The recommendations of the WHO/FAO Codex Alimentarius Commission in 1993 (WHO, 1993) and the requ... more The recommendations of the WHO/FAO Codex Alimentarius Commission in 1993 (WHO, 1993) and the requirements of the Food Hygiene Directive (93/43 ECC, 1993) in Europe created a widespread demand for HACCP training which could not be satisfied immediately. This was largely because there were not enough HACCP practitioners with adequate trainer skills and knowledge and insufficient trainers with practical experience of HACCP. In general terms, HACCP experts tended to give presentations rather than teach, but qualified trainers and educators were not necessarily. able to do a better job, because, whilst they could deliver the theory of HACCP, they lacked experience of its application.

The 4th International Meeting of the Noordwijk Food Safety Forum in March 2001 concluded with a w... more The 4th International Meeting of the Noordwijk Food Safety Forum in March 2001 concluded with a workshop on 17th March 2001. The workshopÕs aim was to consider ways of building upon the WHOÕs 1995 Report on the training aspects of HACCP. It reviewed the report, the principal features of training design and examined the practical aspects of standardising HACCP training globally. It found that such a project would be feasible. However, it acknowledged that the support and backing of the WHO, FAO and national governments were an essential prerequisite for success.
