Pancakes! (or 'I am thoroughly made of fail...') (original) (raw)

I meant to do this on Tuesday, which was actually pancake day, but I got distracted. It is now Friday, as you've probably noticed, and I still haven't done a baking post as I said I would five days ago. (I have, however baked cake in the meantime, it will be shared soon too if I don't get too distracted...)

So, yes. Pancakes. Yummy.

You can really put any kind of filling in pancakes you like, these particular ones are nutella and peanut butter ones because I had a hankering...and I don't particularly like nutella on things, but in things and melty is rather yummy.

Dobbed about in the middle is the best...or off-centre because my frying pan has a beckled bottom.

Peanut butter in the other one...om nom nom nom...

Pancakes are absolute buggers to flip sometimes...or at least I always seem to get batter everywhere...

Never mind, they taste delicious...

Fluffy insides with chocolate and peanut butter ooey gooey-ness... mmmmm....

You can, of course, put anything you want in pancakes. I've made them with blueberries dodded about in the middle, and chocolate chips one time too, and reese's cups I think once also. They are also fabulous on their own or with bacon and egg like we had on pancake day in this house. Or with banana and maple syrup.

Here's the recipe, enjoy!

Ingredients

(Makes two large pancakes--enough for one or two people. For two or more double the ingredients)

1/2 cup of self-raising flour
1/2 cup milk (I use semi-skimmed)
1 egg
1 tbsp sugar

Method

1. Dribble a bit of oil in a frying pan and put your hob/cooker on at a medium heat. Leave the pan to warm.

2. Put the flour and milk in a jug and mix until the whole lot is incorporated and there are no little pockets of flour hiding at the bottom. Then add the sugar and mix well.

3. With the egg, separate the egg white into a separate bowl and put aside for a minute. Add the yolk to your jug and mix well. Put aside.

4. Whisk your egg white until it is frothy and gets light and white (this doesn't take much, a minute and a half, tops) then add it to your jug, folding it into the mixture.

5. Pour half of the pancake mix into your frying pan (if you are adding anything in, add it now) and let it cook until the edges go a pale yellowish colour, flip the pancake over and let it cook on the other side until golden brown (about 3-4 mins). Put the pancake aside and then repeat the process with the remainder of the pancake mix.

6. Plate up. Eat. Enjoy.
