Internationalization is a widely recognised process by which people and ideas transfer from one p... more Internationalization is a widely recognised process by which people and ideas transfer from one part of the world to another. This article shows how an idea and a group of people have moved and become part of another society. Turkish migrants to Berlin have become established in the restaurant industry by bringing with them their own culinary specialities, in this case the kebab. The case study points to the much wider issue of the significance of ethnic niches within the labour markets of European cities.
