The control of L. monocytogenes in dairy industries presents particular challenges, as this bacterium is capable of adhering and forming biofilms, as well as thriving at refrigerated temperatures, which enables it to persist in harsh environments. The consumption of dairy products has been linked to sporadic cases and outbreaks of listeriosis, and L. monocytogenes is frequently detected in these products in retail stores. Moreover, the bacterium has been shown to persist in dairy-processing environments. In this work, we review the main characteristics of L. monocytogenes and listeriosis, and highlight the factors that support its persistence in processing environments and dairy products. Introdução: No Brasil, a legislação exige maturação mínima de 60 dias para queijos produzidos com... more Introdução: No Brasil, a legislação exige maturação mínima de 60 dias para queijos produzidos com leite cru, salvo se houver comprovação científica de que a redução do prazo não compromete a segurança do produto, como ocorreu com alguns queijos artesanais tradicionais de diferentes regiões do estado de Minas Gerais. No estado de São Paulo, onde os produtores seguem formulações e processos específicos individuais, a falta de um padrão de pesquisa validado dificulta a avaliação da segurança microbiológica deste tipo de queijo, pois essas pesquisas são dispendiosas e não há garantia de que os parâmetros estabelecidos pelos pesquisadores seriam aceitos pelos serviços de inspeção. Objetivo: Para abordar este desafio, esta proposta visa estabelecer um modelo de pesquisa científica padronizado para avaliar a segurança de queijos de leite cru maturados por menos de 60 dias. Snacks are highly consumed products due to the low price, easy and fast preparation and convenien... more Snacks are highly consumed products due to the low price, easy and fast preparation and convenience. However, the inadequate handling and preparation of these foods increase the risk for microbiological contamination. This study aimed at examining the microbiological quality of hamburgers by performing the counts of mesophilic aerobic bacteria, total coliforms, Escherichia coli, Salmonella sp., Bacillus cereus, Staphylococcus aureus, sulfite reducer Clostridium, and molds and yeasts. Eighteen samples were collected from six lunchrooms in the city of Ouro Preto - MG. Among the analyzed samples, 56 % were classified as unsatisfactory for mesophilic aerobic counts, 67 % for total coliforms counts, 6 % for E. coli, and 61 % for molds and yeasts. Salmonella sp. was not detected in any of the analyzed samples, and the CFU/g of B. cereus, S. aureus and sulfite reducer Clostridium were under the detection limit.
