact that women had a higher intake of carbohydrates than men, the proportion of complex carbohydrates in the structure of the diet was 7.5% lower (p <0.05). These findings indicate the diet imbalance of this athlete’s category.

To compare the calculated data of A, B2, D vitamins and beta-carotene consumption with diets and biomarkers of vitamin status of 178 residents of Tazovsky and Gyda settlements of Yamal-Nenets Autonomous Area. Materials and Methods. The actual nutrition was studied by frequency (according to the frequency of food consumption for the previous month) and 24-hour (daily) reproduction methods. Vitamin status was assessed by serum vitamin concentration. Results. A statistically significant relationship between serum beta-carotene level and its consumption with rations was established. There was no significant relationship between the level of fish consumption and vitamin D sufficiency. Conclusion. Vitamin intake data provide a framework to reveal deviations from optimal nutrition and to identify risk groups with vitamin deficiency, but they do not always make it possible to carry out an objective assessment of individual vitamin sufficiency. Thus, in individuals with a clear lack of ...
