These studies were conduct'*d from 1999 to 2002, and are still ongoing. Among the more relevant fungi det~ted in grapes are black aspergilli, namely A. niger aggregate and A. carbo;arius, found to be responsible for the production of ochratoxin A in grapes. The results of these studies are discussed in an ecological point of view, and i~ terms of risk assessment for mycotoxins presence in the final product, wine.

Oz... more Cheese ripening rooms have an unusual environment, an environment that encourages mold growth. Ozone has been applied in various ways in the food industry. One useful advantage of ozone is that it inactivates molds. In this study, a cheese ripening room was ozonated, and the effectiveness of this treatment was evaluated both in air and on surfaces through sampling on a weekly basis over a 3-month period. The results obtained indicate that ozone treatment reduced the viable airborne mold load but did not affect viable mold on surfaces. Only by wiping the surfaces with a commercial sanitizer was it possible to decrease the viable mold load on surfaces. To improve overall hygiene in the ripening room, a combination of cleaning regimes is recommended. The mold genera occurring most frequently in the air of the cheese ripening room were Penicillium, Cladosporium, and Aspergillus, which accounted for 89.9% of the mold isolates. Penicillium and Aspergillus were identified to the species le...

He synthesizes and extends many of the concepts developed in his previous writings (the "moral economy of peasants," "non-state spaces," "weapons of the weak," "state simplifications," and so forth) to fashion a compelling history of diverse peoples who have refused history, at least as lowland centers of power have written it. Scott takes as his focus the entire Southeast Asian massif, that is, upland areas that range from two hundred to over four thousand meters in altitude and stretch across parts of Vietnam, Cambodia, Laos, Thailand, and Burma, as well as Yunnan, Guizhou, Guangxi, and Sichuan provinces in China. Comparative by design, Scott draws attention to how "zomia," the term he adopts to describe this vast trans-regional space that is home to somewhere between eighty and one hundred million people, historically served as a "zone of refuge" for populations seeking to evade state demands for slaves, taxes, corvée labor, and military service. These efforts to evade the state, he argues, promoted a range of adaptive strategies that contributed to their "self-barbarization," as evidenced by their common preference for highly mobile and widely dispersed settlement patterns, oral traditions, and the cultivation of "escape" crops in remote areas that were difficult for states to map, administer, and appropriate. Scott explains that when these patterns are taken into account, the political, economic, and cultural similarities found at different altitudes and ecological niches across zomia become much clearer. So too do the dynamics that shape flexible remaking of "ethnic" identities, which routinely oscillate between open and closed rank systems depending on the availability of material and symbolic resources as well as on the terms of exchange relationships between different selfgoverning and state-governed populations. This era of deliberate and reactive statelessness, Scott notes, is rapidly drawing to a close as the states in question now employ strategies of engulfment to "civilize" their remaining non-state zones. This has largely been accomplished through the transmigration of lowland populations into upland areas to help appropriate the natural resources found in them, to secure national borders, and to quell long-running insurgencies. Despite this ongoing process

We explored the potential of mushrooming to enable such connections in contexts where these connections have been historically broken, alienating local people from forests. Taking the case of the recent devolution of a community forest (baldios) in central Portugal to the local population, we present a five-year pilot project to rework mycology from a mushroom-centered approach to a mushroom-in-baldios approach. Mushrooms were used as an entry-point to connect the forest ecology with the challenges of governance and community building. The devised activities provided an opportunity for people inside and outside the local community to adventure into the woods and find out more about their socio-ecological history, develop communal and convivial relationships and engage in the responsible gathering of wild mushrooms. However, the hosting of mushroomers to know, value and engage with the community...

These forests are governed by collective property arrangements (baldios) based on millenarian traditional usufruct rights of a local community of commoners (compartes). Participation is open to all the new residents regardless of their gender, activity or status. However, during the 20th century the connection between the commoners and the commons was severely disrupted by the Forest Services by compulsory afforesting the lands with tree species unknown to the local populations and provoking the decline of collective agro-pastoral practices, which was most severe close to urban areas. We describe our experience with a community of compartes that recently gained back control of its common lands and initiated a project to revitalize a degraded forest in the mountains after four decades of co-management with the State. We also detail the specificities and challenges that in the context of community forestry are crucial for the residents to authentically construct and take part in a commons land narrative, and the educational activities we have jointly developed to activate meaningful engagement in collective practices, intergenerational responsibility and active citizenship.
