The experiments were laid out in a completely randomized design with five treatments (in Experiment I) and four treatments (in Experiment II). In Experiment I, the treatments consisted of a tilapia monoculture; a 75% tilapia + 25% tadpole polyculture; a 50% tilapia + 50% tadpole; a 25% tilapia + 75% tadpole; and a tadpole monoculture. In Experiment II, the treatments were represented by a tilapia monoculture; a 12.5% tilapia + 87.5% tadpole polyculture; a 25% tilapia + 75% tadpole; and a tadpole monoculture. In the first trial, mortality rate differed significantly, with the polyculture treatments having almost 100% mortality of tadpoles. In the second experiment, after adjustments in the initial size of the species, there were significant differences between treatments, with the 12.5% tilapia + 87.5% tadpole polyculture and the tadpole monoculture providing the best results. Regardless of the chosen density, for a polyculture of Nile tilapia and bullfrog tadpoles, ideal conditions would be stocking tilapia fry weighing 50% of the weight initial tadpoles and the proportion of one tilapia for seven tadpoles.

This study aimed at evaluating the anatomy of the digestive tract and morphometry of the midgut and hindgut of bullfrog (Lithobates catesbeianus) tadpoles to provide subsidies for nutritionists to make adjustments in the balancing of suitable diets for this species. The population of tadpoles that received the dietary regimen named DR3, which consisted of a fortnight increase of the dietary protein levels (from 32 to 45% of CP) for 60 days, showed the best results regarding weight gain, survival rate, and homogeneity in the passage of the larval stages as compared with the other dietary regimens tested. Additionally, the morphometry of the intestines of the animals subjected to DR3 showed a greater length (419.2 mm) and higher caliber of t...

Among the species produced in freshwater are tilapia, frogs and shrimps. These species present high nutritional value and can be produced in several regions of Brazil. The state of Rio de Janeiro presents adequate climatic conditions for the creation of these species. Among the production systems used are water recirculation, a system called closed and intensive; the net tanks that are open and intensive; the ponds that can be extensive and semi-intensive. The production of aquatic organisms in captivity for human consumption will meet a demand evidenced in recent years, when production from the capture is in full decline. Fish is a food of high biological value and presents itself as a healthy food alternative and its small and medium scale production is an income alternative for producers in several regions of Brazil.

In this study, developed at the Municipal School Odilon de Andrade in the"Complexo do Alemão" the art was associated with environmental education. Students of the 7th and 8thschool years participated in the workshops held twice a week, one for each class, between August and November 2015. The study adopted a diverse pedagogical strategy covering: group dynamics, reading and interpreting texts on environment and environmental preservation; discussions about the history of urbanization of the city of Rio de Janeiro; landscape photos show the city before and after the environmental impacts; drawing classes; painting classes; choice and study of landscapes by students; preparationof texts on the paintings made. The results showed that the workshops were well accepted by the students. The pictures painted by the students were exposed in Unisuam and also at the Municipal School Odilon de Andrade and was even prepared a video by Unisuam that will be used in the dissemination of project.

The aim of this study was to evaluate the potential for use of frog meat in hospital diets and in diets recommended by physicians, in addition to promoting its consumption. Interviews were performed at hospitals and medical offices in Rio de Janeiro (RJ, Brazil). The survey identified that 72% of interviewedphysicians, nutritionists, and staff responsible for hospital kitchens-do not know the nutritional properties of frog meat, and 50% believe there are difficulties in its use and highlighted the little availability of the product in the market and its high price. Frog meat is considered a healthy food, but the importance of its use and forms of preparation must be divulged.

The precooked meat was inoculated with 8 log cfu/g of S. aureus. The packaged bullfrog's back meat was then exposed to low (0.65 mW/s/cm2), medium (1.04 mW/s/cm2) and high (1.68 mW/s/cm2) UV‐C intensities over different time intervals (60, 100 and 140 s). A reduction of 3 log cfu/g was observed in all treatments when compared with the inoculated but nonirradiated treatment (T0). All the UV‐C treatments of bullfrog's back meat used in this study reduced the S. aureus count (P < 0.05). However, this decrease was not statistically significant between each UV‐C treatment. Due to its effectiveness in log reduction, UV‐C light technology can be utilized for this type of bacteria reduction in the precooked shredded bullfrog back meat industry.Practical ApplicationsIn this work, we studied the effect of short‐wavelength ultraviolet (UV)‐C light to reduce Staphylococcus aureus levels in precooked shredded bullfrog back meat. First, this study contributes knowledge about the use of a nonthermal technology as a pathogen‐reduction step in exotic meat. Second, the UV‐C is presented as a fast, practical and inexpensive method and does not change the industrial flow. Lastly, the data showed that there was a significant reduction of these bacteria in precooked shredded bullfrog back meat and suggests that it can be effectively applied in the bullfrog meat industry.

It is recommended for treating gastrointestinal and allergic diseases. This study aims to maximize the use of bullfrog carcass by applying a heating technology that enables the use of bones in gastronomy, which contain high calcium bioavailability, and represent about 40% of the product's total weight. A meat-and-bone flour called Low Cost Alternative Food has been developed, which, in addition to being functional and rich in protein and calcium, presents similar flavor to that of unmixed bullfrog meat, allowing food enrichment. Dehydration of the skeleton was carried out in an oven, and the remaining material was crushed and then vacuum packed, all in compliance with the standards for good manufacturing practices and under good sanitary conditions, making it microbiologically fit for human consumption for a total of 60 days while stored under refrigeration. Results showed a composition of 25% mineral matter, 60% protein which presented a 90% digestibility rate, only 12% fat, and 2% carbohydrates. This composition can compensate for calcium deficiency and malnutrition due to the quality of its protein.
