This instability is a critical aspect of quality of UHT milk which limits its use. Age gelation and sedimentation of UHT milk are serious problem in milk processing plants in Pakistan, which lead to decreased profit margin and hinder the commercial exploitation of UHT milk. The research work was carried out to evaluate the effect of milk quality (commercial and improved quality milk), UHT processing temperature (135C, 138C, 141C and 144C), storage temperature (25C, 40C) on physicochemical characteristics, protein and protein fractions, proteolysis, age gelation (viscosity), sedimentation and sensory evaluation during storage of 90 days. Stevia rebaudiana Bertoni a non-caloric, safe and natural sweetener has been shown pharmaceutical... more Stevia rebaudiana Bertoni a non-caloric, safe and natural sweetener has been shown pharmaceutically important in the management of blood disorders. This study was designed to investigate hematology and safety of stevia aqueous extract through animal modeling. For this purpose, fifty albino rats were categorized into 5 groups and all the groups were received aqueous stevia extract at different dosage levels (200, 300, 400 and 500 ppm/kg b. wt) for 8 weeks except control group. Hematological and toxicological analyses were conducted using standard recommended procedures. The results indicated that biochemical parameters (RBC, HB, HCT, MCV, MCH, MCHC, WBC, eosinophils, lymphocytes and neutrophils) of albino rats significantly (P<0.05) increased and PLT, MPV and monocytes levels non-significantly decreased by using aqueous extract of stevia at different levels after eight weeks of study. Commercial milk and improve quality milk containing total plate count 2.2 × 10 6 and 3.5 × 10 5 c... more Commercial milk and improve quality milk containing total plate count 2.2 × 10 6 and 3.5 × 10 5 cfu/mL and somatic cell count 621,000 and 249,000 per mL, respectively were subjected to different ultra-high temperature (UHT) processing temperatures (135, 138, 141 & 144 o C) and stored at 25 o C and 40 o C temperatures for 90 days. Commercial milk contained significantly lower content of lactose as compared to improved quality milk. More degradation of lactose content was observed in milk stored at 40 o C than at 25 o C temperature. The lactose content decline in UHT milk processed at a temperature 135 o C was lower than at 144 o C temperature. Commercial milk possessed higher ash content than improved quality milk. During this step, the mineral fraction, especially calcium phosphate, is concentrated and can precipitate depending on the physico-chemical conditions. The objective of this study was to evaluate the physico-chemical conditions influencing the calcium phosphate precipitation during evaporation as a function of concentration factor from milk ultrafiltrate (UF), microfiltrate (MF)) and mineral solutions. Experiments were carried out at 3 concentrations (5, 10 and 20mM) of citrate at pH 6.75 or by adjusting the pH (6.0, 5.3 and 4.6) of UF, MF and calcium phosphate solutions as a function of concentration factor in evaporator. The current work was undertaken to examine the effect of chitosan as a natural edible coating on ... more The current work was undertaken to examine the effect of chitosan as a natural edible coating on the quality of rohu (Labeo rohita) fillets during 30 days of chilled storage. The fish fillets were treated with different concentrations of chitosan (0.1, 0.25, 0.5 and 1% chitosan) and fish fillet without addition of chitosan was kept as control. Sampling was done initially on the 0th day and thereafter at ten day intervals and were examined periodically for water holding capacity (WHC), water extractable protein (WEP), salt extractable protein (SEP), thiobarbituric acid reactive substances (TBARS), pH, total viable count (TVC), psychrotrophic count (PTC) and sensory characteristics. Findings indicated that chitosan coating aided in retaining the quality and extended the shelf life of rohu fillets during refrigerated storage suggesting the suitability of using chitosan as a bio-preservative to extend the shelf life of chilled stored fish.

The antibacterial activities of the rosemary, oregano, clove and cinnamon extracts against Lister... more The antibacterial activities of the rosemary, oregano, clove and cinnamon extracts against Listeria monocytogenes, Bacillus subtilis, Escherichia coli, Staphylococcus aureus and Pseudomonas aeruginosa were evaluated in agar diffusion test medium and in sterilized milk medium at 37 °C within 24 hr time interval. All tested herbal extracts exhibited an inhibitory effect against pathogens. Gram-negative bacteria E. coli and P. aeruginosa were less susceptible to the inhibitory activity of all herbal extracts used in the experiment as compared to Gram-positive bacteria Staph. aureus, L. monocytogens and B. subtilis in nutrient agar medium as well as in sterilized milk medium. Oregano showed significant effect against all pathogens as compared to clove, cinnamon and rosemary. Whereas, results from rosemary showed significant decrease inmicrobial activity against pathogens as compared to other tested herbal extracts. These results suggest the prospect of using these herbal extracts in milk and milk products as natural antimicrobials. Methods: Nigella sativa seed oil (NSO) was extracted with Soxhlet apparatus using petroleum ether, and was given orally at a dose of 2.5 ml/kg body weight to alloxan-induced diabetic rabbits daily for 24 days. Biochemical parameters including total cholesterol (TC), triglycerides (TGs), low density lipoprotein cholesterol (LDL), very low lipoprotein cholesterol (VLDL), high density lipoprotein (HDL) and plasma glucose were determined in the treatment and control groups. Furthermore, bilirubin, vitamin C, catalase and mean body weight were assessed. Results: NSO treatment significantly lowered serum blood glucose levels and lipid contents, but increased the mean body weight, HDL-C and vitamin C levels of diabetic rabbits (p < 0.001). Major phenolic compounds present in persimmon are ferulic acid,p-coumaric acid, and gallic acid.β-Cryptoxanthin, lycopene,β-carotene, zeaxanthin, and lutein are important carotenoids having antioxidant potential. They are important to prevent oxidation of low-density lipoproteins, safeguard beta cells of the pancreas, and reduce cardiovascular diseases, cancer, diabetes mellitus, and damage caused by chronic alcohol consumption. In this paper, the chemistry and health benefits of bioactive compounds present in persimmon are reviewed to encourage impending applications and to facilitate further research activities.

During this step, the mineral fraction and especially calcium phosphate precipitates. The aim of this study was to evaluate the mineral behavior with a special attention paid on calcium and inorganic phosphate during vacuum evaporation of milk ultrafiltrate (UF) and milk microfiltrate (MF)). Water evaporation was performed with a pilot-scale falling-film evaporator with a configuration close to those used in industry. Samples were analyzed for levels of water evaporation. Different approaches were used like i. analyses of mineral contents and their precipitation; ii. theoretical calculation of salt formed and ion distribution. During evaporation, formation of trouble with presence of particles was determined. In the same time, increases of all components present were determined with a precipitation of calcium phosphate. With UF, deposits of calcium phosphate in the evaporator were deduced whereas with MF, interaction of calcium phosphate with whey proteins limited the calcium phosphate precipitation. The mineral precipitates were always negatively charged. Moreover and due to evaporation, the increase in the ionic strength significantly decreased the negative charge present at the surface of calcium phosphate precipitates.

Goat warble fly infestation is caused by Przhevalskiana silenus (Diptera: Oestridae). There were a total of five hundred animals examined from July 2012 to January 2013 from Khoshab and Chakwal districts of Punjab province for the prevalence of warble. The larvae were collected from the infested goats and identified as P. silenus. The results showed that the prevalence of GWFI was 17.8% (89/500). The number of nodules in the infested animals ranged from 1-14 (6.61 +/- 2.4). The breed wise prevalence was in beetle breed (13.2%), local breed (18%) and desi breed (22.9%), respectively. The sex wise prevalence was in male (15.3%) and in female (19.4%). The prevalence based on age showed that the rate of infestation in animals having age group (1-3 year) was 20.9%, (4-6 year) was 14.6% and (>6 year) was 18.1%, respectively. This study was conducted by adding 5, 15 and 25mM sodium citrate dihydrate (SCD), sodium polyphosphate (SPP) and disodium EDTA (DSE) to skim milk concentrate (30% total solids) and adjusting the concentrate to 6.65 pH before spray drying. One set of sample bags were stored at room temperature (22oC). The second sets of bags were kept at 37oC for three months. The experiment was repeated twice. Samples were tested for solubility index (SI) and reconstituted to contain 9% TS and tested for opacity by using a Hunter Lab Colorimeter. Currently it affects 384 million people on the globe and this number is expected to reach 592 million in 2035 as reiterated by International Diabetes Federation (IDF). By improving the quality of diet and decreasing the intake of sugary foods T2DM can be treated. Fenugreek seeds powder in sachet form of 20 g/day used to treat type 2 diabetes mellitus as a natural supplement. Anthropometric parameters of height, weight, age and BMI of T2DM patient was also calculated. In this study patients from Rawalpindi and Islamabad region were selected for study purpose. Blood sugar levels such as fasting blood glucose (FBG), random blood glucose (RBG), and HbA1c of both the groups (treated and control) were taken at baseline, after one month and at the end of study. When fenugreek seeds were given to T2DM patients significant decrease in their glucose levels were seen after 30 and then 60 days of treatment.

Four treatments (roasting, germination, autoclaving and an application of 0.5% EDTA þ 0.5% sodium... more Four treatments (roasting, germination, autoclaving and an application of 0.5% EDTA þ 0.5% sodium hydroxide) were used to reduce the beany flavour of soya beans to produce a soy-based beverage. While germination significantly increased the protein level as compared to the other treatments, the maximum reduction of the beany flavour was achieved by the 0.5% EDTA þ 0.5% sodium hydroxide application. The soya beans that underwent this treatment were used during the second phase for optimized beverage formulation. During the second phase, a beverage was prepared according to different formulations and analysed for chemical composition and total viable count during a two-month storage period. During storage, the beverage samples exhibited variations in several parameters. The acidity, reducing sugars and total sugars increased, while the ascorbic acid, total soluble solids and pH decreased. Major phenolic compounds present in persimmon are ferulic acid,p-coumaric acid, and gallic acid.β-Cryptoxanthin, lycopene,β-carotene, zeaxanthin, and lutein are important carotenoids having antioxidant potential. They are important to prevent oxidation of low-density lipoproteins, safeguard beta cells of the pancreas, and reduce cardiovascular diseases, cancer, diabetes mellitus, and damage caused by chronic alcohol consumption. In this paper, the chemistry and health benefits of bioactive compounds present in persimmon are reviewed to encourage impending applications and to facilitate further research activities.

During this step, the mineral fraction and especially calcium phosphate precipitates. The aim of this study was to evaluate the mineral behavior with a special attention paid on calcium and inorganic phosphate during vacuum evaporation of milk ultrafiltrate (UF) and milk microfiltrate (MF)). Water evaporation was performed with a pilot-scale falling-film evaporator with a configuration close to those used in industry. Samples were analyzed for levels of water evaporation. Different approaches were used like i. analyses of mineral contents and their precipitation; ii. theoretical calculation of salt formed and ion distribution. During evaporation, formation of trouble with presence of particles was determined. In the same time, increases of all components present were determined with a precipitation of calcium phosphate. With UF, deposits of calcium phosphate in the evaporator were deduced whereas with MF, interaction of calcium phosphate with whey proteins limited the calcium phosphate precipitation. The mineral precipitates were always negatively charged. Moreover and due to evaporation, the increase in the ionic strength significantly decreased the negative charge present at the surface of calcium phosphate precipitates.

Goat warble fly infestation is caused by Przhevalskiana silenus (Diptera: Oestridae). There were a total of five hundred animals examined from July 2012 to January 2013 from Khoshab and Chakwal districts of Punjab province for the prevalence of warble. The larvae were collected from the infested goats and identified as P. silenus. The results showed that the prevalence of GWFI was 17.8% (89/500). The number of nodules in the infested animals ranged from 1-14 (6.61 +/- 2.4). The breed wise prevalence was in beetle breed (13.2%), local breed (18%) and desi breed (22.9%), respectively. The sex wise prevalence was in male (15.3%) and in female (19.4%). The prevalence based on age showed that the rate of infestation in animals having age group (1-3 year) was 20.9%, (4-6 year) was 14.6% and (>6 year) was 18.1%, respectively. This study was conducted by adding 5, 15 and 25mM sodium citrate dihydrate (SCD), sodium polyphosphate (SPP) and disodium EDTA (DSE) to skim milk concentrate (30% total solids) and adjusting the concentrate to 6.65 pH before spray drying. One set of sample bags were stored at room temperature (22oC). The second sets of bags were kept at 37oC for three months. The experiment was repeated twice. Samples were tested for solubility index (SI) and reconstituted to contain 9% TS and tested for opacity by using a Hunter Lab Colorimeter. Currently it affects 384 million people on the globe and this number is expected to reach 592 million in 2035 as reiterated by International Diabetes Federation (IDF). By improving the quality of diet and decreasing the intake of sugary foods T2DM can be treated. Fenugreek seeds powder in sachet form of 20 g/day used to treat type 2 diabetes mellitus as a natural supplement. Anthropometric parameters of height, weight, age and BMI of T2DM patient was also calculated. In this study patients from Rawalpindi and Islamabad region were selected for study purpose. Blood sugar levels such as fasting blood glucose (FBG), random blood glucose (RBG), and HbA1c of both the groups (treated and control) were taken at baseline, after one month and at the end of study. When fenugreek seeds were given to T2DM patients significant decrease in their glucose levels were seen after 30 and then 60 days of treatment.

Four treatments (roasting, germination, autoclaving and an application of 0.5% EDTA þ 0.5% sodium... more Four treatments (roasting, germination, autoclaving and an application of 0.5% EDTA þ 0.5% sodium hydroxide) were used to reduce the beany flavour of soya beans to produce a soy-based beverage. While germination significantly increased the protein level as compared to the other treatments, the maximum reduction of the beany flavour was achieved by the 0.5% EDTA þ 0.5% sodium hydroxide application. The soya beans that underwent this treatment were used during the second phase for optimized beverage formulation. During the second phase, a beverage was prepared according to different formulations and analysed for chemical composition and total viable count during a two-month storage period. During storage, the beverage samples exhibited variations in several parameters. The acidity, reducing sugars and total sugars increased, while the ascorbic acid, total soluble solids and pH decreased.
