O objetivo do estudo foi realizar uma análise crítica das informações contidas no rótulo de alimentos disponíveis para comercialização e comparar com os critérios estabelecidos pelas legislações brasileiras. O estudo observacional foi realizado com 198 rótulos de alimentos industrializados disponíveis para comercialização em duas redes de supermercados, selecionadas por conveniência, do Município de Curitiba, Paraná. Os rótulos dos produtos foram fotografados durante as quatro visitas aos supermercados e foram avaliados por meio de um roteiro de avaliação composto por 64 itens distribuídos em 23 categorias referentes aos critérios das legislações de rotulagem de alimentos. O objetivo do estudo foi analisar os indicadores de qualidade em terapia nutricional enteral em p... more O objetivo do estudo foi analisar os indicadores de qualidade em terapia nutricional enteral em pacientes admitidos em uma unidade de terapia intensiva (UTI) de um hospital de referência em trauma. Para tanto, um estudo observacional retrospectivo foi realizado com pacientes com idade ≥18 anos, que receberam terapia nutricional enteral exclusiva por pelo menos 72 horas na UTI, no período de maio a setembro de 2017. Foram coletados dados demográficos, diagnóstico médico, tempo de início da infusão da nutrição enteral, informações sobre a nutrição prescrita versus infundida, número de pacientes que atingiram 50%, 70% e 100% da energia e proteína em três, cinco e sete dias respectivamente, além de sintomas gastrointestinais presentes durante a terapia nutricional enteral. Objective: To evaluate the anthropometric and biochemical characteristics of children and adolesc... more Objective: To evaluate the anthropometric and biochemical characteristics of children and adolescents with phenylketonuria. Methods: Retrospective study with anthropometric and biochemical data collection from patients with phenylketonuria in the age group 2-19.9 years. Nutritional status was classified according to the World Health Organization. Biochemical tests were compared to current recommendations. Results: A total of 84 patients (71.8%) were eligible, with a median age of 10.7 years (2.4-19.9 years). There was predominance of eutrophy (n = 58, 69%) with presence of overweight and obesity in 24 (28.5%) patients. The biochemical tests revealed hyperphosphatemia in 46 (55%), hypertriglyceridemia in 27 (50%), vitamin B12 elevated in 34 (41.2%), selenium deficiency in 10 (13.7%), insufficient zinc in 7 (8.9%), low globulin in 21 (26.9%), low HDL in 35 (59.3%) and elevated phenylalanine level in 28 (34.5%) patients in the sample. Overweight and obesity were correlated with low HDL (p= 0.04) and lowest adequate frequency of LDL (p = 0.09). Higher phosphorus values were associated with lower body weight (r =-0.72) and age (r =-0.75), as well as vitamin B12 in the same parameters (r=-0.67 and r=-0, 68). A positive correlation of phenylalanine with body weight and age (r = 0.62 and r = 0.66) was observed. Conclusion: Most patients presented eutrophy according to anthropometric parameters and appropriate biochemical tests, except HDL, and moderate metabolic control of the disease. However, attention should be paid to the presence of overweight and need for biochemical monitoring of triglycerides, selenium, zinc, HDL, and phenylalanine.

A total of 119 individuals in Curitiba, Brazil, participated in the study. For data collection, was elaborated a questionnaire about the socio-demographic, professional profile and food safety knowledge, which was filled by the participants during events. The majority of the individuals were owners (75.63%), of the male gender (69.75%), aged between 30 and 44 years-old (56.30%) and with complete/incomplete higher education (55.46%). Knowing the quality of life and life satisfaction among the diabetic population can help in the d... more Knowing the quality of life and life satisfaction among the diabetic population can help in the development of food and nutritional education strategies, public policies related to food and nutritional security, as well as result additional benefits to this population. Thus, the objective of the study was to assess the relationship between quality and satisfaction of life and the metabolic-nutritional profile of individuals with type 2 diabetes mellitus. A cross-sectional study was carried out with patients with type 2 diabetes mellitus from an outpatient endocrinology clinic of the University Hospital in Curitiba, Paraná. Quality of life was measured by the Problem Area in Diabetes (PAID) scale and the satisfaction of life by the Satisfaction with Life (SWL) instrument. Nutritional status was assessed by Body Mass Index and waist circumference. Glycemic control was assessed by a glycosylated hemoglobin test. To verify associations between the variables, we applied the chi-square and the t-test, when relevant. A total of 69 subjects with type 2 diabetes mellitus were assessed. Good quality and satisfaction of life were found in the study; however, nutritional status and glycemic control were found to be inadequate. There was no relationship of emotional distress associated with diabetes, or life satisfaction with the metabolic and nutritional profile. Early interventions are suggested concerning the improvement of the nutritional status and glycemic control of this population with the interest of avoiding micro and macro vascular complications, which may compromise their quality and satisfaction of life.

This study aimed to describe the nutritional status (NS) of institutionalized patients with cereb... more This study aimed to describe the nutritional status (NS) of institutionalized patients with cerebral palsy with enteral nutrition therapy (ENT) and apply quality indicators concerning administration of enteral nutrition (EN). Retrospective observational study. To assess NS, data on body weight, height, arm circumference (AC), triceps skinfold thickness (TSF), muscle circumference spleen (MCS) and body mass index (BMI) were collected from medical records of individuals. Six quality indicators were monitored: (1) frequency of BMI measurement in patients with nutritional therapy (NT); (2) frequency measurement or estimation of energy expenditure and protein needs of patients in NT; (3) frequency of days of adequate fluid administration in patients in NT; (4) frequency of days of proper management of energy in patients in NT; (5) frequency of days of proper administration of protein in patients with NT; and (6) frequency of complications related to the administration of EN. Eight individuals were assessed. The mean BMI was 18.65 ± 3.2 kg / m²; %AC was 85.63% ± 6.05%; MCS was 85.13% ± 15.27%; and TSF was 116.5% ± 76.6%. Regarding indicators 4 and 6, it was perceived 25% of adequacy, and 5 showed 75% of adequacy. The other indicators showed 100% compliance. The patients presented depletion of muscle tissue and fat reserve, despite low weight. Indicators 4, 5 and 6 presented low percentage of adequacy, reflecting the importance of their monitoring.

Background: Recent studies have shown that commercial enteral formulas with low FODMAP (FO, ferme... more Background: Recent studies have shown that commercial enteral formulas with low FODMAP (FO, fermentable oligosaccharides; D, disaccharides; M, monosaccharides; AP, and polyols) content decrease diarrhea of individuals receiving enteral nutrition therapy (ENT). There is no information, however, regarding the content of FODMAP in homemade enteral formula. The objective of this study was to assess energy and macronutrient content, and to quantify the amount of FODMAP content in homemade enteral formula, commonly prescribed for home use after hospital discharge. Methods: Recipes of homemade enteral formula were requested from all hospitals and healthcare centers in a Brazilian city, totaling 24 recipes. The diets were quantified in relation to their energy content, macronutrients, and FODMAP content. Results: Of the 19 hospitals, 68.4% prescribe only commercial enteral formulas at the time of hospital discharge, and 31.6% prescribe homemade enteral formula, both conventional and commercial. The homemade enteral formula showed a variation from 700 to 3000 kcal/d. The macronutrient levels of carbohydrates, proteins, and fats were 49.0% ± 6.8%, 17.4% ± 3.1%, and 33.5% ± 6.2%, respectively. On average, homemade enteral formula had 58.5% of high FODMAP content, 7.1% of moderate content, and 34.5% of low FODMAP content, considering that milk is the main food responsible for the high content of FODMAP. Conclusions: Homemade enteral formula presented adequate nutrition characteristics and is rich in FODMAP. It is important to consider FODMAP in enteral diets prescribed for individuals intolerant to these carbohydrates by individualizing the diet prescription.

Introdução A nutrição adequada é um dos fatores de maior impacto na saúde infantil, principalment... more Introdução A nutrição adequada é um dos fatores de maior impacto na saúde infantil, principalmente pela influência decisiva que o estado nutricional exerce sobre os riscos de morbimortalidade, o crescimento e o desenvolvimento. 1 Segundo Best et al., 2 a prevalência de desnutrição em países da América Latina é menor que 10%. No Brasil, dados da Pesquisa de Orçamentos Familiares (POF) mostram que o déficit de peso em 2008-2009 em crianças menores de cinco anos é de 6%, com ênfase no primeiro ano de vida (8,9%). Nas crianças de cinco a nove anos, o déficit de peso acomete 4,1%, e o déficit de altura atinge 6,8% desta população. Em adolescentes, entre 10 e 19 anos, o déficit de peso é de 3,35%. 3 Além disso, a prevalência de crianças com anemia e deficiência de vitamina A é de 20,9% e 17,4%, respectivamente.

Estudo de carater transversal observacional. O estado nutricional foi determinado pelo Indice de Massa Corporal. O consumo alimentar foi estimado por meio de recordatorio alimentar de 24 horas, enfatizando a ingestao de calorias (kcal), proteinas, carboidratos, lipidios e fibras. Foram avaliados a hemoglobina glicada e a qualidade de vida, por meio do questionario DQOL-Brasil. O estudo compreendeu 27 individuos com idade media de 43,66 ± 15,74 anos e IMC medio de 27,06 ± 4,79 kg/m2. Em relacao ao consumo alimentar, os valores medios encontrados foram: 26,29 ± 4,73 kcal/kg/dia, 70,53 ± 14,55 % de CHO, 0,90 ± 0,53 g/PTN/kg/dia, 27,13 ± 8,23 % de LIP e 16,3 ± 5,83 g de fibras. This article aims to develop a literature review of food nutrients and substances that can impact... more This article aims to develop a literature review of food nutrients and substances that can impact on thyroid function. A literature review using association between hypothyroidism descriptors, iodine, selenium, zinc, soy, gluten and flavonoids was held in Pubmed database in 2014. It was found 172 articles and 42 were elected, besides material needed to achieve the objective of this study. It was observed that iodide participates in the reaction organification and subsequently engages tyrosyl residues to form the thyroid hormones. Excessive or deficient amounts of iodine contribute to thyroid dysfunction, including hypothyroidism. Selenium and zinc are co-factors for deiodination reactions, which convert thyroxine (T4) in triiodothyronine (T3) peripherally. Deficiency of these minerals can be developed on restrictive diets or unbalanced diet at any stage of life, collaborating with decreased production of thyroid hormones. Furthermore, intaken substances, such as thiocyanate and isothiocyanate can compete with iodide for the entry in thyroid follicles and compromise hormones synthesis, as well as soy, which can inhibit thyroid peroxidase, enzyme responsible for the oxidation of iodide and formation of thyroid hormones, when there is iodine deficiency. In vivo studies that show the type and amount of flavonoids that may interfere with the conversion of T4 to T3 should be performed, as well as studies to elucidate the role of the exemption of gluten in the reversal of subclinical hypothyroidism.

As informações contidas nos rótulos dos alimentos devem ser de fácil entendimento e seguir os cri... more As informações contidas nos rótulos dos alimentos devem ser de fácil entendimento e seguir os critérios das legislações nacionais para melhor compreensão dos componentes do alimento. O objetivo do estudo foi realizar uma análise crítica das informações contidas no rótulo de alimentos disponíveis para comercialização e comparar com os critérios estabelecidos pelas legislações brasileiras. O estudo observacional foi realizado com 198 rótulos de alimentos industrializados disponíveis para comercialização em duas redes de supermercados, selecionadas por conveniência, do Município de Curitiba, Paraná. Os rótulos dos produtos foram fotografados durante as quatro visitas aos supermercados e foram avaliados por meio de um roteiro de avaliação composto por 64 itens distribuídos em 23 categorias referentes aos critérios das legislações de rotulagem de alimentos. Para tanto, um estudo observacional retrospectivo foi realizado com pacientes com idade ≥18 anos, que receberam terapia nutricional enteral exclusiva por pelo menos 72 horas na UTI, no período de maio a setembro de 2017. Foram coletados dados demográficos, diagnóstico médico, tempo de início da infusão da nutrição enteral, informações sobre a nutrição prescrita versus infundida, número de pacientes que atingiram 50%, 70% e 100% da energia e proteína em três, cinco e sete dias respectivamente, além de sintomas gastrointestinais presentes durante a terapia nutricional enteral. Objective: To evaluate the anthropometric and biochemical characteristics of children and adolesc... more Objective: To evaluate the anthropometric and biochemical characteristics of children and adolescents with phenylketonuria. Methods: Retrospective study with anthropometric and biochemical data collection from patients with phenylketonuria in the age group 2-19.9 years. Nutritional status was classified according to the World Health Organization. Biochemical tests were compared to current recommendations. Results: A total of 84 patients (71.8%) were eligible, with a median age of 10.7 years (2.4-19.9 years). There was predominance of eutrophy (n = 58, 69%) with presence of overweight and obesity in 24 (28.5%) patients. The biochemical tests revealed hyperphosphatemia in 46 (55%), hypertriglyceridemia in 27 (50%), vitamin B12 elevated in 34 (41.2%), selenium deficiency in 10 (13.7%), insufficient zinc in 7 (8.9%), low globulin in 21 (26.9%), low HDL in 35 (59.3%) and elevated phenylalanine level in 28 (34.5%) patients in the sample. Overweight and obesity were correlated with low HDL (p= 0.04) and lowest adequate frequency of LDL (p = 0.09). Higher phosphorus values were associated with lower body weight (r =-0.72) and age (r =-0.75), as well as vitamin B12 in the same parameters (r=-0.67 and r=-0, 68). A positive correlation of phenylalanine with body weight and age (r = 0.62 and r = 0.66) was observed. Conclusion: Most patients presented eutrophy according to anthropometric parameters and appropriate biochemical tests, except HDL, and moderate metabolic control of the disease. However, attention should be paid to the presence of overweight and need for biochemical monitoring of triglycerides, selenium, zinc, HDL, and phenylalanine.

A total of 119 individuals in Curitiba, Brazil, participated in the study. For data collection, was elaborated a questionnaire about the socio-demographic, professional profile and food safety knowledge, which was filled by the participants during events. The majority of the individuals were owners (75.63%), of the male gender (69.75%), aged between 30 and 44 years-old (56.30%) and with complete/incomplete higher education (55.46%). Thus, the objective of the study was to assess the relationship between quality and satisfaction of life and the metabolic-nutritional profile of individuals with type 2 diabetes mellitus. A cross-sectional study was carried out with patients with type 2 diabetes mellitus from an outpatient endocrinology clinic of the University Hospital in Curitiba, Paraná. Quality of life was measured by the Problem Area in Diabetes (PAID) scale and the satisfaction of life by the Satisfaction with Life (SWL) instrument. Nutritional status was assessed by Body Mass Index and waist circumference. Glycemic control was assessed by a glycosylated hemoglobin test. To verify associations between the variables, we applied the chi-square and the t-test, when relevant. A total of 69 subjects with type 2 diabetes mellitus were assessed. Good quality and satisfaction of life were found in the study; however, nutritional status and glycemic control were found to be inadequate. There was no relationship of emotional distress associated with diabetes, or life satisfaction with the metabolic and nutritional profile. Early interventions are suggested concerning the improvement of the nutritional status and glycemic control of this population with the interest of avoiding micro and macro vascular complications, which may compromise their quality and satisfaction of life.

This study aimed to describe the nutritional status (NS) of institutionalized patients with cereb... more This study aimed to describe the nutritional status (NS) of institutionalized patients with cerebral palsy with enteral nutrition therapy (ENT) and apply quality indicators concerning administration of enteral nutrition (EN). Retrospective observational study. To assess NS, data on body weight, height, arm circumference (AC), triceps skinfold thickness (TSF), muscle circumference spleen (MCS) and body mass index (BMI) were collected from medical records of individuals. Six quality indicators were monitored: (1) frequency of BMI measurement in patients with nutritional therapy (NT); (2) frequency measurement or estimation of energy expenditure and protein needs of patients in NT; (3) frequency of days of adequate fluid administration in patients in NT; (4) frequency of days of proper management of energy in patients in NT; (5) frequency of days of proper administration of protein in patients with NT; and (6) frequency of complications related to the administration of EN. Eight individuals were assessed. The mean BMI was 18.65 ± 3.2 kg / m²; %AC was 85.63% ± 6.05%; MCS was 85.13% ± 15.27%; and TSF was 116.5% ± 76.6%. Regarding indicators 4 and 6, it was perceived 25% of adequacy, and 5 showed 75% of adequacy. The other indicators showed 100% compliance. The patients presented depletion of muscle tissue and fat reserve, despite low weight. Indicators 4, 5 and 6 presented low percentage of adequacy, reflecting the importance of their monitoring.

Background: Recent studies have shown that commercial enteral formulas with low FODMAP (FO, ferme... more Background: Recent studies have shown that commercial enteral formulas with low FODMAP (FO, fermentable oligosaccharides; D, disaccharides; M, monosaccharides; AP, and polyols) content decrease diarrhea of individuals receiving enteral nutrition therapy (ENT). There is no information, however, regarding the content of FODMAP in homemade enteral formula. The objective of this study was to assess energy and macronutrient content, and to quantify the amount of FODMAP content in homemade enteral formula, commonly prescribed for home use after hospital discharge. Methods: Recipes of homemade enteral formula were requested from all hospitals and healthcare centers in a Brazilian city, totaling 24 recipes. The diets were quantified in relation to their energy content, macronutrients, and FODMAP content. Results: Of the 19 hospitals, 68.4% prescribe only commercial enteral formulas at the time of hospital discharge, and 31.6% prescribe homemade enteral formula, both conventional and commercial. The homemade enteral formula showed a variation from 700 to 3000 kcal/d. The macronutrient levels of carbohydrates, proteins, and fats were 49.0% ± 6.8%, 17.4% ± 3.1%, and 33.5% ± 6.2%, respectively. On average, homemade enteral formula had 58.5% of high FODMAP content, 7.1% of moderate content, and 34.5% of low FODMAP content, considering that milk is the main food responsible for the high content of FODMAP. Conclusions: Homemade enteral formula presented adequate nutrition characteristics and is rich in FODMAP. It is important to consider FODMAP in enteral diets prescribed for individuals intolerant to these carbohydrates by individualizing the diet prescription.

Introdução A nutrição adequada é um dos fatores de maior impacto na saúde infantil, principalment... more Introdução A nutrição adequada é um dos fatores de maior impacto na saúde infantil, principalmente pela influência decisiva que o estado nutricional exerce sobre os riscos de morbimortalidade, o crescimento e o desenvolvimento. 1 Segundo Best et al., 2 a prevalência de desnutrição em países da América Latina é menor que 10%. No Brasil, dados da Pesquisa de Orçamentos Familiares (POF) mostram que o déficit de peso em 2008-2009 em crianças menores de cinco anos é de 6%, com ênfase no primeiro ano de vida (8,9%). Nas crianças de cinco a nove anos, o déficit de peso acomete 4,1%, e o déficit de altura atinge 6,8% desta população. Em adolescentes, entre 10 e 19 anos, o déficit de peso é de 3,35%. 3 Além disso, a prevalência de crianças com anemia e deficiência de vitamina A é de 20,9% e 17,4%, respectivamente.

Estudo de carater transversal observacional. O estado nutricional foi determinado pelo Indice de Massa Corporal. O consumo alimentar foi estimado por meio de recordatorio alimentar de 24 horas, enfatizando a ingestao de calorias (kcal), proteinas, carboidratos, lipidios e fibras. Foram avaliados a hemoglobina glicada e a qualidade de vida, por meio do questionario DQOL-Brasil. O estudo compreendeu 27 individuos com idade media de 43,66 ± 15,74 anos e IMC medio de 27,06 ± 4,79 kg/m2. Em relacao ao consumo alimentar, os valores medios encontrados foram: 26,29 ± 4,73 kcal/kg/dia, 70,53 ± 14,55 % de CHO, 0,90 ± 0,53 g/PTN/kg/dia, 27,13 ± 8,23 % de LIP e 16,3 ± 5,83 g de fibras. This article aims to develop a literature review of food nutrients and substances that can impact... more This article aims to develop a literature review of food nutrients and substances that can impact on thyroid function. A literature review using association between hypothyroidism descriptors, iodine, selenium, zinc, soy, gluten and flavonoids was held in Pubmed database in 2014. It was found 172 articles and 42 were elected, besides material needed to achieve the objective of this study. It was observed that iodide participates in the reaction organification and subsequently engages tyrosyl residues to form the thyroid hormones. Excessive or deficient amounts of iodine contribute to thyroid dysfunction, including hypothyroidism. Selenium and zinc are co-factors for deiodination reactions, which convert thyroxine (T4) in triiodothyronine (T3) peripherally. Deficiency of these minerals can be developed on restrictive diets or unbalanced diet at any stage of life, collaborating with decreased production of thyroid hormones. Furthermore, intaken substances, such as thiocyanate and isothiocyanate can compete with iodide for the entry in thyroid follicles and compromise hormones synthesis, as well as soy, which can inhibit thyroid peroxidase, enzyme responsible for the oxidation of iodide and formation of thyroid hormones, when there is iodine deficiency. In vivo studies that show the type and amount of flavonoids that may interfere with the conversion of T4 to T3 should be performed, as well as studies to elucidate the role of the exemption of gluten in the reversal of subclinical hypothyroidism.
