Sungai Cikaniki telah mengalami penurunan kualitas air yang disebabkan kegiatan manusia, baik yan... more Sungai Cikaniki telah mengalami penurunan kualitas air yang disebabkan kegiatan manusia, baik yang ekstraktif maupun nonekstraktif, yang berpotensi menimbulkan pencemaran. Aktivitas yang berpotensi menjadi ancaman pencemaran di antaranya Penambangan Emas Tanpa Izin (PETI) dan industri pertambangan PT Antam yang berada di sekitar aliran Sungai Cikaniki. Logam berat pencemar di perairan Sungai Cikaniki terdiri dari timbal (Pb), kadmium (Cd), dan merkuri (Hg). Logam berat yang masuk ke badan air juga dapat terakumulasi di dalam tubuh ikan. Penelitian ini bertujuan untuk mengetahui kandungan logam berat timbal, kadmium, dan merkuri di dalam air Sungai Cikaniki dan tubuh ikan Wader (Barbodes binotatus) yang hidup di sungai tersebut. Pengambilan sampel dilakukan secara random purposive sampling di lima stasiun yang mewakili daerah aliran sungai bagian hulu, hilir, kawasan industri emas, area penambangan liar, dan kawasan irigasi. Penelitian dilakukan selama tiga bulan, dari bulan Januari hingga Maret 2020. Pengujian kadar logam berat dalam air dan tubuh ikan dilakukan dengan menggunakan ICP-OES (Inductively Coupled Plasma-Optical Emission Spectrometry). Hasil pengujian menunjukkan kandungan logam berat Pb dan Hg dalam air masih berada di bawah Nilai Ambang Batas (NAB) baku mutu menurut Peraturan Pemerintah Republik Indonesia No. 22 Tahun 2021 Lampiran VI, sedangkan kandungan Cd dalam air Sungai Cikaniki kurang dari 0,02 mg/L. Dalam tubuh ikan Wader, kandungan kadmium adalah < 0,4 mg/kg, sedangkan kandungan merkuri dan timbal telah melebihi nilai ambang batas dari baku mutu WHO tahun 1989. Akumulasi logam berat pada ikan dijumpai paling tinggi berasal dari daerah yang terdapat aktivitas penambangan emas. Analisis korelasi Pearson menunjukkan parameter lingkungan yang paling berpengaruh terhadap kandungan logam berat dalam air dan tubuh ikan adalah suhu air. Keberadaan logam berat di dalam air dan ikan di Sungai Cikaniki harus diwaspadai karena bersifat akumulatif di dalam tubuh manusia.

The Nonthermal method was done by various acid treatment with HCl, HBr and citric acid at room temperature. Thermal method was performed for HCl-leached, HBr-leached, and citric acid-leached corncob in the furnace at 750 ºC for 5 hours. Corncob ash was characterized by Energy Dispersive X-ray fluorescence spectroscopy (EDXRF), Fourier transforms infrared spectroscopy (FTIR), X-Ray diffraction (XRD), and Scanning electron microscope-electron dispersive X-ray (SEM-EDX). In this study silica content increase after acid treatment (leaching) and combustion at high temperatures. The result established that silica is most obtained with HCl treatment that is equal to 79,95% with lower metallic oxide impurity content. Black garlic is a garlic that has been processed through a non-enzymatic browning reaction (Maill... more Black garlic is a garlic that has been processed through a non-enzymatic browning reaction (Maillard reaction) at a certain temperature for a long time, thus producing new compounds which is as an antioxidant. The purpose of this study is to determine the total flavonoid content of the black garlic fraction (Allium Sativum L.) and its antioxidant activity. The first step is the total methanol extract, followed by fractionation method using water, dichloromethane and n-hexane. Flavonoid compounds determine by the Wilstatter method. The analysis of total flavonoids by an external standard method using the UV-Vis spectrophotometer instrument. The last step is to test the antioxidant activity of fraction with highest total flavonoid using Quercetin standard. The results obtained were black garlic extract containing flavonoids. Dichloromethane extract had the highest total flavonoid value of 55.68 mg QE / g extract, followed by water extract and n-hexane extract respectively 10.31 and 5.11 mg QE / g extract. IC50 black garlic value in dichloromethane extract was 361.07 µg / mL so that it was classified as a compound with moderate levels of antioxidants. ABSTRAK Black garlic merupakan produk bawang putih hasil dari proses melalui reaksi pencoklatan non enzimatis suhu tertentu dengan waktu lama, sehingga menghasilkan senyawa baru yang mempunyai efek farmakologis, salah satunya sebagai antioksidan. Tujuan dari penelitian yang dilakukan adalah menentukan kandungan total flavonoid dari fraksi black garlic serta menentukan aktivitas antioksidannya pada fraksi dengan nilai total flavonoid yang tertinggi. Tahap pertama adalah perolehan ekstrak metanol total, selanjutnya ekstraksi fraksinasi menggunakan air, diklorometana dan n-heksana. Tahap kedua adalah uji kualitatif senyawa flavonoid dengan metode Wilstatter. Tahap ketiga adalah analisis total flavonoid dengan metode standar eksternal dengan instrumen Spektrofotometer UV-Vis. Tahap terakhir standar Kuersetin untuk uji aktivitas antioksidan. Hasil yang diperoleh yaitu ekstrak black garlic dalam air, diklorometana, dan n-heksana mengandung flavonoid. Ekstrak diklorometana memiliki nilai total flavonoid paling besar yaitu 55,68 mg QE/g ekstrak, diikuti oleh nilai total flavonoid ekstrak air dan ekstrak n-heksana masing-masing sebesar 10,31 dan 5,11 mg QE/g ekstrak. Nilai IC50 black garlic dalam ekstrak diklorometana sebesar 361,07 µg/mL sehingga digolongkan sebagai senyawa dengan tingkat antioksidan yang sedang. It was chosen as a research location because, along with the Cikaniki river flow, compounds from residential and industrial that use cyanide and mercury for gold ore extraction. Research carried out during March-June 2019. The purpose of this research is to 1) Analyze the condition of Cikaniki river based on macrofauna as a bioindicator, 2) Analyze the value of Cikaniki river pollution index; 3) To know the correlation between Macrofauna abundance with the pollution index value. The selection of observation stations chosen (purposive sampling) based on the consideration of the representation of the state of the waters. Analyze water quality status is carried out using the pollution index method which has been considered comprehensive according to the Decree of the Minister of Environment of the Republic of Indonesia Number 115 of 2003. The results of the study indicate the status of water quality in the Cikaniki River at all stations is mildly polluted.

Salah satu biota yang ada adalah kerang totok(Polymesoda erosa) yang hidup berasosiasi dalam hutan mangrove. Kerang ini memiliki nilai ekonomis yang cukup tinggi. Penelitian ini bertujuan untuk mengetahui korelasi antara kelimpahan komunitas mangrove dan kelimpahan kerang totok (P. erosa), yang disebabkan faktor lingkungan abiotik P. erosa di Segara anakan, Cilacap. Penelitian menggunakan metode survei dan teknik pengambilan sampel. Titik sampling dibuat 11 stasiun dengan tiap stasiun diambil 3 plot. Data dianalisis dengan menggunakan analisis korelasi BIO-ENV. Nilai korelasi faktor lingkungan dengan struktur komunitas mangrove sebesar 0,362, dan nilai korelasi faktor lingkungan dengan kelimpahan P. erosa sebesar 0,412. Nilai korelasi vegetasi mangrove dan kelimpahan kerang totok memiliki nilai sebesar 0,468.

Damage analysis used assessment teristis method (field survey) and than spasial distribution used surfer 9.0 and ArcView GIS 3.2. Biomass analysis and the amount of carbon stock used descriptive methods, damage level correlation and the amount of carbon stock used Pearson correlation analysis (SPSS software vs. 19).The result was Segara anakan mangrove, Cilacap currently was divided into not damage (7 station), damaged (3 station) and heavily damaged (5 station) categories. The amount of biomass and carbon stocks in not damaged area (57,67 tons/ha and 26,50 tons/ha); damaged area (23,40 tons/ha and 10,74 tons/ha, and the heavily damaged area (9,49 tons/ha and 4,37 tons/ha). The destruction of mangrove forest affected the amount of biomass and carbon stocks in Segara anakan, Cilacap.

Since 2009, the Ciliwung River has been polluted condition from upstream. One of the pollutant that could decrease the quality of river water was phosphate. Excessive phosphate level in water bodies caused nutrient enrichment conditions (eutrophication). The presence of nitrate supporting phosphate also caused algae blooming, one of the environmental problem. The research was conducted to determine the dynamics of the phosphate compound of Ciliwung River whether the pollution was reduced, same, or worse. The research included sampling of river water at three points of Katulampa, Pasar Bogor, and Warung Jambu River with sampling time interval of 8 hours in a day for 3 weeks in a row. The data of phosphate and nitrate concentration were measured and compared to the results in PP No.82 year 2001. The total of phosphate in Ciliwung river water has exceeded threshold level in accordance with the environmental quality standard of PP. 82 year 2001, and has been indicated to be in eutrophication condition. ABSTRAK Sungai Ciliwung telah ada dan menjadi bagian penting masyarakat sejak zaman purba. Namun seiring dengan berlalunya waktu dan perkembangan pesat, sejak tahun 2009 Sungai Ciliwung telah tercemar dari hulu. Salah satu polutan yang bisa menurunkan kualitas air sungai adalah fosfat. Keberadaan fosfat yang berlebihan di badan air dapat menyebabkan kondisi pengayaan nutrisi (eutrofikasi), dan dengan dukungan nitrat dapat menyebabkan algae blooming yang menjadi salah satu masalah lingkungan. Penelitian ini dilakukan untuk mengetahui dinamika senyawa fosfat Sungai Ciliwung apakah pencemarannya berkurang, sama, atau lebih buruk. Ruang lingkup penelitian meliputi pengambilan sampel air sungai pada tiga titik Katulampa, Pasar Bogor, dan Warung Jambu dengan interval waktu sampling 8 jam dalam sehari, dan dilakukan setiap minggu selama 3 minggu berturut-turut. Kemudian dilakukan analisis sampel di laboratorium, serta interpretasi data dengan membandingkan hasilnya terhadap PP No.82 tahun 2001. Nilai total fosfat di air sungai Ciliwung Hulu tidak memenuhi standar kualitas lingkungan PP. 82 tahun 2001, dan diindikasikan berada dalam kondisi eutrofikasi.

Arabica coffee has superior quality and taste compared to others. Coffee has been widely processed into grounded coffee products. The quality of ground coffee is influenced by many factors; one of them is processing. In the processing of coffee fruit into coffee beans the process that is certain to occur is fermentation. Fermentation affects ground coffee quality products. This study focused on observing the quality of arabica ground coffee fermented by Saccharomyces cerevisiae. The quality parameters of the ground coffee observed include water content, coffee extract and caffeine content. Other qualities supporting parameters are pH of ground coffee and phytochemical test. In addition, the fermentation pH was also observed in the fermentation process, reducing sugar content and qualitative testing of ethanol. Saccharomyces cerevisiae concentration was varied 0% (K0), 1% (K1), 2% (K2), 3% (K3) and 4% (K4) with duration of fermentation is for 24 hours. The quality of arabica ground coffee products is in accordance with SNI Ground Coffee 01-3542-2004 with the following values: Water content 2,3-1,6% b/b. Coffee extract 30,7-30,3% b/b. Caffeine content 1,18-1,01% b/b. The pH of brewed ground coffee is 6,5-5,1. Alkaloids, saponins and tannins were detected in all different treatments of ground coffee samples. Flavonoids were only detected in the treatment of K0 ground coffee samples. The fermentation pH at the initial state was 5,61 and after fermentation was 4,91-3,89. Reducing sugar content at the initial state was 32,35% b/b and after fermentation 21,2-4,3% b/b. Ethanol was detected in all samples before and after fermentation. ABSTRAK Kopi merupakan salah satu komoditi perkebunan yang memiliki nilai ekonomis cukup tinggi diantara tanaman perkebunan lainnya. Kopi Arabika memiliki karakteristik dan cita rasa superior dibanding yang lainnya. Kopi banyak diolah menjadi produk kopi bubuk. Karakteristik kopi bubuk dipengaruhi oleh banyak faktor, diantaranya adalah cara pengolahan. Pengolahan dari buah kopi menjadi biji kopi salah satu proses yang pasti dilalui, yaitu fermentasi. Penelitian ini difokuskan pada karakterisasi kopi bubuk Arabika hasil fermentasi menggunakan Saccharomyces cerevisiae. Parameter yang diamati meliputi kadar air, sari kopi dan kadar kafein. Parameter penunjang lainnya, yaitu pH seduhan kopi bubuk dan uji fitokimia. Selain itu, selama proses fermentasi diamati pH fermentasi, kadar gula pereduksi dan uji kualitatif etanol. Konsentrasi S. cerevisiae divariasikan 0% (K0), 1% (K1), 2% (K2), 3% (K3) dan 4% (K4) dengan waktu fermentasi selama 24 jam. Karakteristik kopi bubuk Arabika yang dihasilkan sesuai dengan SNI Kopi Bubuk Nomor 01-3542-2004 yaitu kadar air 2,33-1,6% b/b, sari kopi 30,7-30,3% b/b, kadar kafein 1,18-1,01% b/b dan pH seduhan kopi bubuk 6,5-5,1. Alkaloid, saponin dan tanin terdeteksi pada semua perlakuan sampel kopi bubuk. Flavonoid hanya terdeteksi pada perlakuan sampel kopi bubuk K0. pH fermentasi pada keadaan awal 5,61 dan setelah fermentasi 4,91-3,89. Kadar gula pereduksi pada keadaan awal 32,35% b/b dan setelah fermentasi 21,2-4,3% b/b. Etanol terdeteksi pada semua sampel sebelum dan setelah fermentasi.

Aktivitas yang berpotensi menjadi ancaman pencemaran di antaranya Penambangan Emas Tanpa Izin (PETI) dan industri pertambangan PT Antam yang berada di sekitar aliran Sungai Cikaniki. Logam berat pencemar di perairan Sungai Cikaniki terdiri dari timbal (Pb), kadmium (Cd), dan merkuri (Hg). Logam berat yang masuk ke badan air juga dapat terakumulasi di dalam tubuh ikan. Penelitian ini bertujuan untuk mengetahui kandungan logam berat timbal, kadmium, dan merkuri di dalam air Sungai Cikaniki dan tubuh ikan Wader (Barbodes binotatus) yang hidup di sungai tersebut. Pengambilan sampel dilakukan secara random purposive sampling di lima stasiun yang mewakili daerah aliran sungai bagian hulu, hilir, kawasan industri emas, area penambangan liar, dan kawasan irigasi. Penelitian dilakukan selama tiga bulan, dari bulan Januari hingga Maret 2020. Pengujian kadar logam berat dalam air dan tubuh ikan dilakukan dengan menggunakan ICP-OES (Inductively Coupled Plasma-Optical Emission Spectrometry). Hasil pengujian menunjukkan kandungan logam berat Pb dan Hg dalam air masih berada di bawah Nilai Ambang Batas (NAB) baku mutu menurut Peraturan Pemerintah Republik Indonesia No. 22 Tahun 2021 Lampiran VI, sedangkan kandungan Cd dalam air Sungai Cikaniki kurang dari 0,02 mg/L. Dalam tubuh ikan Wader, kandungan kadmium adalah < 0,4 mg/kg, sedangkan kandungan merkuri dan timbal telah melebihi nilai ambang batas dari baku mutu WHO tahun 1989. Akumulasi logam berat pada ikan dijumpai paling tinggi berasal dari daerah yang terdapat aktivitas penambangan emas. Analisis korelasi Pearson menunjukkan parameter lingkungan yang paling berpengaruh terhadap kandungan logam berat dalam air dan tubuh ikan adalah suhu air. Keberadaan logam berat di dalam air dan ikan di Sungai Cikaniki harus diwaspadai karena bersifat akumulatif di dalam tubuh manusia.

The Nonthermal method was done by various acid treatment with HCl, HBr and citric acid at room temperature. Thermal method was performed for HCl-leached, HBr-leached, and citric acid-leached corncob in the furnace at 750 ºC for 5 hours. Corncob ash was characterized by Energy Dispersive X-ray fluorescence spectroscopy (EDXRF), Fourier transforms infrared spectroscopy (FTIR), X-Ray diffraction (XRD), and Scanning electron microscope-electron dispersive X-ray (SEM-EDX). In this study silica content increase after acid treatment (leaching) and combustion at high temperatures. Black garlic is a garlic that has been processed through a non-enzymatic browning reaction (Maill... more Black garlic is a garlic that has been processed through a non-enzymatic browning reaction (Maillard reaction) at a certain temperature for a long time, thus producing new compounds which is as an antioxidant. The purpose of this study is to determine the total flavonoid content of the black garlic fraction (Allium Sativum L.) and its antioxidant activity. The first step is the total methanol extract, followed by fractionation method using water, dichloromethane and n-hexane. Flavonoid compounds determine by the Wilstatter method. The analysis of total flavonoids by an external standard method using the UV-Vis spectrophotometer instrument. The last step is to test the antioxidant activity of fraction with highest total flavonoid using Quercetin standard. The results obtained were black garlic extract containing flavonoids. Dichloromethane extract had the highest total flavonoid value of 55.68 mg QE / g extract, followed by water extract and n-hexane extract respectively 10.31 and 5.11 mg QE / g extract. IC50 black garlic value in dichloromethane extract was 361.07 µg / mL so that it was classified as a compound with moderate levels of antioxidants. Tujuan dari penelitian yang dilakukan adalah menentukan kandungan total flavonoid dari fraksi black garlic serta menentukan aktivitas antioksidannya pada fraksi dengan nilai total flavonoid yang tertinggi. Tahap pertama adalah perolehan ekstrak metanol total, selanjutnya ekstraksi fraksinasi menggunakan air, diklorometana dan n-heksana. Tahap kedua adalah uji kualitatif senyawa flavonoid dengan metode Wilstatter. Tahap ketiga adalah analisis total flavonoid dengan metode standar eksternal dengan instrumen Spektrofotometer UV-Vis. Tahap terakhir standar Kuersetin untuk uji aktivitas antioksidan. Hasil yang diperoleh yaitu ekstrak black garlic dalam air, diklorometana, dan n-heksana mengandung flavonoid. Ekstrak diklorometana memiliki nilai total flavonoid paling besar yaitu 55,68 mg QE/g ekstrak, diikuti oleh nilai total flavonoid ekstrak air dan ekstrak n-heksana masing-masing sebesar 10,31 dan 5,11 mg QE/g ekstrak. Nilai IC50 black garlic dalam ekstrak diklorometana sebesar 361,07 µg/mL sehingga digolongkan sebagai senyawa dengan tingkat antioksidan yang sedang. Analyze water quality status is carried out using the pollution index method which has been considered comprehensive according to the Decree of the Minister of Environment of the Republic of Indonesia Number 115 of 2003. The results of the study indicate the status of water quality in the Cikaniki River at all stations is mildly polluted.

According to the International Conservation Agency, the existence of the animal is approaching extinction. Taman Marga Satwa Ragunan is one of Sumatran tiger conservation institution. The purpose of the research was to know the breeding of Sumatran tiger in Ragunan Wildlife Park conservation area, to know the proper conservation strategy for Sumatran tiger and to know Sumatran tiger activity ex-situ. The research was conducted at the Sumatran Tiger in Taman Marga Satwa Ragunan. Data were analyzed by descriptive analysis. Taman Marga Satwa Ragunan has made a proper effort in tiger conservation, this is marked by an increase in the Sumatran Tiger population.

One of the biota totok clam (Polymesoda erosa) that live in mangrove forests. These clams have high economic value. The study aimed to determine the correlation of abundance between mangrove community and totok clam (P. erosa) , because of abiotic environmental factors in Segara Anakan , Cilacap. Research using survey methods and sampling techniques. Sampling point were 11 stations and were 3 plot sampling respectively. The data analyzed using correlation analysis of BIO-ENV. The correlation value of the environmental factors and mangrove community was 0.362 , and the correlation value of the environmental factor and the abundance of P. erosa was 0.412. The correlation value of mangrove vegetation with an abundance Polymesoda erosa had a value of 0.468. ABSTRAK Ekosistem Segara Anakan merupakan salah satu estuaria terbesar di Pulau Jawa yang memiliki keanekaragaman hayati yang tinggi. Salah satu biota yang ada adalah kerang totok(Polymesoda erosa) yang hidup berasosiasi dalam hutan mangrove. Kerang ini memiliki nilai ekonomis yang cukup tinggi. Penelitian ini bertujuan untuk mengetahui korelasi antara kelimpahan komunitas mangrove dan kelimpahan kerang totok (P. erosa), yang disebabkan faktor lingkungan abiotik P. erosa di Segara anakan, Cilacap. Penelitian menggunakan metode survei dan teknik pengambilan sampel. Titik sampling dibuat 11 stasiun dengan tiap stasiun diambil 3 plot. Data dianalisis dengan menggunakan analisis korelasi BIO-ENV. Nilai korelasi faktor lingkungan dengan struktur komunitas mangrove sebesar 0,362, dan nilai korelasi faktor lingkungan dengan kelimpahan P. erosa sebesar 0,412. Nilai korelasi vegetasi mangrove dan kelimpahan kerang totok memiliki nilai sebesar 0,468.

Segara anakan is one of mangroves region which located at 108 º 46'-109 º 03 'E and 07 º 34'-07 º 47 'South Latitude. Human activities series in Segara anakan mangrove lead the damage of this region, it affects to the ecological and biological or mangrove function as carbon storage place. The aims of this research was to analyze the damage level of mangrove in Segara anakan, Cilacap; to know the spatial distribution of mangrove damage level in Segara anakan; analyze the amount of biomass and carbon stocks at various of damage level in Segara anakan, and to know the number corelation of carbon stocks with damage level in Segara anakan, Cilacap.The research used survey method with purposive random sampling that determine the sampling location based on the damage level. Damage analysis used assessment teristis method (field survey) and than spasial distribution used surfer 9.0 and ArcView GIS 3.2. Biomass analysis and the amount of carbon stock used descriptive methods, damage level correlation and the amount of carbon stock used Pearson correlation analysis (SPSS software vs. 19).The result was Segara anakan mangrove, Cilacap currently was divided into not damage (7 station), damaged (3 station) and heavily damaged (5 station) categories. The amount of biomass and carbon stocks in not damaged area (57,67 tons/ha and 26,50 tons/ha); damaged area (23,40 tons/ha and 10,74 tons/ha, and the heavily damaged area (9,49 tons/ha and 4,37 tons/ha). The destruction of mangrove forest affected the amount of biomass and carbon stocks in Segara anakan, Cilacap.

Since 2009, the Ciliwung River has been polluted condition from upstream. One of the pollutant that could decrease the quality of river water was phosphate. Excessive phosphate level in water bodies caused nutrient enrichment conditions (eutrophication). The presence of nitrate supporting phosphate also caused algae blooming, one of the environmental problem. The research was conducted to determine the dynamics of the phosphate compound of Ciliwung River whether the pollution was reduced, same, or worse. The research included sampling of river water at three points of Katulampa, Pasar Bogor, and Warung Jambu River with sampling time interval of 8 hours in a day for 3 weeks in a row. The data of phosphate and nitrate concentration were measured and compared to the results in PP No.82 year 2001. The total of phosphate in Ciliwung river water has exceeded threshold level in accordance with the environmental quality standard of PP. 82 year 2001, and has been indicated to be in eutrophication condition. ABSTRAK Sungai Ciliwung telah ada dan menjadi bagian penting masyarakat sejak zaman purba. Namun seiring dengan berlalunya waktu dan perkembangan pesat, sejak tahun 2009 Sungai Ciliwung telah tercemar dari hulu. Salah satu polutan yang bisa menurunkan kualitas air sungai adalah fosfat. Keberadaan fosfat yang berlebihan di badan air dapat menyebabkan kondisi pengayaan nutrisi (eutrofikasi), dan dengan dukungan nitrat dapat menyebabkan algae blooming yang menjadi salah satu masalah lingkungan. Penelitian ini dilakukan untuk mengetahui dinamika senyawa fosfat Sungai Ciliwung apakah pencemarannya berkurang, sama, atau lebih buruk. Ruang lingkup penelitian meliputi pengambilan sampel air sungai pada tiga titik Katulampa, Pasar Bogor, dan Warung Jambu dengan interval waktu sampling 8 jam dalam sehari, dan dilakukan setiap minggu selama 3 minggu berturut-turut. Kemudian dilakukan analisis sampel di laboratorium, serta interpretasi data dengan membandingkan hasilnya terhadap PP No.82 tahun 2001. Nilai total fosfat di air sungai Ciliwung Hulu tidak memenuhi standar kualitas lingkungan PP. 82 tahun 2001, dan diindikasikan berada dalam kondisi eutrofikasi.

Arabica coffee has superior quality and taste compared to others. Coffee has been widely processed into grounded coffee products. The quality of ground coffee is influenced by many factors; one of them is processing. In the processing of coffee fruit into coffee beans the process that is certain to occur is fermentation. Fermentation affects ground coffee quality products. This study focused on observing the quality of arabica ground coffee fermented by Saccharomyces cerevisiae. The quality parameters of the ground coffee observed include water content, coffee extract and caffeine content. Other qualities supporting parameters are pH of ground coffee and phytochemical test. In addition, the fermentation pH was also observed in the fermentation process, reducing sugar content and qualitative testing of ethanol. Saccharomyces cerevisiae concentration was varied 0% (K0), 1% (K1), 2% (K2), 3% (K3) and 4% (K4) with duration of fermentation is for 24 hours. The quality of arabica ground coffee products is in accordance with SNI Ground Coffee 01-3542-2004 with the following values: Water content 2,3-1,6% b/b. Coffee extract 30,7-30,3% b/b. Caffeine content 1,18-1,01% b/b. The pH of brewed ground coffee is 6,5-5,1. Alkaloids, saponins and tannins were detected in all different treatments of ground coffee samples. Flavonoids were only detected in the treatment of K0 ground coffee samples. The fermentation pH at the initial state was 5,61 and after fermentation was 4,91-3,89. Reducing sugar content at the initial state was 32,35% b/b and after fermentation 21,2-4,3% b/b. Ethanol was detected in all samples before and after fermentation. ABSTRAK Kopi merupakan salah satu komoditi perkebunan yang memiliki nilai ekonomis cukup tinggi diantara tanaman perkebunan lainnya. Kopi Arabika memiliki karakteristik dan cita rasa superior dibanding yang lainnya. Kopi banyak diolah menjadi produk kopi bubuk. Karakteristik kopi bubuk dipengaruhi oleh banyak faktor, diantaranya adalah cara pengolahan. Pengolahan dari buah kopi menjadi biji kopi salah satu proses yang pasti dilalui, yaitu fermentasi. Penelitian ini difokuskan pada karakterisasi kopi bubuk Arabika hasil fermentasi menggunakan Saccharomyces cerevisiae. Parameter yang diamati meliputi kadar air, sari kopi dan kadar kafein. Parameter penunjang lainnya, yaitu pH seduhan kopi bubuk dan uji fitokimia. Selain itu, selama proses fermentasi diamati pH fermentasi, kadar gula pereduksi dan uji kualitatif etanol. Konsentrasi S. cerevisiae divariasikan 0% (K0), 1% (K1), 2% (K2), 3% (K3) dan 4% (K4) dengan waktu fermentasi selama 24 jam. Karakteristik kopi bubuk Arabika yang dihasilkan sesuai dengan SNI Kopi Bubuk Nomor 01-3542-2004 yaitu kadar air 2,33-1,6% b/b, sari kopi 30,7-30,3% b/b, kadar kafein 1,18-1,01% b/b dan pH seduhan kopi bubuk 6,5-5,1. Alkaloid, saponin dan tanin terdeteksi pada semua perlakuan sampel kopi bubuk. Flavonoid hanya terdeteksi pada perlakuan sampel kopi bubuk K0. pH fermentasi pada keadaan awal 5,61 dan setelah fermentasi 4,91-3,89. Kadar gula pereduksi pada keadaan awal 32,35% b/b dan setelah fermentasi 21,2-4,3% b/b. Etanol terdeteksi pada semua sampel sebelum dan setelah fermentasi.
