Panfried Sundried Tomato Stuffed Chicken Breast Wrapped With Parma Ham
Ingredients:
chicken breast
lemon juice
sundried tomatoes
salt+pepper
parma ham
oil
- slice a 'pocket' into the chicken breast
- squeeze a little lemon juice inside the pocket
- stuff with tomatoes
- season with a little salt and pepper
- wrap with ham
- wrap in clingfilm and refridgerate for about an hour
- panfry until cooked through
This would also work with some pesto inside the chicken as well.
A more British version would be stuffed with black pudding and wrapped with bacon. Om nom nom.

Today I made some potato salad.
Ingredients:
new potatoes
mayonnaise
spring onions
lemon juice
salt+pepper
- cook the potatoes and allow to cool. Chop into pieces.
- chop spring onions and place with potatoes in a large bowl.
- mix together the other ingredients to taste
- add mayonnaise to potatoes and mix well
- refridgerate
lol I can't wait until my bento arrives, then I can take this to uni with me!

Tonight was venison with red wine sauce with new potatoes.
Ingredients:
venison steak
butter
garlic
soy sauce
sugar
red wine (I didn't have enough so I used some port too)
salt+pepper
new potatoes
- boil new potatoes
- season venison then fry in a little oil for about 4-5 minutes on each side
- set aside to rest
- melt a small amount of butter in a pan
- add 1 clove finely chopped garlic, cook until golden brown
- add about 1 tbsp soy sauce, 1 tbsp sugar, about half glass of red wine and salt and pepper to taste
- allow to simmer for about 5 minutes before serving
It was really good, the venison was incredibly tender and so delicious! I'm going to make a potato salad later once everyone else is out the way lol.

First post!
Tonight, being that I have little money, I just cooked a steak and made some garlic bread.
I used a rump steak, and seasoned it with salt and pepper before cooking it in sunflower oil and a little of the garlic butter I used for the garlic bread.
For the garlic bread: (makes about 4 big slices of bread)
approx. 50g butter (softened)
1 clove garlic
some parsley
salt+pepper to season
bread (I slices of a big white bloomer... 1kg of bread for £1 yay!)
- crush/finely chop the garlic
- chop parsley
- add both to butter with salt+pepper and mash with a fork until it's mixed in
- spread on a piece of clingfilm and wrap kind of in a sausage shape
- refridgerate for a few hours
- spread liberally on the bread
- place in the oven for 15-20 minutes
It turned out ok... I didn't cook the steak for long enough and thus didn't cook the garlic bread for quite as long as I probably should have. Making the garlic butter did look impressive though lol.
