Black locust honey is produced from nectar collected from the Robinia tree (Robinia pseudoacacia)... more Black locust honey is produced from nectar collected from the Robinia tree (Robinia pseudoacacia). It has light yellow colour, very light and neutral fragrance, and smells of acacia blossom. It has a medium-sweet to very sweet taste, which is fairly to very long-lasting. Its aroma lasts for a short time and it slowly crystallizes. Chestnut honey is produced from nectar or collected from the sweet chestnut (Castanea sativa). Honey is dark brown with a red tint colour, dark colour depends on the region and year, and its aroma is very distinctive with extremely characteristic bitter taste. It rarely crystallizes. This paper presents the characteristics of quality black locust and chestnut honey produced in the territory of Bosnia and Herzegovina in the period 2012-2015. The study included 31 samples of honey. Laboratory testing of black locust and chestnut honey were carried out in accordance with the rules of the Ordinance on Honey and other Bee Products (Official Gazette of B&H, No. 37/09) and the EU Directive 2001/110/EC; CODEX STAN 12-1981. Indicators of quality (water content, electrical conductivity, total acidity, pH, hydroxymethylfurfural (HMF), and colour) and sensory properties of honey were determined. It was found that patterns of black locust and chestnut honey classified according to years showed certain variability in the physicochemical and sensory characteristics.

Adolescence is a special period in life and considered as the deadline period for correction of incorrect food habits. The aim of this research was to define risk factors which influence overweight and obesity among adolescents. Participants were 652 students aged 13, 14 and 15 years from eight schools in Sarajevo. First author conducted measurements of body weight and body height needed for calculation of Body Mass Index and also introduced students to the Questionnaire which was filled in anonymously. Data was processed with SPSS 10.0. Nutritional status expressed by BMI z-score shows that half (50.5%) of adolescents have normal weight. In the history of human diet beans are found in use very early, and availability throughout the year enables its wide application. In Bosnia and Herzegovina beans are common ingredients which are an integral part of a meal, especially during the winter. The aim of this paper is to give contribution to the selection of local varieties of beans by highlighting energy and nutritional value of raw grains. The tests in this study included three local varieties of beans, namely Bosna, Darko and Igman in order to assess the levels of carbohydrate, protein and fat (energy content) and the content of minerals (copper, iron, phosphorus, manganese and magnesium). Test results indicate that content of dry matter and water is not conditioned by varietal differences, but the total fat content varies from 0.84% (Bosna) to 1.73% (Darko), and total sugar of 2.4% (Bosna) to 3.36% (Darko and Igman). Through their nutritional values importance of minerals is emphasized during recent years. In this study, some spice and medicinal plant species in the useable form in which they are commonly found in sales, are examined: cumin seed - Carum carvi L., sesame seed - Sesamum indicum, ground oregano - Origanum vulgare L, dry sage - Salvia officinalis L., dry thyme - Thymus seryillum and dry dill, Anethum graveolens L., for the presence of: magnesium (Mg), phosphorus (P), potassium (K), manganese (Mn), iron (Fe), copper (Cu) , zinc (Zn) and selenium (Se). Results show that in all tested samples mostly detected is potassium (K) and the least detected is selenium. School snack is the only meal that students of Public Primary schools in Bosnia and Herzegovina c... more School snack is the only meal that students of Public Primary schools in Bosnia and Herzegovina consume during their stay in school. As one of recommended five meals it should represent an adequate share of the daily intake of nutrients. The aim of this research was to identify acquired habits that dominate in choosing type of snack, to determine supply of school snacks, which are available in the schools in Canton Sarajevo and to conduct microbiological analysis of the same. Results indicate that school snack consists mainly of puff pastry, contains no fruit, little bit of vegetables, dairy products are present in small quantities and do not include any beverage. Results of microbiological analysis of samples of snacks indicate that there is no danger of primary contamination. According to some studies, the most intense is accumulation of zinc (Zn), boron (B), molybdenum (Mo), cobalt (Co), to a lesser extent manganese (Mn), iron (Fe), aluminum (Al), copper (Cu) and the least, lead (Pb) and chromium (Cr). Research in this paper include raw and germinated grains of three local varieties of beans, Bosna, Darko and Igman in which were determined presence of zinc, boron, molybdenum, cobalt, manganese, iron, copper, lead and chromium. It is related to the production of wheat starch in households named "nišesta", and such production is retained up to today. Ochratoxin A (OTA) production has been repeatedly reported in Aspergillus section Nigri; OTA has been occasionally detected in pistachio nuts in high concentrations. The aim of this study was to develop suitable validated models to predict the growth and OTA production boundaries by an Aspergillus carbonarius isolated from pistachios as a function of moisture content and storage temperature of pistachios. A full factorial design was used: the moisture content levels assayed were 12.5%, 17.9%, 24.0%, 29.5% and 34.8% and the incubation temperatures were 10, 15, 20, 25, 30, 37 and 42 degrees C. A probability model was built to predict the growth of the strain under the assayed conditions, which proved to be concordant in 73-91% of the cases with the observed probabilities in the validation test specifically chosen for limiting growth conditions. Similarly, the probability for the presence of OTA was correctly predicted in 90% of the cases. OTA accumulation was mainly a function of the temperature of storage, with a sharp increase at <15-20 degrees C; this value was very different from 30 to 35 degrees C, which was optimum for growth. Increasing OTA levels were found with increasing moisture content in the pistachio nuts. The impact of these results in the implementation of HACCP plans in Western Asian countries, is discussed. Probability models were applied in this work to mycotoxin accumulation for the first time, however, further research is required in the kinetics of mycotoxins accumulation to develop proper empirical models.

One of the most important factors is parental BMI not only because of genetics but also because of food choices parents make for children. The aim of this study was to analyze the relationship between parents’ BMI and children’s BMI. The sample for this study consisted of 280 adolescents, 131 boys (46.8%) and 149 girls (53.2%) living in Canton Sarajevo, Bosnia and Herzegovina. We measured adolescents’ BMI and we used parents’ self-reported measures to calculate parents’ and childrens’ BMI. The correlation was significant between mothers’ BMI and childrens’ BMI (r = .24, p < .01) but not between fathers’ BMI and childrens’ BMI (r = .08, p = .16). In relation to the child’s gender the correlation between mothers’ BMI is stronger for the boys (r = .28, p < .01) than for the girls (r = .20, p = .013) and fathers’ BMI was correlated with boys’ BMI (r = .19, p = .032), but not with girls’ BMI (r = .012, p = .88). The results of this study point to the complex relationship between parents’ and childrens’ BMI.

Milk is a complete food which contains many nutrients and meets needs for calcium, magnesium, selenium, riboflavin, vitamins B12 and B5. The protein in cow milk is of high-quality (defined as protein that supports maximal growth), containing a good balance of all the essential amino acids, including lysine. Because of the above mentioned a survey has been conducted about the consumption of milk and dairy products among adolescents in the Canton of Sarajevo. Through their nutritional values importance of minerals is emphasized during recent years. In this study, some spice and medicinal plant species in the useable form in which they are commonly found in sales, are examined: cumin seed - Carum carvi L., sesame seed - Sesamum indicum, ground oregano - Origanum vulgare L, dry sage - Salvia officinalis L., dry thyme - Thymus seryillum and dry dill, Anethum graveolens L., for the presence of: magnesium (Mg), phosphorus (P), potassium (K), manganese (Mn), iron (Fe), copper (Cu) , zinc (Zn) and selenium (Se). Results show that in all tested samples mostly detected is potassium (K) and the least detected is selenium. Compared with USDA nutritional values provided (National Nutrient Database for Standard Reference), cumin seed has more phosphorus for 4.79%, manganese for 11.29%, copper for 124% and selenium for 0.03%, and in sesame seeds are more potassium 233....

As one of recommended five meals it should represent an adequate share of the daily intake of nutrients. The aim of this research was to identify acquired habits that dominate in choosing type of snack, to determine supply of school snacks, which are available in the schools in Canton Sarajevo and to conduct microbiological analysis of the same. Results indicate that school snack consists mainly of puff pastry, contains no fruit, little bit of vegetables, dairy products are present in small quantities and do not include any beverage. Results of microbiological analysis of samples of snacks indicate that there is no danger of primary contamination. According to some studies, the most intense is accumulation of zinc (Zn), boron (B), molybdenum (Mo), cobalt (Co), to a lesser extent manganese (Mn), iron (Fe), aluminum (Al), copper (Cu) and the least, lead (Pb) and chromium (Cr). Ochratoxin A (OTA) production has been repeatedly reported in Aspergillus section Nigri; OTA has been occasionally detected in pistachio nuts in high concentrations. The aim of this study was to develop suitable validated models to predict the growth and OTA production boundaries by an Aspergillus carbonarius isolated from pistachios as a function of moisture content and storage temperature of pistachios. A full factorial design was used: the moisture content levels assayed were 12.5%, 17.9%, 24.0%, 29.5% and 34.8% and the incubation temperatures were 10, 15, 20, 25, 30, 37 and 42 degrees C. A probability model was built to predict the growth of the strain under the assayed conditions, which proved to be concordant in 73-91% of the cases with the observed probabilities in the validation test specifically chosen for limiting growth conditions. Similarly, the probability for the presence of OTA was correctly predicted in 90% of the cases. OTA accumulation was mainly a function of the temperature of storage, with a sharp increase at &amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;amp;lt;15-20 degrees C; this value was very different from 30 to 35 degrees C, which was optimum for growth. Increasing OTA levels were found with increasing moisture content in the pistachio nuts. The impact of these results in the implementation of HACCP plans in Western Asian countries, is discussed. Probability models were applied in this work to mycotoxin accumulation for the first time, however, further research is required in the kinetics of mycotoxins accumulation to develop proper empirical models.

One of the most important factors is parental BMI not only because of genetics but also because of food choices parents make for children. The aim of this study was to analyze the relationship between parents’ BMI and children’s BMI. The sample for this study consisted of 280 adolescents, 131 boys (46.8%) and 149 girls (53.2%) living in Canton Sarajevo, Bosnia and Herzegovina. We measured adolescents’ BMI and we used parents’ self-reported measures to calculate parents’ and childrens’ BMI. The correlation was significant between mothers’ BMI and childrens’ BMI (r = .24, p < .01) but not between fathers’ BMI and childrens’ BMI (r = .08, p = .16). In relation to the child’s gender the correlation between mothers’ BMI is stronger for the boys (r = .28, p < .01) than for the girls (r = .20, p = .013) and fathers’ BMI was correlated with boys’ BMI (r = .19, p = .032), but not with girls’ BMI (r = .012, p = .88). The results of this study point to the complex relationship between parents’ and childrens’ BMI.
