L'objectif de ce travail concerne la determination de certains parametres physiques ou chimiq... more L'objectif de ce travail concerne la determination de certains parametres physiques ou chimiques permettant de caracteriser les eaux-de-vie et en particulier certains defauts. Une recherche de correlation entre certaines substances chimiques et les descripteurs sensoriels caracterisant les defauts des eaux-de-vie d'Armagnac a ete effectuee. Les ions chlorure, sulfate, succinate et oxalate ont ete plus particulierement etudies. Differentes methodes statistiques multidimensionnelles (ACP, AFM, AFD et regression multilineaire) ont permis de faire le lien entre les resultats de dosages chimiques et des impressions sensorielles. La determination de la couleur des eaux-de-vie a ete realisee par deux methodes colorimetriques, le systeme (Y x y) a primaires virtuelles (CIE, 1931) et le systeme de coordonnees cartesiennes L*a*b* (CIE, 1976). L'analyse quantitative des composes carbonyles - aldehydes satures, insatures et methylcetones - a ete effectuee par chromatographie en phase gazeuse couplee a la spectrometrie de masse, methode par fragmentometrie. Une etude olfactive de ces composes avec la determination des seuils de perception a ete realisee sur les eaux-de-vie d'Armagnac. L'evolution des composes carbonyles, en particulier le glyoxal et le methylglyoxal, a ete observee dans trois types d'eaux-de-vie de vin (cognac, armagnac et brandy). La differenciation de ces eaux-de-vie entre elles peut etre realisee a l'aide de ces substances.

Reduced glutathione (GSH) is an efficient antioxidant on limiting browning, losing varietal aroma... more Reduced glutathione (GSH) is an efficient antioxidant on limiting browning, losing varietal aromas and off-flavor formation. Therefore, this study aims to evaluate the effect of GSH addition (10, 20 and 30mgL(-1)) after the disgorging of the sparkling wine during storage. The sparkling wines were analyzed at 1, 6, 12 and 18months of storage according to the color index, concentration of the free SO2, phenolic compounds, catechin, epicatechin, caffeic acid, coumaric acid, acetaldehyde, total and reduced glutathione. The results show that GSH concentration decreased to the level of the control sparkling wine during the first 6months, and the total glutathione gradually declined up to 12months. The GSH reduces browning and acetaldehyde formation for up to 12months. However, the presence of glutathione had low or no influence on the concentration of free SO2, total phenolics, catechin, epicatechin, caffeic and coumaric acids.

Phenolics from grapes and wines can play a role against oxidation and development of atherosclero... more Phenolics from grapes and wines can play a role against oxidation and development of atherosclerosis. Stilbenes have been shown to protect lipoproteins from oxidative damage and to have cancer chemopreventive activity. We describe a method for the direct determination of stilbenes in several red wines using high-performance liquid chromatography with UV detection. In a survey of 12 commercial wines from the south of Brazil (Rio Grande del Sul), levels of delta-viniferin are reported for the first time in different varieties of red wines. Brazilian red wine contains trans-astringin, trans-piceid, trans-resveratrol, cis-resveratrol (in high quantity: 5 times more than the trans form), epsilon-viniferin, and a compound isolated for the first time in wine, trans-delta-viniferin. Isolation and identification of delta-viniferin was achieved by NMR after extraction and fractionation of red wine phenolics. delta-Viniferin contributes, as well as cis-resveratrol and trans-piceid, to a significant proportion of stilbenes in wine dietary intake, particularly with Merlot varieties containing an average level of 10 mg/L for delta-viniferin, 15 mg/L for cis-resveratrol, and 13 mg/L for trans-piceid. The total stilbene intake from wine origin was estimated for the Brazilian population as 5.3 mg/day per person (on the basis of a regular wine consumption of 160 mL/day). delta-Viniferin can contribute to around 20% of total stilbenes in wine (average of 6.4 mg/L in red Brazilian wines). It would be important in the future to investigate the origins of the differences in wine stilbene levels in relation to the vine varieties, and the bioavailability of the newly extracted stilbene delta-viniferin in plasma after consumption of different types of wines.

GC–MS analyses revealed sesquiterpene‐rich oils characterized by high concentrations of germacrene D, β‐caryophyllene and δ‐cadinene. Qualitative and quantitative differences were observed among the accessions, enabling them to be assigned to three clusters. Copyright © 2007 John Wiley & Sons, Ltd.

Tropical wines have been produced in Thailand, India, Venezuela and mainly in Northeastem Brazil.... more Tropical wines have been produced in Thailand, India, Venezuela and mainly in Northeastem Brazil. In Brazil, this activity started twenty-five years ago and has been studied only in the last years. In this Brazilian Area, between 8_9 0 parallel of the South Hemisphere, it is possible to have two or three harvests per year due to the high temperatures (annual average temperature of 26 "C), high luminosity and use of irrigation. Analytical composition of grapes and wines can vary strongly according to harvest date into a year, (wines elaborated in the first or second semester). The aim of this work was to determine metabolic fingerprints of white and red wines from two vintages of 2009, according to their aromatic profile, using gas chromatographyand multivariate statistical analyses. Wines were elaborated by traditional methods, in stainless steel tanks of 200 L, by controlling fermentations temperature for red and white wines and using antioxidants. After stabilization and bottling, wines were analyzed in triplicate using gas chromatography with flame ionization detecto r (OC-FID). PCA multivariate statistical analysis was applied on aromatic compounds data to discriminate between wine type and month of winemaking, and different clustering were formed. White and red tropical wines presented different aromatic compound concentrations; higher alcohols were more efficient to separate wine samples than volatile esters.

This region presents different characteristics, with a tropical semiarid climate, in a flat landscape. Presenting high annual average temperature, solar radiation and water in abundance for irrigation, it?s possible the scaling the grape harvests for winemaking throughout the year, allowing to obtain until two harvests per year. Several factors may affect the aromatic compounds in wines, such as viticulture practices, climatic conditions, cultivars and winemaking process. An important step towards the successful integration of information and communication technology ... more An important step towards the successful integration of information and communication technology (ICT) in schools is to facilitate their capacity to develop a school-based ICT policy resulting in an ICT policy plan. Such a plan can be defined as a school document containing strategic and operational elements concerning the integration of ICT in education. To write such a plan in an efficient way is challenging for schools. Therefore, an online tool [Planning for ICT in Schools (pICTos)] has been developed to guide schools in this process. A multiple case study research project was conducted with three Flemish primary schools to explore the process of developing a school-based ICT policy plan and the supportive role of pICTos within this process. Data from multiple sources (i.e. interviews with school leaders and ICT coordinators, school policy documents analysis and a teacher questionnaire) were collected and analysed. The results indicate that schools shape their ICT policy based on specific school data collected and presented by the pICTos environment. School teams learned about the actual and future place of ICT in teaching and learning. Consequently, different policy decisions were made according to each school's vision on 'good' education and ICT integration.

However, identifying adulteration in juice is a great challenge and requires a reliable analytical process. The isotope ratio (18O/16O) is an important tool to determine the addition of exogenous water in beverages, however, there is no official method for juice in Brazil. This study aimed to develop and validate a method for detecting exogenous water in grape juice through isotopic analysis of 18O/16O. The development and validation of the analytical method were performed using Isotope Ratio Mass Spectrometry (IRMS). The effect of temperature and evaporation of δ18O in experimental juices was evaluated, and reference values were found for juices based on the δ 18O of musts.
