To fulfil this aim, six marinade (M) formulations were created based on acid whey (AW) fermented with Lacticaseibacillus casei (Lc) and Liquorilactobacillus uvarum (Lu), either alone or combined with freeze-dried apple (AP) or blackcurrant (BC) pomace. The most appropriate fermentation times for the marinades were selected according to the lower pH values and higher viable LAB counts in the samples. Additionally, the antimicrobial activity of the selected marinades against pathogenic and opportunistic bacterial strains was tested. For CCN preparation, gelatin (Gel) and agar were tested; also, to provide CCN prepared using agar with a desirable hard texture, citric acid (cit) was changed to ascorbic acid. To select the optimal quantities of the ingredients, overall acceptability (OA) and emotions (EMs) induced in consumers by different CCN formulations were evaluated. Furthermore, viable LAB count during storage, texture, colour, and antioxidant characteristics were analysed. The aim of this study was to expand the boundaries of AgNPs using a novel low toxicity and production cost phytochemical method for the biosynthesis of nanoparticles from Eucalyptus globulus and Salvia officinalis aqueous leaf extracts. Biosynthesized AgNPs were characterized by various methods (ultraviolet-visible spectroscopy (UV-vis), Fourier transform infrared (FTIR) spectroscopy with horizontal attenuated total reflectance (HART), transmission electron microscopy (TEM), energy-dispersive X-ray spectroscopy (EDS)). This is done by testing whether they know that the main ingredients of the product are by-products, performing an overall acceptability test of the developed beverages, and evaluating the emotions induced by the newly developed beverages for consumers. Regardless of the numerous investigations of secondary metabolites, the impact of new growing tec... more Regardless of the numerous investigations of secondary metabolites, the impact of new growing technologies or individual technological means on fruit internal quality, particularly triterpene concentration in apple fruits has not been studied yet. Apple-tree (Malus × domestica Borkh.) growing technologies and geographical location of the growing site had clear effect on triterpene concentration in apple fruits. The effect of crop load, fruit location in apple-tree canopy, planting distance, apple-tree vegetative growth regulation and geographical location on triterpene content in apples was evaluated in 2015 and 2016. Four triterpenic compounds: corosolic, betulinic, oleonolic and ursolic acids, were quantified in apple peel. Triterpene accumulation in apple fruits was directly correlated with crop load, where 17% more total triterpenes were found at the highest crop load (12 fruits cm-2 trunk cross-sectional area (TCSA)) in comparison to the lowest crop load (4 fruits cm-2 TCSA). Higher concentration of triterpenes was found in the fruits harvested from the inner canopy of the apple-tree. Apple-tree growth regulation affected the synthesis of triterpenes-trunk incision decreased the amount of total triterpenes by 16% compared to the control and by 26% compared to summer pruning. Also, a trend of higher accumulation of triterpenes in fruits was found along with decreasing apple-tree planting distances. Colder climate and shorter vegetation period resulted in significantly higher contents of triterpenes in the fruits of cultivar 'Auksis' in Lithuania and Estonia compared to the fruits grown in Poland. The same trend, yet insignificant, was noticed for the cultivar 'Ligol'.

Super-dwarf rootstocks P 61 and P 22 determined the highest content of all phenolic compounds tested. Dwarf rootstocks M.9, P 62 and semi-dwarf M.26 determined lower content of all phenolic compounds tested. The content of (+)-catechin, procyanidin B1 and total procyanidins content in apple fruits depended on rootstock genotype and high variation coefficient of these compounds between rootstocks was established. Rootstocks had a lesser effect on the content of quercitrin, (–)-epicatechin, total catechins, phloridzin and chlorogenic acid. No clear differences were found between super-dwarf, dwarf and semi-dwarf rootstock groups. Conditions during the growing season, yield and fruit weight impacted on the content of bioactive compounds. These compounds are appreciated as a source of nutrition for humans, as additives in cosmetic production, has immense therapeutic potential. Raspberry seed oil exerts many pharmacological effects included antimicrobial, antioxidant, anti-inflammatory activity and many other effects. The various databases like PubMed and Science Direct were used to identify, analyze and summarize the research literature on raspberries. This review will highlight recent developments of the chemical constituents and nutraceutical and cosmetical effects of RSO. Practical application: analyzed recent researches and international patents containing raspberry seed oil can help practitioners of various industries create new high-value products.

This study aimed to investigate anticancer activity of the extracts of the Japanese quince (JQ) cultivars ‘Darius’, ‘Rondo’, and ‘Rasa’ leaf extracts on glioblastoma C6 and HROG36 cells. As identified by ultra high performance liquid chromatography electrospray ionization tandem mass spectrometry, the extracts contained three prevailing groups of phenols: hydroxycinnamic acid derivatives; flavan-3-ols; and flavonols. Sixteen phenols were detected; the predominant compound was chlorogenic acid. The sum of detected phenols varied significantly between the cultivars ranging from 9322 µg/g (‘Rondo’) to 17,048 µg/g DW (‘Darius’). We studied the quantitative composition of triterpenic compounds in the whole apple, apple peel and apple flesh samples before placing them in the controlled atmosphere (CA) chambers, and at the end of the experiment, 8 months later. HPLC analysis showed that highest total amount of triterpenic compounds (1.99 ± 0.01 mg g−1) was found in the whole apple samples of the ‘Spartan’ cultivar stored under variant VIII (O2—20%, CO2—3%, N2—77%) conditions. The antioxidant potential of lipophilic fractions (extract obtained with SCE-CO2) and hydrophilic fractions (extracts obtained from the residue after extraction) obtained from a matrix of freeze-dried tomatoes (cvs. “Admiro” F1, “Jurgiai”, “Vilina”, “Pirmutis”, and “Skariai”) was assessed via different antioxidant activity methods. The aim of this study was to evaluate the characteristics of macroalgae (Cladophora rupestris, Fu... more The aim of this study was to evaluate the characteristics of macroalgae (Cladophora rupestris, Furcellaria lumbricalis, Ulva intestinalis) and microalgae (Arthrospira platensis (Sp1, Sp2), Chlorella vulgaris) extracts, including micro- and macroelement transition to extract, antioxidant, antimicrobial properties, the concentrations of chlorophyll (-a, -b), and the total carotenoid concentration (TCC). In macroalgae, the highest TCC and chlorophyll content were found in C. rupestris. In microalgae, the TCC was 10.1-times higher in C. vulgaris than in Sp1, Sp2; however, the chlorophyll contents in C. vulgaris samples were lower. A moderate negative correlation was found between the chlorophyll-a and TCC contents (r = −0.4644). The aim of this study was to determine the composition and content of phenolic compounds in ethan... more The aim of this study was to determine the composition and content of phenolic compounds in ethanol extracts of eight different cultivars of American cranberry (Vaccinium macrocarpon Aiton) fruit using spectrophotometric and UPLC-ESI-MS/MS analysis and to evaluate the antioxidant activity in vitro of these extracts. The highest total amount of phenolic compounds evaluated via Folin–Ciocalteu spectrophotometry was detected in American cranberry fruit samples of the ‘Bain’ clone, and the highest total amount of flavonoids was found in samples of the ‘Drever’ and ‘Baiwfay’ cultivars. The highest total amount of the individual phenolic compounds (519.53 ± 25.12 mg/g DW) identified and quantitatively evaluated via chromatography was detected in samples of the ‘Searles’ cranberry cultivar. Regardless of the numerous investigations of secondary metabolites, the impact of new growing tec... more Regardless of the numerous investigations of secondary metabolites, the impact of new growing technologies or individual technological means on fruit internal quality, particularly triterpene concentration in apple fruits has not been studied yet. Apple-tree (Malus × domestica Borkh.) growing technologies and geographical location of the growing site had clear effect on triterpene concentration in apple fruits. The effect of crop load, fruit location in apple-tree canopy, planting distance, apple-tree vegetative growth regulation and geographical location on triterpene content in apples was evaluated in 2015 and 2016. Four triterpenic compounds: corosolic, betulinic, oleonolic and ursolic acids, were quantified in apple peel. Triterpene accumulation in apple fruits was directly correlated with crop load, where 17% more total triterpenes were found at the highest crop load (12 fruits cm-2 trunk cross-sectional area (TCSA)) in comparison to the lowest crop load (4 fruits cm-2 TCSA). Higher concentration of triterpenes was found in the fruits harvested from the inner canopy of the apple-tree. Apple-tree growth regulation affected the synthesis of triterpenes-trunk incision decreased the amount of total triterpenes by 16% compared to the control and by 26% compared to summer pruning. Also, a trend of higher accumulation of triterpenes in fruits was found along with decreasing apple-tree planting distances. Colder climate and shorter vegetation period resulted in significantly higher contents of triterpenes in the fruits of cultivar 'Auksis' in Lithuania and Estonia compared to the fruits grown in Poland. The same trend, yet insignificant, was noticed for the cultivar 'Ligol'.

Super-dwarf rootstocks P 61 and P 22 determined the highest content of all phenolic compounds tested. Dwarf rootstocks M.9, P 62 and semi-dwarf M.26 determined lower content of all phenolic compounds tested. The content of (+)-catechin, procyanidin B1 and total procyanidins content in apple fruits depended on rootstock genotype and high variation coefficient of these compounds between rootstocks was established. Rootstocks had a lesser effect on the content of quercitrin, (–)-epicatechin, total catechins, phloridzin and chlorogenic acid. No clear differences were found between super-dwarf, dwarf and semi-dwarf rootstock groups. Conditions during the growing season, yield and fruit weight impacted on the content of bioactive compounds. This study aimed to investigate anticancer activity of the extracts of the Japanese quince (JQ) cultivars ‘Darius’, ‘Rondo’, and ‘Rasa’ leaf extracts on glioblastoma C6 and HROG36 cells. As identified by ultra high performance liquid chromatography electrospray ionization tandem mass spectrometry, the extracts contained three prevailing groups of phenols: hydroxycinnamic acid derivatives; flavan-3-ols; and flavonols. Sixteen phenols were detected; the predominant compound was chlorogenic acid. The sum of detected phenols varied significantly between the cultivars ranging from 9322 µg/g (‘Rondo’) to 17,048 µg/g DW (‘Darius’). In macroalgae, the highest TCC and chlorophyll content were found in C. rupestris. In microalgae, the TCC was 10.1-times higher in C. vulgaris than in Sp1, Sp2; however, the chlorophyll contents in C. vulgaris samples were lower. A moderate negative correlation was found between the chlorophyll-a and TCC contents (r = −0.4644). The highest total amount of phenolic compounds evaluated via Folin–Ciocalteu spectrophotometry was detected in American cranberry fruit samples of the ‘Bain’ clone, and the highest total amount of flavonoids was found in samples of the ‘Drever’ and ‘Baiwfay’ cultivars.
