This recipe has all the basic keto-baking ingredients like vanilla extract and baking powder.
I used powdered sweetener to get the perfect texture in the cake. Use a powdered sweetener, don't try to use a granular or liquid one instead, it won't turn out the same.
I also used almond flour. I recommend using almond flour, not almond meal. Almond meal has bits of the almond skin in it and it will make the cake taste grainy.
You can use salted butter instead of unsalted. If you do this, just cut back on how much salt you use in the recipe.

You can cook these even quicker if you use the microwave. Be careful when you do this so that you don't overcook the center of the cakes.
Garnish the cakes with sugar-free whipped cream. You can also add a few raspberries on top. If you add a side of fruit, be careful that you aren't adding too many carbs to it.

This has to be one of the easiest dessert recipes on my site. All you do is mix all the ingredients together in a mixing bowl until it's creamy.
Then, pour the batter into ramekins. Bake them until the outside is firm but there is still a little jiggle in the middle.
You can certainly eat them right out of the ramekins! I know it's going to be tough to wait for them to cool down. That aroma is going to fill your kitchen and make you drool.
If you wait, then you can put the small cake onto a plate and then dust it with some substitute confectioner's sugar.

How Many Carbs Are In This Keto Molten Lava Cake Recipe?
There are only 5 grams of net carbs in each chocolate cake. This amount will change if you add anything to it or make your cakes larger or smaller than mine.
I figured out the net carbs by taking the total amount of carbs and subtracting the amount of fiber.
Can you substitute coconut flour for almond flour?
No, you cannot substitute coconut flour for almond flour without having to change the recipe significantly. Coconut flour absorbs a lot more liquid, so you'll have to add more wet ingredients to this cake to keep it from being too dry.
Are Molten Lava Cakes Safe To Eat?
Yes, they are completely safe to eat. I know this sounds like such a strange question, but it's been asked pretty frequently because you aren't baking the cake completely through.
Eggs only need to be cooked to at least 160 degrees to be safe to eat. This is baked at 350 degrees for 15 minutes, which is plenty long enough to make the cake safe to eat.
Can I Freeze Molten Lava Cake?
Yes, you can freeze these molten lava cakes. Let them cool completely and then wrap them up individually in plastic wrap before you put them in a freezer-safe bag or container.
When you are ready to enjoy one, let it set in the refrigerator overnight to thaw out. Then, heat it in the microwave until it is just heated through - about a minute or so.

▢ 1 tablespoon Almond flour
▢ 2 tablespoon Unsalted Butter melted
▢ 2 large eggs at room temperature
▢ ¼ cup Unsweetened cocoa powder
▢ 3 tablespoon Swerve confectioners sugar substitute

Preheat the oven to 350°F degrees.
In a mixing bowl, combine the ingredients together and beat on high until smooth and creamy.
Pour the batter evenly into two well greased 6-ounce ramekins.
