Antioxidant are chemical compounds that can donate one or more electrons to free radicals, so tha... more Antioxidant are chemical compounds that can donate one or more electrons to free radicals, so that the free radical reaction is inhibited. Generally, the compounds that have potential as an antioxidant are flavonoids, phenolics and alkaloids. Leaves of tomato (Lycopersicon esculentum Mill.) are plants that contain alkaloid. This study aims to determine the antioxidant activity of the ethanol extract of leaves of fruit tomato (Lycopersicon esculentum Mill, var. pyriforme Alef.) and leaves of vegetable tomato (Lycopersicon esculentum Mill, var. commune Bailey.) with DPPH method (1,1-Diphenyl-2-Picryl Hydrazil). Ethanol extract is obtained by extracting the leaves of friut tomato powder (Lycopersicon esculentum Mill, var. pyriforme Alef.) and the leaves of vegetable tomato (Lycopersicon esculentum Mill, var. commune Bailey.) with maceration. Antioxidant activity was measured using a UV-Vis spectrophotometer with maximum absorption wavelength is 514 nm. Readable absorbance is used to calculate % inhibition and IC50. The results showed that the samples of the leaves of fruit tomato (Lycopersicon esculentum Mill, var. pyriforme Alef.) and leaves of vegetable tomato (Lycopersicon esculentum Mill, var. commune Bailey.) have antioxidant activity with IC50 values of each of 279.482 µg/mL and 280.190 µg/mL. This shows the ethanol extract of leaves of fruit tomato (Lycopersicon esculentum Mill, var. pyriforme Alef.) and leaves of vegetable tomato (Lycopersicon esculentum Mill, var. commune Bailey.) has a very weak activity as an antioxidant.

This helps the body to create collagen and also act as an antioxidant. This study aims to analyze of vitamin C and the antioxidant activity of Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety), obtained from the Pinrang Regency, South Sulawesi Province. The study was carried out experimentally by UV-Vis spectrophotometry method. The measurement of vitamin C was carried out at a wavelength of 265.667 nm while for the antioxidant activity test the maximum wavelength of DPPH was 515.961 nm. Vitamin C levels obtained in Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety), were 0.926±0.75; 0.344±0.35, and 0.281±0.22±0.22% w/w. For antioxidant activity, the results IC50 of Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety), were 2.202; 2,260; and 2.751 ppm while the comparator vitamin C was 12.360 ppm. These results indicate that Capsicum frutescens L. has higher levels of vitamin C than Capsicum annuum L. (curly and large chili variety), while for the antioxidant activity test, the IC50 value of Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety) less IC50 value antioxidant activity than a comparison vitamin C, which means that they have strong antioxidant activity.

Based on either antibacterial and antioxidant activities by TLC-Bioautography showed that fraction at Rf 0.70 value active on bacteria Salmonella thypi and antioxidant active as well. Susu kedelai dan tempe adalah pangan olahan yang digemari masyarakat Indonesia dan menjadi salah ... more Susu kedelai dan tempe adalah pangan olahan yang digemari masyarakat Indonesia dan menjadi salah satu sumber protein nabati yang terbuat dari kedelai. Kedelai mengandung senyawa isoflavon glikosida yang bermanfaat untuk kesehatan sebagai pencegah penyakit kardiovaskuler, kanker, diabetes, hipertensi, osteoporosis, obesitas dan menopause. Isoflavon glikosida memiliki struktur yang lebih kompleks, sehingga perlu mengalami proses biokimiawi untuk menyederhanakan strukturnya agar mudah diserap oleh tubuh. Isoflavon glikosida akan disederhanakan menjadi bentuk aglikon selama proses fermentasi dan hidrolisis kimiawi. Genistein merupakan salah satu bentuk isoflavon aglikon yang banyak ditemui pada produk kacang-kacangan. Susu kedelai dan tempe merupakan produk olahan dari kedelai, perbedaannya adalah tempe telah mengalami proses fermentasi, sehingga diyakini memiliki kadar isoflavon aglikon yang tinggi. Penelitian ini bertujuan untuk menentukan kadar genistein pada ekstrak susu kedelai dan tempe dengan menggunakan spektrofotometri UV-Vis. Sampel diekstraksi dengan menggunakan etil asetat, sehingga diperoleh ekstrak kental, selanjutnya diukur kadar genistein dengan metode spektrofotometri UV-Vis, menggunakan baku standar. Hasil penelitian diperoleh kadar genistein pada ekstrak susu kedelai dan tempe yaitu masing-masing 0.613 dan 5.519% (b/b). Hal ini menunjukkan bahwa kadar isoflavon aglikon lebih tinggi pada tempe dibanding susu kedelai. Kata kunci: genistein, isoflavon aglikon, susu kedelai, tempe

The result of this research shows that diethyl ether ekstract Oxalis corniculata L. herb at concentration 100, 50, 5, 1, 0.5, 0.1, 0.05, 0.01 µg/ml and controler is diethyl ether. Presentation data of Artemia salina Leach larvae was analyzed with probit analysis to count LC 50. Ekstract is toxic if LC50 value < 1000 µg/ml. So obtained that diethyl ether ekstrak Oxalis corniculata L. herb is toxit to Artemia salina Leach larvae with LC 50 4,17± 2,59 µg/ml.

Bioethanol is ethanol fermentation process biomass results with the help of microorganisms. Raw materials for bioethanol is sugary materials, starchy and fibrous. This study tries to make bioethanol from jackfruit seeds (Artocarpus heterophyllus) which is a starchy material. during these jackfruit seeds into consumption only partly public and partly not used. The purpose of this study was to determine the optimum concentration of H 2 SO 4 on the hydrolysis process and determine the optimum fermentation time in the fermentation process. The process of making ethanol in two steps, namely acid hydrolysis and fermentation. Cassava peel hydrolyzed by using a solution of H 2 SO 4 in a variety of variable concentrations (0.1, 0.5 and 1 M) at a temperature of 100 o C for 1 hour. Then a solution of the hydrolysis fermented with various variables days (1, 2, 3, 4, 5, 6 and 7 days). The result showed that the optimum concentration of H 2 SO 4 solution for the hydrolysis reaction is 1 M at a temperature of 100 o C for 1 hour and the optimum fermentation time in the fermentation process is on day 4 where the produced ethanol at 13,19% v/v.

Glucosamine (GlcN) has great application in the food, cosmetic, pharmaceutical, and biomaterial a... more Glucosamine (GlcN) has great application in the food, cosmetic, pharmaceutical, and biomaterial areas; it is typically produced by hydrolysis in the exoskeletons of marine animals, one of the types of mud crab (Scylla serrata Forskal). Mud crab shells contain chitin and chitosan compounds which can be further derivatives for the production of GlcN HCl. The purpose of this study is to isolate and determine the level of GlcN HCl by hydrolysis of chitin and chitosan from mud crab shell. GlcN HCl was characterized by Fourier Transform Infra-Red (FT-IR) spectrophotometry, and its quantity was analyzed by UV-Vis spectrophotometry. Both methods used GlcN HCl as a standard for comparison and calculation of match factor (MF). The results of this study showed that the samples contain GlcN HCl either chitin or chitosan. FT-IR spectrum of chitin sample appears at wave number 1033 cm-1 , 1532 cm-1 , 3415 cm-1 whereas for chitosan at 1033 cm-1 , 1532 cm-1 , 3356 cm-1. Both sample spectrums showed vibration corresponding to ether (-O-), ethyl (CH2) and amine group (NH). The MF value of sample chitin and chitosan is 933 and 974, respectively; it shows that the resulting spectra are identical with the standard. The GlcN HCl level of sample chitin and chitosan was 553 and 993 mg/g, respectively. It can be concluded that the waste of mud crab shell has high potential as a natural source of GlcN HCl.

Phenolic compounds in foods can be grouped into simple phenols and folic acid. This study aimed to determine the total phenolic content of the leaf extract of nutmeg (Myristica fragrans Houtt). Leaves of nutmeg extracted using 70% ethanol, then the extract conducting qualitative analysis by reaction with FeCl3 as specific reagent. The result of this reaction is green solution, it means there are phenolic compound in the extract. The quantitative process of total phenolic was analyzed by UV-Vis spectrophotometry. A comparison used in this analysis is gallic acid; it is a standard reference in the determination of total phenolic content. Sample measured at a wavelength of 860.7 nm, which is the maximum wavelength of gallic acid. Total average content of phenolic is 183.56-mgGAE/g extract. The ethanol extract of nutmeg's leaves have high total phenolic content, which means it is potential as antioxidant.

Objective: This study aims to determine the levels of total phenolic and flavonoid in crude extracts and purified extracts of the green tea leaves (Camellia sinensis). Methods: Determination of total phenolic content was using standard gallic acid by the Folin-Ciocalteau method. Total flavonoid assay using standard reference of quercetin by Chang method. Instrument used to measure the absorbance of the reaction is a UV-Visible spectrophotometer. The Recearch aimed to determine the antibacterial activity and concentration of ethanol extract of taro leaves ( Colocacia esculeta ) inhibited the growth of either Salmonella thypi and Staphylococcus aureus by agar diffusion. The result of the antibacterial activity screening in concentration of 1% showed that the ethanol extract of taro leaves by solid dilution provided activity againts Salmonella thypii and Staphylococcus aureus . Based on the test results of antibacterial activity by agar diffusion using concentration of 1% , 2% and 4 % showed that the ethanol extract of taro has the largest inhibition zone diameter againts Staphylococcus aureus of 4% was 15 mm.

The aim of the research was to determine the antibacterial activity of Colocacia esculenta L leaves fractions delivered from Pare-Pare District of South Sulawesi on Salmonella thypii and Staphyllococcus aureus by means of vacuum liquid chromatography and Bioautographic-TLC. Results of fractionations of the ethanol extract by the former method using eluent of 100 mL n-hexane, nhexane:ethyl acetate (10:1; 1:1), 100 mL ethyl acetate, ethyl acetate:methanol (10:1; 1:1) and 100 mL methanol were obtained 7 fractions. Bioautographic-TLC assay then carried out on the obtained fractions they were fraction 3,4,5,6 and 7 respectively and obtained Rf value 0.80 was possessed antibacterial activity on both tested bacteria.

The objective of this research is to analysis chemical coumpounds active isolate of Colocasia esc... more The objective of this research is to analysis chemical coumpounds active isolate of Colocasia esculenta L.'s leaves IDTK01 using infra red spectrophotometer. The fractionation of the ethanolic extract of Colocasia esculenta L's leaves using liquid vacuum chromatography obtained 7 fractions. Active fraction was B fraction isolated from the active coumpound by TLC-preparative from 3 different isolate, IDTK01, IDTK02 dan IDTK03. IDTK01 isolate was tested its antibacterial activity using TLCbioautography with eluen n-hexane:ethyl acetate (10:1) and its active against Salmonella thypi with Rf value 0.98. Active isolate IDTK01 was analyze its active bacterial coumpound using infrared spectrophotometer and the results is hydrogen bond, hydroxyl functional group (OH), aryl/ aromatic (C=C), aliphatic (CH2), Ether aldehyde (C-O), and pyridine.

Measurement of antioxidant activity of ethanol extract of Marunggai leaves (Moringa oleifera Lam)... more Measurement of antioxidant activity of ethanol extract of Marunggai leaves (Moringa oleifera Lam) was conducted. The aim research to obtain antioxidant activity using FRAP (Ferric Reducing Antioxidant Power). Marunggai leaves (Moringa oleifera Lam.) ware extracted using maceration method by ethanol 96 %. Free radical activity absorbance was measured with a spectrophotometer at a wavelength of 720 nm and the total value of antioxidant activity was calculated based on the data absorbance. The calculations showed that Marunggai leaves (Moringa oleifera Lam.) have the antioxidant activity with the value 7,923 mg AAE/g extract.

This helps the body to create collagen and also act as an antioxidant. This study aims to analyze of vitamin C and the antioxidant activity of Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety), obtained from the Pinrang Regency, South Sulawesi Province. The study was carried out experimentally by UV-Vis spectrophotometry method. The measurement of vitamin C was carried out at a wavelength of 265.667 nm while for the antioxidant activity test the maximum wavelength of DPPH was 515.961 nm. Vitamin C levels obtained in Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety), were 0.926±0.75; 0.344±0.35, and 0.281±0.22±0.22% w/w. For antioxidant activity, the results IC50 of Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety), were 2.202; 2,260; and 2.751 ppm while the comparator vitamin C was 12.360 ppm. These results indicate that Capsicum frutescens L. has higher levels of vitamin C than Capsicum annuum L. (curly and large chili variety), while for the antioxidant activity test, the IC50 value of Capsicum frutescens L. and Capsicum annuum L. (curly and large chili variety) less IC50 value antioxidant activity than a comparison vitamin C, which means that they have strong antioxidant activity.

Susu kedelai dan tempe adalah pangan olahan yang digemari masyarakat Indonesia dan menjadi salah ... more Susu kedelai dan tempe adalah pangan olahan yang digemari masyarakat Indonesia dan menjadi salah satu sumber protein nabati yang terbuat dari kedelai. Kedelai mengandung senyawa isoflavon glikosida yang bermanfaat untuk kesehatan sebagai pencegah penyakit kardiovaskuler, kanker, diabetes, hipertensi, osteoporosis, obesitas dan menopause. Isoflavon glikosida memiliki struktur yang lebih kompleks, sehingga perlu mengalami proses biokimiawi untuk menyederhanakan strukturnya agar mudah diserap oleh tubuh. Isoflavon glikosida akan disederhanakan menjadi bentuk aglikon selama proses fermentasi dan hidrolisis kimiawi. Genistein merupakan salah satu bentuk isoflavon aglikon yang banyak ditemui pada produk kacang-kacangan. Susu kedelai dan tempe merupakan produk olahan dari kedelai, perbedaannya adalah tempe telah mengalami proses fermentasi, sehingga diyakini memiliki kadar isoflavon aglikon yang tinggi. Penelitian ini bertujuan untuk menentukan kadar genistein pada ekstrak susu kedelai dan tempe dengan menggunakan spektrofotometri UV-Vis. Sampel diekstraksi dengan menggunakan etil asetat, sehingga diperoleh ekstrak kental, selanjutnya diukur kadar genistein dengan metode spektrofotometri UV-Vis, menggunakan baku standar. Hasil penelitian diperoleh kadar genistein pada ekstrak susu kedelai dan tempe yaitu masing-masing 0.613 dan 5.519% (b/b). Hal ini menunjukkan bahwa kadar isoflavon aglikon lebih tinggi pada tempe dibanding susu kedelai. Kata kunci: genistein, isoflavon aglikon, susu kedelai, tempe

The result of this research shows that diethyl ether ekstract Oxalis corniculata L. herb at concentration 100, 50, 5, 1, 0.5, 0.1, 0.05, 0.01 µg/ml and controler is diethyl ether. Presentation data of Artemia salina Leach larvae was analyzed with probit analysis to count LC 50. Ekstract is toxic if LC50 value < 1000 µg/ml. So obtained that diethyl ether ekstrak Oxalis corniculata L. herb is toxit to Artemia salina Leach larvae with LC 50 4,17± 2,59 µg/ml.

Bioethanol is ethanol fermentation process biomass results with the help of microorganisms. Raw materials for bioethanol is sugary materials, starchy and fibrous. This study tries to make bioethanol from jackfruit seeds (Artocarpus heterophyllus) which is a starchy material. during these jackfruit seeds into consumption only partly public and partly not used. The purpose of this study was to determine the optimum concentration of H 2 SO 4 on the hydrolysis process and determine the optimum fermentation time in the fermentation process. The process of making ethanol in two steps, namely acid hydrolysis and fermentation. Cassava peel hydrolyzed by using a solution of H 2 SO 4 in a variety of variable concentrations (0.1, 0.5 and 1 M) at a temperature of 100 o C for 1 hour. Then a solution of the hydrolysis fermented with various variables days (1, 2, 3, 4, 5, 6 and 7 days). The result showed that the optimum concentration of H 2 SO 4 solution for the hydrolysis reaction is 1 M at a temperature of 100 o C for 1 hour and the optimum fermentation time in the fermentation process is on day 4 where the produced ethanol at 13,19% v/v.

Glucosamine (GlcN) has great application in the food, cosmetic, pharmaceutical, and biomaterial a... more Glucosamine (GlcN) has great application in the food, cosmetic, pharmaceutical, and biomaterial areas; it is typically produced by hydrolysis in the exoskeletons of marine animals, one of the types of mud crab (Scylla serrata Forskal). Mud crab shells contain chitin and chitosan compounds which can be further derivatives for the production of GlcN HCl. The purpose of this study is to isolate and determine the level of GlcN HCl by hydrolysis of chitin and chitosan from mud crab shell. GlcN HCl was characterized by Fourier Transform Infra-Red (FT-IR) spectrophotometry, and its quantity was analyzed by UV-Vis spectrophotometry. Both methods used GlcN HCl as a standard for comparison and calculation of match factor (MF). The results of this study showed that the samples contain GlcN HCl either chitin or chitosan. FT-IR spectrum of chitin sample appears at wave number 1033 cm-1 , 1532 cm-1 , 3415 cm-1 whereas for chitosan at 1033 cm-1 , 1532 cm-1 , 3356 cm-1. Both sample spectrums showed vibration corresponding to ether (-O-), ethyl (CH2) and amine group (NH). The MF value of sample chitin and chitosan is 933 and 974, respectively; it shows that the resulting spectra are identical with the standard. The GlcN HCl level of sample chitin and chitosan was 553 and 993 mg/g, respectively. It can be concluded that the waste of mud crab shell has high potential as a natural source of GlcN HCl.

Phenolic compounds in foods can be grouped into simple phenols and folic acid. This study aimed to determine the total phenolic content of the leaf extract of nutmeg (Myristica fragrans Houtt). Leaves of nutmeg extracted using 70% ethanol, then the extract conducting qualitative analysis by reaction with FeCl3 as specific reagent. The result of this reaction is green solution, it means there are phenolic compound in the extract. The quantitative process of total phenolic was analyzed by UV-Vis spectrophotometry. A comparison used in this analysis is gallic acid; it is a standard reference in the determination of total phenolic content. Sample measured at a wavelength of 860.7 nm, which is the maximum wavelength of gallic acid. Total average content of phenolic is 183.56-mgGAE/g extract. The ethanol extract of nutmeg's leaves have high total phenolic content, which means it is potential as antioxidant.

The Recearch aimed to determine the antibacterial activity and concentration of ethanol extract of taro leaves ( Colocacia esculeta ) inhibited the growth of either Salmonella thypi and Staphylococcus aureus by agar diffusion. The result of the antibacterial activity screening in concentration of 1% showed that the ethanol extract of taro leaves by solid dilution provided activity againts Salmonella thypii and Staphylococcus aureus . Based on the test results of antibacterial activity by agar diffusion using concentration of 1% , 2% and 4 % showed that the ethanol extract of taro has the largest inhibition zone diameter againts Staphylococcus aureus of 4% was 15 mm.

The aim of the research was to determine the antibacterial activity of Colocacia esculenta L leaves fractions delivered from Pare-Pare District of South Sulawesi on Salmonella thypii and Staphyllococcus aureus by means of vacuum liquid chromatography and Bioautographic-TLC. Results of fractionations of the ethanol extract by the former method using eluent of 100 mL n-hexane, nhexane:ethyl acetate (10:1; 1:1), 100 mL ethyl acetate, ethyl acetate:methanol (10:1; 1:1) and 100 mL methanol were obtained 7 fractions. Bioautographic-TLC assay then carried out on the obtained fractions they were fraction 3,4,5,6 and 7 respectively and obtained Rf value 0.80 was possessed antibacterial activity on both tested bacteria.

The fractionation of the ethanolic extract of Colocasia esculenta L's leaves using liquid vacuum chromatography obtained 7 fractions. Active fraction was B fraction isolated from the active coumpound by TLC-preparative from 3 different isolate, IDTK01, IDTK02 dan IDTK03. IDTK01 isolate was tested its antibacterial activity using TLCbioautography with eluen n-hexane:ethyl acetate (10:1) and its active against Salmonella thypi with Rf value 0.98. Active isolate IDTK01 was analyze its active bacterial coumpound using infrared spectrophotometer and the results is hydrogen bond, hydroxyl functional group (OH), aryl/ aromatic (C=C), aliphatic (CH2), Ether aldehyde (C-O), and pyridine.

Measurement of antioxidant activity of ethanol extract of Marunggai leaves (Moringa oleifera Lam)... more Measurement of antioxidant activity of ethanol extract of Marunggai leaves (Moringa oleifera Lam) was conducted. The aim research to obtain antioxidant activity using FRAP (Ferric Reducing Antioxidant Power). Marunggai leaves (Moringa oleifera Lam.) ware extracted using maceration method by ethanol 96 %. Free radical activity absorbance was measured with a spectrophotometer at a wavelength of 720 nm and the total value of antioxidant activity was calculated based on the data absorbance. The calculations showed that Marunggai leaves (Moringa oleifera Lam.) have the antioxidant activity with the value 7,923 mg AAE/g extract.
