Volatile extracts of moderately off-flavoured frozen peas, prepared by vacuum sublimation followe... more Volatile extracts of moderately off-flavoured frozen peas, prepared by vacuum sublimation followed by concentration of the sublimate by low temperature vacuum distillation, were examined by gas chromatography, silica gel chromatography and combined gas chromatography–mass spectrometry. The constituents identified included alcohols (29), carbonyls (31), esters (12), hydrocarbons (19), terpenes (6) and 3-alkyl-2-methoxypyrazines (3). Olfactory monitoring of the gas chromatographic column effluent indicated that most of the strong odours were associated with alkanals, alk-2-enals, alka-2,4- and 2,6-dienals, octa-3,5-dien-2-ones, 3-alkyl-2-methoxypyrazines and hexanol. However, no compound which, by itself, could account for the “hay-like” off-flavour of peas was evident. The off-flavour is considered to be complex and composed largely of the more odorous unsaturated carbonyls derived from the enzymic breakdown of the unsaturated pea lipids. The volatiles of pea shells similarly examined were found to contain many of the compounds present in peas.

The effect of relative humidity and chlorophenol content on the fungal conversion of 2,4,6-trichI... more The effect of relative humidity and chlorophenol content on the fungal conversion of 2,4,6-trichIorophenol, 2,3,4,6-tetrachlorophenol and pentachlorophenol to the corresponding chloroanisoles in fibreboard cartons was studied under temperature and humidity conditions similar to those that could occur in shipping containers during the transportation of packaged dried fruit. The conversion was studied in cartons manufactured from virgin Kraft fibreboard (total chlorophenol content 66 pg kg-') and fibreboard prepared from recycled waste paper (total chlorophenol content 1375 pg k g-l). Positive correlations were established between both storage humidity and fungal population with chloroanisole production in the fibreboard. The concentration of the chloroanisoles in the packaged fruit increased with increasing relative humidity. The roles of relative humidity and chlorophenol content in fibreboard are discussed with respect to the development of chloroanisole-induced mustiness in packaged dried fruit.

AT the 11th International Scientific Meeting of the International Epidemiological Association, Co... more AT the 11th International Scientific Meeting of the International Epidemiological Association, Colin Soskolne proposed that the IEA should develop guidelines on ethics for epidemiologists. The IEA President, Walter Holland, asked me to chair a committee to prepare these guidelines. In December 1987,1 circulated a first draft to Council and others known to be interested. After much subsequent discussion in correspondence and at several conferences, and drawing on other statements about ethics and epidemiology,' 2 I prepared this revision for discussion at the IEA Council meeting in Glewstone, Herefordshire, UK in November 1989. The Council felt that this document should be published now, to allow time for those who are interested to consider it before a conference on ethics, health policy and epidemiology, which is to be held immediately before the 12th International Scientific Meeting of the IEA, in Los Angeles, in August 1990.
