Scholars have often found a lack of strategy in Corporate Sustainability management and literatur... more Scholars have often found a lack of strategy in Corporate Sustainability management and literature lacks longitudinal studies that could shed light on the transformations needed to push it forward. In this longitudinal study (2013-2019), we show how Corporate Sustainability has evolved to be now truly embedded in Corporate Strategy. A paradigm shift is taking hold: sustainability is not an altruistic option for managers anymore, it is now considered a source of revenue. A key contribution of this paper is that it lists the most relevant transformations through which the case study organisations went during the period of study, including bottom-up leadership, purposedriven brand management, enhanced long term partnerships, increased transparency and renewed goals and priorities. Results offer implications for theory and practice. Managers willing to improve the sustainability performance of their companies can use the proposed framework to take advantage of the multiple opportunities that arise from the sustainability megatrend.

Plant-based diets are more and more popular across the world, together with the growing concern o... more Plant-based diets are more and more popular across the world, together with the growing concern of consumers towards environmental issues and animal welfare. In this context, a better understanding of vegetarian and vegan consumer motivations and buying behaviour is required. Aiming to fill in this gap in the literature, a quantitative analysis was performed among 628 vegetarians and vegan consumers in Israel and Spain. Results show that the main motivation for following a meat-free diet is animal welfare, followed by environmental concern and health concerns. Vegan motivations are significantly stronger compared to those of vegetarians. Only a few relevant differences were observed between the two countries. Most vegans and many vegetarians in both countries avoid purchasing unsustainable products, particularly leather or cosmetics that have been tested on animals, thus protecting both animals and the environment.

Community pharmacies play a critical societal role and are well placed to enable the progress of ... more Community pharmacies play a critical societal role and are well placed to enable the progress of national health systems towards sustainability Nevertheless, there is a dearth of research which has been set up to understand sustainability practices adopted by community pharmacies and evaluate the drivers behind their adoption This study undertook an exploratory analysis of 95 community pharmacies in Spain, measured their engagement with sustainability practices and assessed these practices in light of the COVID-19 pandemic The results demonstrated the room for improvement in the adoption of green procurement practices in pharmacies and in their engagement with the community Moreover, the study showcased that, during the COVID-19 crisis, the pharmacies with the largest extent of adoption of sustainability practices implemented preventative measures against the pandemic in a more diverse number during the first weeks of the lockdown, compared to their less sustainable counterparts This indicates that, to build resilience to future (health) crises, the implementation of sustainable practices in community pharmacies should be encouraged by both policy makers and pharmaceutical firms

La investigación se enmarca en una relación Universidad-Sociedad civil, que se articula en la Cát... more La investigación se enmarca en una relación Universidad-Sociedad civil, que se articula en la Cátedra Bancos de Alimentos UPM-FESBAL, como un medio para establecer una colaboración estratégica a largo plazo, con el fin de "Trabajar con la gente", para conseguir un consumo racional y solidario. Comprender mejor el proceso de generación de desperdicios en los comedores escolares representa una oportunidad clara para la aplicación de medidas frente al desperdicio alimentario, debido a que la infancia es el mejor momento para crear conciencia sobre la importancia de abordar este problema. El desperdicio en plato en comedores escolares es causado por la poca receptividad de los alumnos frente al menú, lo que se ve afectado por factores propios de cada comensal y por factores contextuales. La presente investigación tiene como objetivo aproximar la cantidad de desperdicio en plato en comedores escolares en España e identificar posibles factores condicionantes a nivel contextual, a partir del análisis de 118 comedores escolares en 14 comunidades autónomas. Los resultados muestran que, a nivel territorial, existen diferencias significativas entre los desperdicios en costa e interior. A nivel de centro educativo, sucede lo mismo entre los desperdicios medidos antes y después de actividades de sensibilización. Finalmente, los resultados muestran que el desperdicio por tipo de menú difiere según la región en la que se ubica el centro educativo, lo que da indicios de la relación entre la región y el grado de aceptación o preferencias por menús. Adopting a vegan diet can be beneficial in addressing public, health, and environmental concerns ... more Adopting a vegan diet can be beneficial in addressing public, health, and environmental concerns associated with increasing levels of meat consumption. However, veganism remains an underdeveloped area of investigation. The majority of studies on dietary lifestyles have focused on vegetarianism and there are only a limited number on consumer adoption of vegan diets and cultural differences in this regard. To close this gap, the study investigates consumers’ cognitive structures for adopting a vegan diet through exploring the hierarchical linkages between vegan product attributes, consequences of vegan product consumption and consumer values in two countries. The data were gathered via semi-structured laddering interviews with vegan consumers in Spain and Israel. These interviews were complemented with projective and enabling techniques to facilitate the elicitation of initial product attributes. The findings of the study reveal that the cognitive structures behind vegan consumption are comprised of abstract (e.g., eco-friendliness) and tangible product attributes (e.g., freshness), functional (feeling healthy) and psychological consequences (feeling guilt-free), as well as terminal (achievement) and instrumental values (self-direction). The study discusses implications for marketing and policymaking.

The participation of SMEs in public procurement is a recurring theme in recent academic literatur... more The participation of SMEs in public procurement is a recurring theme in recent academic literature. However, little attention has been paid to its influence in cross-border procurement. To participate in this market, SMEs must overcome barriers that make the task difficult and minimise their chances of winning contracts. Within this context, dynamic capabilities in general, and networking ones in particular, are crucial to overcome barriers and boost performance. This article presents an abductive qualitative research study of multiple cases using CAQDAS to analyse which networking capabilities prepare SMEs for cross-border public procurement processes. The results show not only how these capabilities have enabled SMEs to perform well in this environment but also which barriers have helped them to overcome each phase of the procurement process. The article also provides recommendations for both SMEs that decide to enter this market and the administrations that wish to support them.

Value co-creation is becoming a mainstream in higher education, as a progress within the ‘Student... more Value co-creation is becoming a mainstream in higher education, as a progress within the ‘Students as Customer’ approach. Furthermore, the development of qualitative studies through reflective methods from students can help instructors and managers. The aim of this research is to explore with the aid of a CAQDAS, 30 students’ reflective statements in two master programs. Findings are presented in terms of value dimensions: functional, emotional and social, and in terms of positive (benefits) and negative (cost) aspects of the experience. The usefulness of introspective methodologies from students is shown in the evaluation of the multidimensional and intercultural educational experience.

As manufacturers face a decreasing channel power, radical innovation in Consumer Packaged Goods r... more As manufacturers face a decreasing channel power, radical innovation in Consumer Packaged Goods represents for them both a risky activity and a necessity. At the same time, retailers keep investing in developing Private Label products. This paper aims to understand the role played by manufacturers and retailers in radical innovations in the CPG industry. Two datasets by Kantar Worldpanel are analysed, including all radical innovations launched in Spain between 2012 and 2016 across the 31 most innovative categories. Results indicate that Manufacturer Brands play a leading role in radical innovation, despite the difficulties they face in achieving distribution and the challenge of Private Label “me-toos”. Furthermore, in most categories with a high number of innovations the growth of PL market share slows down. The paper suggests that manufacturers need to keep innovating in order to hinder the development of private labels and to preserve their position in the channel.

In particular, it examines an extended model of the theory of planned behavior, with the addition of the perceived risk of becoming infected with the disease, locavorism and internal locus of control.Design/methodology/approachThe study employs data collected from an online panel of consumers from the five largest cities in Spain (n = 1,000). In order to embrace sustainability, companies should change their management practices towards more efficient resource use. Food waste being a misuse of resources, we identify its causes and possible ways of minimising it. To achieve this goal, we conducted explorative research with qualitative and quantitative data through in-depth semi-structured interviews and an open questionnaire with top Spanish food service companies. Results show that most businesses mainly tend to minimise food waste according to economic criteria, without taking into account the social, ethical or environmental factors. As a consequence, just "visible" food waste that has an economic impact on the results is minimised. Nevertheless, visibility of real waste is often low. At the same time, awareness of (and therefore initiatives to reduce) food waste that does not directly affect a firm's profit can be increased through multi-stakeholder collaboration. Opportunities for reducing food waste therefore arise from increasing the visibility of food that is discarded as well as addressing plate waste. We identify best practices that could lead to a reduction of the amount of food waste generated in the out of home channel in Spain.

Raw data were collected through a standardised and structured questionnaire (For more information refer to Building and managing sustainable schools: The case of food waste [1]). The variables of the dataset include items relative to the canteen management system, the school sustainability profile and perceptions on food waste generation and management. Additionally, data on the level of implementation and interest on a wide range of potential initiatives to fight against food waste are provided within this article. School-level attributes (e.g. size, infrastructure) are also included.

In order to embrace sustainability, companies should change their management practices towards more efficient resource use. Food waste being a misuse of resources, we identify its causes and possible ways of minimising it. To achieve this goal, we conducted explorative research with qualitative and quantitative data through in-depth semi-structured interviews and an open questionnaire with top Spanish food service companies. Results show that most businesses mainly tend to minimise food waste according to economic criteria, without taking into account the social, ethical or environmental factors. As a consequence, just "visible" food waste that has an economic impact on the results is minimised. Nevertheless, visibility of real waste is often low. At the same time, awareness of (and therefore initiatives to reduce) food waste that does not directly affect a firm's profit can be increased through multi-stakeholder collaboration. Opportunities for reducing food waste therefore arise from increasing the visibility of food that is discarded as well as addressing plate waste. We identify best practices that could lead to a reduction of the amount of food waste generated in the out of home channel in Spain.

Raw data were collected through a standardised and structured questionnaire (For more information refer to Building and managing sustainable schools: The case of food waste [1]). The variables of the dataset include items relative to the canteen management system, the school sustainability profile and perceptions on food waste generation and management. Additionally, data on the level of implementation and interest on a wide range of potential initiatives to fight against food waste are provided within this article. School-level attributes (e.g. size, infrastructure) are also included.
