The dominating group of fungi proliferating on agricultural commodities is Aspergillus, Penicillium, Fusarium, Alternaria, Cladosporium etc. that are able to produce toxic metabolites called mycotoxins. These fungi pose serious phytopathological and mycotoxicological risks at pre harvest and postharvest stages. However the highest flavonoid/ phenolic ratio have been estimated in Lactuca sativa. As a role it is proved by result that leaves are rich source of phenolics and flavonoid content.
