The fatty acid composition of glycerides, phospholipids, and cholesterol esters obtained from thr... more The fatty acid composition of glycerides, phospholipids, and cholesterol esters obtained from three different preparations of bovine intestinal mucosa' were compared. When superficial scrapings were analyzed, the arachidonic and linoleic acid contents of phospholipids were considerably higher than those present in glycerides and cholesteryl esters. The unsaturated/saturated fatty acid ratio of phospholipids and cholesterol esters showed a decrease from superficial to deep scrapings, whereas the opposite results were observed in glycerides. The data indicate chat enterocyte difterentiation across the crypt-villus axis in bovine intestinal mucosa should be recognized by changes in fatty acid composition of different lipid classes.
