The analysis of regional raw materials for producing craft cheese "Anchan" and studies ... more The analysis of regional raw materials for producing craft cheese "Anchan" and studies of raw milk for its physical and chemical properties and technological indicators. Milk samples were pasteurized in the laboratory at a temperature of 80 °C for 10 seconds. Anchan was added to the milk for colour. Next, the milk before coagulation was heated in a pasteurization boiler by heating with saturated steam 36 – 38 °C. The enzyme 4 mL per 100 kg of milk and 4 mL of black cornflower extract was added to the prepared milk to improve milk coagulation and the formation of a dense cheese clot. Strains of probiotic cultures were selected for Anchan. The crisis phenomena in the economy has exacerbated the existing problems of light industry enterprises, creating favourable conditions for strengthening the negative impact of destructive economic forces, among which are the dependence of domestic producers on imported raw materials and products, the insufficient level of development of national brands, the lack of long-term strategic priorities in most domestic companies due to the unstable external conditions and a low level of systemic thinking of the management of enterprises. The purpose of the article is to identify factors driving the process of intensification of production of industrial enterprises and develop an algorithm for estimating factors influencing the dynamics of the values of technical and economic indicators of functioning of enterprises. Results. The authors of the article have suggested the algorithm for estimating factors influencing the dynamics of the values of important technical and economic indicators of functioning of enterprises, which intensifies the use of material resources and developed a methodical approach to factor analysis and selection of resource-saving technologies related to intensification of production of basic types of competitive products of industrial enterprises. Conclusion. The impact of intensification on the development of industrial enterprises due to the possibility of increasing the economic efficiency of production involves the growth of productivity ensured by improving the levels of technical support, extensive use of new means of production and attraction of qualified personnel. Identification of the impact of factors on the dynamics of the most important values of technical and economic indicators of industrial enterprises should be carried out within tight deadlines to ensure the timeliness and effectiveness of managerial decisions.

of the economic security system in the face of increasing
competition. The relevance of the study is determined by the
intensification of competition between enterprises and the threats
arising from this phenomenon. The methodological basis is the
methods used: analysis and synthesis - to identify the main trends
in the development of tools for economic security of the
enterprise; systematization - to highlight the main characteristics
of the economic security of the enterprise in the intensification of
competition; generalization - to form the general conclusions of
the study. The purpose of scientific research is to substantiate the
feasibility of using the tools of the economic security system to
increase its efficiency in the face of intensifying competition.
The main components of the economic security system of the
enterprise, which have the greatest impact on the formation of an
effective level of economic security. The defining characteristics
of the system of economic security of the enterprise are
investigated. Special characteristics of the economic security
system of the enterprise are considered. The offered directions of
tools of maintenance of system of economic safety of the
enterprise in competitive conditions: objective, subjective
external, subjective internal. For each area, specific tools for

Organic products markets will be affected by the food crisis, changes in the structure of consume... more Organic products markets will be affected by the food crisis, changes in the structure of consumer
demand, rising food prices, and the migration of Ukrainians due to Russian aggression. This article aims to
identify possible changes in the organic products markets due to the events of 2022 in Eastern Europe.
Methodology. The main research methods included analysis and synthesis, comparison, and statistical analysis
of organic markets of EE countries (Bulgaria, Czech Republic, Hungary, Poland, Romania, and Ukraine). The
analysis was carried out according to the following criteria: key market indicators (land area, producers,
exporters, importers, retail sales), development history; institutions; market development indicators, including
export and import; standards and legal framework; state support policy. The databases used for the analysis are
Eurostat (2022), Research Institute of Organic Agriculture by FiBL (2022), and 2008-2020 data. The results
indicate possible changes in the organic products market due to the events of 2022 in Eastern Europe: 1)
possible market growth for organic products in the countries with the highest refugee arrivals (Poland,
Romania, Bulgaria, Moldova) and for Ukraine to overcome the food crisis; 2) a significant increase in prices of
organic products due to increased demand for food and food crisis, higher energy costs; 3) market growth in
Poland and the Czech Republic as the most developed among the EE countries due to increased demand for
products in the importing countries (Germany, Italy, France and Spain); 4) possible reduction of organic food
production due to reduced demand due to increased consumption of essential goods; 5) through the active
provision of financial assistance to Ukraine to meet nutritional and humanitarian needs, EE countries reduce the
financial capacity to support organic producers and their subsidies level.
