Objetivou-se caracterizar e comparar polpas de açaí-roxo (grosso-AGR, médio-AMR, fino-AFR) e açaí... more Objetivou-se caracterizar e comparar polpas de açaí-roxo (grosso-AGR, médio-AMR, fino-AFR) e açaí-branco (grosso-AGB) quanto sua composição centesimal, perfil de compostos fenólicos (CF) e perfil de ácidos graxos (AG), podendo assim avaliar a contribuição de AG essenciais, presente nestas polpas, para alcance da ingestão diária aceitável. A composição centesimal das amostras foi determinada por métodos convencionais e o perfil de CF por espectrometria de massas. Já os AG foi por cromatografia gasosa. Quanto à composição, os teores de umidade variaram de 82,74-92,00 g/100g. Já os teores de cinzas todas as amostras diferiram, variando de 0,42-0,94 g/100g. Em relação aos lipídios, a amostra AGR (10,67 g/100g) apresentou maior teor e a AFR (2,94 g/100g), menor teor. Os teores de proteína e carboidratos variaram, respectivamente, entre 1,21-1,62 g/100g e 2,88-5,24 g/100g. Brazilian Cerrado is the second largest biome in South America and contains many unstudied valuab... more Brazilian Cerrado is the second largest biome in South America and contains many unstudied valuable plant species rich in bioactive substances. In this study we investigated the phenolic content and proliferative effects on cultured fibroblasts of 32 extracts of different polarities prepared from 11 plants found in Cerrado regions. Eight extracts from six species increased cell proliferation and significantly induced ATP production by the cells. Four of these extracts were obtained from plants used as food, specifically from its fruits or seeds. A high phenolic content for these eight extracts, which directly correlated with the induction of cell proliferation, was corroborated by mass spectrometry analysis. We suggest that the bioactive substance content of these species shows an interesting potential use in cosmetic and food industry, which can contribute to the conservation and sustainable development of this region.

É causada por um erro inato que ocorre em indivíduos onde há uma alteração no gene 12q22-q24.2 do cromossomo PAH, que codifica a fenilalanina hidroxilase. Também conhecida como PKU, a patologia consiste na ausência dessa enzima ou na falta de sua plena funcionalidade, que pode ser detectada nos primeiros dias de vida. O tratamento da PKU é essencialmente dietético e deve ser iniciado assim que for diagnosticado. A restrição alimentar de indivíduos fenilcetonúricos é extensa, baseada em uma dieta limitada que oferece baixo teor ou isento de fenilalanina. A diminuição dos níveis de fenilalanina no sangue visa proteger o paciente de danos neurológicos causados por níveis elevados desse aminoácido. Phenylketonuria (PKU) is an autosomal recessive disease caused by variants in the gene that encod... more Phenylketonuria (PKU) is an autosomal recessive disease caused by variants in the gene that encodes phenylalanine hydroxylase (PAH), limiting the metabolism of phenylalanine (Phe). When PAH activity is absent or hindered, Phe is not converted to tyrosine, leading to an accumulation of Phe in the blood, which can cause serious neurological complications. Once PKU is diagnosed, treatment should be started immediately, and the basis for this is dietary restriction of foods with high levels of Phe, associated with the use of protein substitutes and intake of foods with low protein content. This restriction accompanies patients throughout their lives, making their diets unpalatable and monotonous, which represents a major challenge for health professionals and patients, considering that these factors favor food transgression. In this context, the objective of this work was to carry out an integrative review based on evidence regarding the intake of fruits and vegetables, by phenylketonurics, taking into account the greater or lesser tolerance to Phe. Since, some researchers have dedicated themselves to evaluating the biochemical effect of unrestricted consumption of fruits and vegetables at PKU, unifying the information in this regard. It was observed that the intake of vegetable protein by patients with PKU has shown to be promising since the studies indicate that the intake of these proteins does not present adverse effects to the metabolic control of the Phe.

O objetivo do trabalho foi analisar o teor de mercúrio em peixes comercializados em Minas Gerais,... more O objetivo do trabalho foi analisar o teor de mercúrio em peixes comercializados em Minas Gerais, coletados pelo Programa de Monitoramento de Alimentos da Vigilância Sanitária de Minas Gerais - PROGVISA, e verificar com base nesses valores o risco do consumo de peixes. Foi analisado o teor de mercúrio total em 80 amostras de peixes coletadas de forma aleatória no mercado de Minas Gerais. As análises foram feitas por espectrofotometria de absorção atômica após amalgamação em ouro. A partir desses valores foi estimada a ingestão de metilmercúrio em Minas Gerais e esta estimativa foi comparada com parâmetros toxicológicos de referência. Dentre as amostras, 38,8% eram de peixes não predadores e 61,2% eram de peixes predadores. Os resultados indicaram que os teores de mercúrio encontrados na maioria das amostras de peixes de Minas Gerais foram inferiores aos limites máximos permitidos pela legislação brasileira. Ao consumo do café são atribuídos muitos benefícios à saúde, a maioria deles ligados às suas propriedades antioxidantes. Os componentes do café ligados a essa atividade são, principalmente, os polifenóis, a cafeína e as melanoidinas. Vários fatores como o tipo de cultivo, a espécie utilizada, o grau de torração e o modo de preparo da bebida exercem influência sobre a composição química e atividade biológica do café. Para o preparo, geralmente utiliza-se infusão seguida de filtração, decocção sem filtração ou pressão, utilizando-se máquinas de café expresso. The antioxidant potential of a series of thiazolylhydrazone derivatives was investigated using th... more The antioxidant potential of a series of thiazolylhydrazone derivatives was investigated using three different methods namely DPPH, ABTS and FRAP assays. In general, the tested compounds showed higher or comparable activity to that of curcumin, used as positive control. Chemometric analyses demonstrated that the presence of hydrazone moiety is required for the activity of this class of compounds. From these results, compound 4 was identified as the most promising molecule and was then selected for further studies. The antiproliferative effect of compound 4 was evaluated, being active in three (T47D, MDA-MB-231 and SKMEL) of the six cancer cell lines tested, with IC values ranging from 15.9 to 31.3 μM. Compound 4 exhibited no detectable cytotoxic effect on peripheral blood mononuclear cells (PBMC) when tested at a concentration of 100 μM, demonstrating good selectivity. The levels of starch were determined in chicken based meat products commercialized in Belo Horizo... more The levels of starch were determined in chicken based meat products commercialized in Belo Horizonte, MG, Brazil, from December 1996 to March 1997. Samples were analyzed for moisture and starch contents. Starch was acid hydrolyzed and the resulting glucose was determined at 620 nm after reaction with anthrone. The method was observed to be accurate (92.7% recovery), precise (CV = 3.0%), sensitive (quantification limit = 1.25 g/100 g) and simple in the determination of starch in meat products. Among products analyzed, starch was detected in 100% of meat balls and nuggets samples, in 60% of the sausage, 50% of the bologna and 30% of the frankfurter. Starch was not detected in hamburger samples analyzed. Higher mean starch levels were found in nuggets (14.85 g/100 g) followed by meat balls (4.45 g/100 g), sausage (1.73 g/100 g), bologna (1.14 g/100 g) and frankfurter (0.57 g/100 g). As resoluções RDC 259 de 20/09/2002 (rotulagem dos alimentos embalados) e RDC 360 de 23/12/2003 (rotulagem nutricional), da ANVISA/MS, visam garantir informações básicas ao consumidor. Óleos vegetais são produtos muito consumidos, extraídos da soja, canola, milho, girassol, entre outras fontes e seu consumo tem crescido devido principalmente à substituição da gordura animal e atualmente justifica-se também pelas propriedades funcionais dos ácidos graxos mono e poliinsaturados presentes. The quality of virgin coconut oil (VCO), together with its health functionalities, is directly re... more The quality of virgin coconut oil (VCO), together with its health functionalities, is directly related to its freshness and to the levels of free fatty acids (FFA). Thus, the goal of this work was to develop a quantitative model based on partial least squares regression (PLSR) to predict FFA levels (%) in VCO. A total of 72 Brazilian commercial samples classified in accordance to their shelf life was analyzed. FFA levels ranged from 0.3 to 2.3%. FTIR (Fourier transform infrared spectroscopy) spectra were recorded within a range of 3100 to 680 cm−1 and submitted to mathematical preprocessing. Quantitative models were developed by partial least squares regression (PLSR). Excellent predictive results were obtained, indicating that the FFA levels in VCO could be accurately quantified by FTIR. Given the importance of reference materials (RM) in the structuring and maintenance of quality ma... more Given the importance of reference materials (RM) in the structuring and maintenance of quality management systems for food analysis laboratories, RM were produced for the measurement of moisture, ash, total fat, and titratable acidity in whole milk powder. Two types of packaging and three storage temperatures were evaluated. The RM were considered homogeneous. The materials that were packaged in the pouches and those packaged in the amber glass bottles with screw caps (stored at room temperature) were not stable for moisture. Nevertheless, considering the four measurands, the amber glass bottles under refrigeration and freezing temperatures were the best packaging and storage conditions, respectively. Homogeneity and stability studies were carried out according to the ISO Guide 35, IUPAC harmonized protocol, and ISO 13528, considering the potential applicability of the produced materials as certified reference materials or even as RM for use in proficiency testing schemes. For homogeneity, despite the different criteria, there was agreement between the results. Considering the stability, the agreement depended on the evaluation of the regression assumptions, which is not required by the ISO Guide 35. The contribution of uncertainty associated with homogeneity was greater than that related to stability. The results indicated that the produced materials, i.e., the candidate certified RMs, were suitable for assessing trueness and could be submitted to further inter-laboratory characterization.

In general, the tested compounds showed higher or comparable activity to that of curcumin, used as positive control. Chemometric analyses demonstrated that the presence of hydrazone moiety is required for the activity of this class of compounds. From these results, compound 4 was identified as the most promising molecule and was then selected for further studies. The antiproliferative effect of compound 4 was evaluated, being active in three (T47D, MDA-MB-231 and SKMEL) of the six cancer cell lines tested, with IC values ranging from 15.9 to 31.3 μM. Compound 4 exhibited no detectable cytotoxic effect on peripheral blood mononuclear cells (PBMC) when tested at a concentration of 100 μM, demonstrating good selectivity. The levels of starch were determined in chicken based meat products commercialized in Belo Horizo... more The levels of starch were determined in chicken based meat products commercialized in Belo Horizonte, MG, Brazil, from December 1996 to March 1997. Samples were analyzed for moisture and starch contents. Starch was acid hydrolyzed and the resulting glucose was determined at 620 nm after reaction with anthrone. The method was observed to be accurate (92.7% recovery), precise (CV = 3.0%), sensitive (quantification limit = 1.25 g/100 g) and simple in the determination of starch in meat products. Among products analyzed, starch was detected in 100% of meat balls and nuggets samples, in 60% of the sausage, 50% of the bologna and 30% of the frankfurter. Starch was not detected in hamburger samples analyzed. Higher mean starch levels were found in nuggets (14.85 g/100 g) followed by meat balls (4.45 g/100 g), sausage (1.73 g/100 g), bologna (1.14 g/100 g) and frankfurter (0.57 g/100 g). As resoluções RDC 259 de 20/09/2002 (rotulagem dos alimentos embalados) e RDC 360 de 23/12/2003 (rotulagem nutricional), da ANVISA/MS, visam garantir informações básicas ao consumidor. Thus, the goal of this work was to develop a quantitative model based on partial least squares regression (PLSR) to predict FFA levels (%) in VCO. A total of 72 Brazilian commercial samples classified in accordance to their shelf life was analyzed. FFA levels ranged from 0.3 to 2.3%. FTIR (Fourier transform infrared spectroscopy) spectra were recorded within a range of 3100 to 680 cm−1 and submitted to mathematical preprocessing. Quantitative models were developed by partial least squares regression (PLSR). Excellent predictive results were obtained, indicating that the FFA levels in VCO could be accurately quantified by FTIR. Given the importance of reference materials (RM) in the structuring and maintenance of quality ma... more Given the importance of reference materials (RM) in the structuring and maintenance of quality management systems for food analysis laboratories, RM were produced for the measurement of moisture, ash, total fat, and titratable acidity in whole milk powder. Two types of packaging and three storage temperatures were evaluated. The RM were considered homogeneous. The materials that were packaged in the pouches and those packaged in the amber glass bottles with screw caps (stored at room temperature) were not stable for moisture. Nevertheless, considering the four measurands, the amber glass bottles under refrigeration and freezing temperatures were the best packaging and storage conditions, respectively. Homogeneity and stability studies were carried out according to the ISO Guide 35, IUPAC harmonized protocol, and ISO 13528, considering the potential applicability of the produced materials as certified reference materials or even as RM for use in proficiency testing schemes. For homogeneity, despite the different criteria, there was agreement between the results. Considering the stability, the agreement depended on the evaluation of the regression assumptions, which is not required by the ISO Guide 35. The contribution of uncertainty associated with homogeneity was greater than that related to stability. The results indicated that the produced materials, i.e., the candidate certified RMs, were suitable for assessing trueness and could be submitted to further inter-laboratory characterization.
