Information in its multiple forms (oral, textual, hypertextual, audio, video, iconic, multimedia ... more Information in its multiple forms (oral, textual, hypertextual, audio, video, iconic, multimedia ...) is the raw material of the current era. The development and evolution of our civilization is symbiotically linked to the Information and communications technology (ICT). Proposals for teaching and learning in the context of the knowledge society must integrate an educational system that target the thought operations, not only under the traditional logical thinking, but also within a model where thought operations can be expressed in complex active competences, in which abstract knowledge is mixed with the experiential, defined as technological thinking. Currently, the use of devices such as smartphones and tablets is widespread in the youth and the University community. This development reflects not only the growing penetration of these devices in the academic environment, but also that technological applications are increasingly commonly incorporated, which can be used for professors with academic purposes. Currently, there is software available that allows designing and developing applications for smartphones and tablets with academic content. In our case, we intend to design an academic app for Android and iOS systems, which can facilitate the study of various subjects through seamless student-professor communication. The subjects to which the app is addressed include complex physiological phenomena, cell exchange processes and inter-chamber interactions. The lack of time to deal with many contents and concepts is a major problem for professors when it comes to developing the subject, and they are overwhelmed by an enormous amount of information. In this context, the app can lead to a profound change in the subject teaching. This represents a huge challenge for professors, related to innovation, technology, science and education. Tablets, smartphones and applications will be increasingly present in everyday life including university classrooms. Therefore it is imperative that professors have a motivated attitude to the use of these tools and they should be specially trained in its use to develop appropriate educational activities. Knowing devices, products, resources for selection, content is essential to maximize the potential of technology in teaching.

On the other hand, obesity is also reaching dramatic dimensions and it is a risk factor for morbidity and premature mortality. Obesity has been linked to a high risk of serious-associated complications to COVID-19, due to the increased risk of concomitant chronic diseases, which highlights the health public relevance of the topic. Obese subjects have a pro-inflammatory environment, which can further exacerbate COVID-19-induced inflammation and oxidative stress, explaining the increased risk of serious complications in these patients. Another factor that favors infection in obese patients is the high expression of ACE2 receptors in the adipose tissue. The negative impact of COVID-19 in obesity is also associated with a decrease in respiratory function, the concurrence of multiple comorbidities, a low-degree chronic inflammatory state, immunocompromised situation, and therefore a higher rate of hospitalization, mechanical ventilation, in-hospital complications such as pneumonia, and death. In this review, the link between obesity and COVID-19 was analyzed, exploring the potential common mechanisms in both diseases, with special attention to oxidative stress and inflammation, due to the crucial role of both pathways in the development of the disease.

Research paper thumbnail of DHA supplementation: A nutritional strategy to improve prenatal Fe homeostasis and prevent birth outcomes related with Fe-deficiency

Journal of Functional Foods, 2015

Abstract The effect of maternal DHA supplementation on expression of key genes and proteins invol... more Abstract The effect of maternal DHA supplementation on expression of key genes and proteins involved in Fe metabolism and mineral placenta content was evaluated for the first time. One hundred and ten pregnant women were randomly assigned to one of the groups: control (n = 54, 400 ml/day of the control dairy drink; DHA-supplemented (n = 56, 400 ml/day of the DHA-enriched dairy drink). Placenta DMT1, FPN1, TfR1 and Hamp1 mRNA and protein expressions were analysed. Hepcidin concentration in the mother and umbilical cord and placenta mineral content were assessed. DMT1, FPN1, TfR1 and Hamp1 gene expressions together with serum hepcidin increased in umbilical cord and artery of the DHA-supplemented group. In this group, Fe concentration increased in plasma, umbilical cord vein and artery. Ca concentrations raised in umbilical cord vein and artery, Cu, V and Mn levels. Docosahexaenoic acid (DHA) supplementation improved transplacental Fe homeostasis, enhancing Fe transfer and boosting neonates Fe stores at delivery.

Research paper thumbnail of Coenzyme Q Protects Against Age-Related Alveolar Bone Loss Associated to n-6 Polyunsaturated Fatty Acid Rich-Diets by Modulating Mitochondrial Mechanisms

The Journals of Gerontology Series A: Biological Sciences and Medical Sciences, 2015

An age-dependent model of the periodontium was reproduced to evaluate the effect of lifelong feed... more An age-dependent model of the periodontium was reproduced to evaluate the effect of lifelong feeding on a low coenzyme Q 10 dosage in n-6, n-3 polyunsaturated fatty acid or monounsaturated fatty acid-based diets on periodontal tissues of young and old rats. Results shown that exacerbated age-related alveolar bone loss previously associated to n-6 polyunsaturated fatty acid diet was attenuated by coenzyme Q 10. Gene expression analysis suggests that involved mechanisms might be related to a restored capacity of mitochondria to adapt to aging in gingival cells from rats fed on n-6 polyunsaturated fatty acid. In particular, this could be due to an age-related increase of the rate of mitochondrial biogenesis and a better oxidative and respiratory balance in these animals. From the nutritional and clinical point of view, it is noteworthy that supplementation with coenzyme Q 10 could counteract the negative effects of n-6 polyunsaturated fatty acid on alveolar bone loss (a major feature of periodontitis) associated to age.

Methods: A total of 110 pregnant women were randomly assigned to one of the following intervention groups: control group (n ¼ 54), taking 400 mL/ day of the control dairy drink, and supplemented group (fish oil [FO]) (n ¼ 56), taking 400 mL/day of the fish oil-enriched dairy drink (including $400 mg eicosapentaenoic acid-docosahexaenoic acid [DHA]/day). During the study, the mothers' diets were supervised by a nutritionist to encourage compliance with present recommendations of FA intake. Blood fatty acid profiles were determined in the mother's (at enrollment, at delivery, and at 2.5 and 4 months) and newborn (at delivery and at 2.5 months) placenta and breast milk (colostrum and at 1, 2, and 4 months). Pattern reversal visual evoked potentials (VEPs) (at 2.5 and 7.5 months) and Bayley test (at 12 months) were recorded. Results: DHA percentage was higher in plasma, erythrocyte membranes, and breast milk samples from the FO group. The ratio of nervonic acid was also higher in plasma and erythrocyte lipids of the mother and newborn's blood samples from the FO group. No differences were observed in the Bayley test. No differences were observed in VEPs between both groups. We observed a shorter latency, however, in the lower visual angle (7.5 0) in the boys of the supplemented group. Conclusions: Omega-3 LC-PUFA dietary supplement during pregnancy and lactation influenced the mother and newborn's fatty acid profile and nervonic acid content but did not show effects on visual and cognitive/psychomotor development.

Research paper thumbnail of Relative importance of the saponified and unsaponified fractions of dietary olive oil on mitochondrial lipid peroxidation in rabbit heart

Nutrition, metabolism, and cardiovascular diseases : NMCD, 1999

The experimental oils (olive oil from the variety "picual", washed olive oil from the variety "picual", olive oil from the variety "arbequina" and high-oleic sunflower oil) had a similar fatty-acid composition, but differed in their unsaponified fraction (polyphenols, tocopherols, and others). The lowest hydroperoxide levels were found with picual and washed picual. No differences in mitochondrial membrane thiobarbituric acid reactive substance (TBARS), alpha-tocopherol concentrations and cytosolic antioxidant enzymes (superoxide dismutase, glutathione peroxidase, glutathione reductase and catalase) were found, whereas the CoQ10 content correlated inversely with hydroperoxide levels in all groups. These results suggest that mitochondrial membranes with high levels of monounsaturated fatty acids generate low levels of lipid peroxidation. ...

At the same time, a series of anthropometric measures was taken from each subject (weight, height, skin pleats and arm measurement). Comparison of real intakes with those recommended was carried out using the 1980 Spanish recommendations and the 1992 European Community recommendations. For men (n = 42) mean intakes for most nutrients were similar to the recommended levels and the proportion with intakes of vitamins and minerals below 80% of the recommended intakes was also minimal. Among women (n = 50) mean intake of zinc was below 80% of the Spanish recommendation. However, there was a wide range of intakes of minerals and vitamins within both groups; therefore, we found a high percentage of subjects with intakes of some vitamins or minerals below 80% of the recomme...
