Os alimentos de rua estao cada vez mais atrelados a escolha do consumidor sendo que apresentam as... more Os alimentos de rua estao cada vez mais atrelados a escolha do consumidor sendo que apresentam aspectos positivos devido a sua importância socioeconomica, cultural e nutricional alem de serem mais baratos e acessiveis a populacao, e tambem aspectos negativos no que diz respeito as questoes higienico-sanitarias. Quando vendidos nas ruas podem representar um problema de saude publica, pois muitas vezes sao preparados e vendidos sem a adequada higienizacao, podendo colocar em risco a saude do consumidor. A falta de condicoes adequadas e os descuidos, ou muitas vezes a ausencia de informacoes das tecnicas corretas de higiene, bem como a temperatura de armazenamento e o tempo de exposicao desde a preparacao ate a comercializacao desses produtos e de seus complementos, soa fatores importantes e fundamentais para a multiplicacao de bacterias, fazendo com que esse alimento possa veicular uma variedade de micro-organismos, deteriorantes e/ ou patogenicos, tornando-se uma preocupacao para os ...
O objetivo deste trabalho foi estudar a estabilidade microbiologica e nutricional de doce de leit... more O objetivo deste trabalho foi estudar a estabilidade microbiologica e nutricional de doce de leite em pasta comercializado em Acailândia/MA durante o armazenamento do produto em condicoes ambientais. No tempo inicial e a cada 30 dias, em um total de 150 dias, o doce de leite em pasta foi analisado quanto aos parâmetros de proteina, lipidios, umidade, cinzas as e contagens de Staphylococcus coagulase positiva e bolores e leveduras. Os resultados evidenciaram que 100% das amostras estavam fora do padrao estabelecido pela legislacao vigente no que diz respeito ao parâmetro umidade, apresentando valores acima do maximo de 30%. No que se refere os parâmetros microbiologicos analisados, tanto para a contagem de Staphylococcus coagulase positiva quanto para bolores e leveduras, todas as amostras atenderam aos padroes e nao houve alteracao no decorrer do tempo de armazenamento, sendo assim, este apresentou condicoes higienicos sanitarias satisfatorias durante o processo de producao do doce ...

Merino ewes were subjected to a source of radiant heat during early pregnancy in two experiments ... more Merino ewes were subjected to a source of radiant heat during early pregnancy in two experiments in which the incidence of embryonic death was examined as reflected by the proportion of ewes that failed to return to service but did not lamb. Ewes were artificially inseminated (day 0) and exposed to hot-room conditions during days 1–3, 4–6 or 7–9 or not at all (control) (experiment I), and during days 1–3, 1–6 or 1–9 or not at all (control) (experiment 2). Conditions in the hot room and control room were respectively 40–43°C and 1.36–3.06 kPa vapour pressure, and 22–26°C and 1.12–1.96 kPa. Ewes exposed to hot-room conditions had significantly higher rectal temperatures and respiration rates during treatment than did control ewes (40.2° v. 39.3° and 186 v. 61 respirations/min, P < 0.001). The number of ewes which conceived and eventually lambed was reduced by exposure to high environmental temperatures shortly after insemination. The most critical period was during the first 3 days...

In face of that reality, this study aimed to obtain powder extract from press cake of the babassu nut kernel, and to verify the influence of varying concentrations of Maltogill®10 and drying temperature on process yield through a factorial design, as well as to characterize the final product. Babassu nut used for pressing and acquisition of residual press cake and extract. Spray dryer was used to obtain the powder extract, which adopted a rotating central composite design (RCCD with 11 trials).
