An ethnobotanical survey of plants has been carried out in Targuist area (North of Morocco), it a... more An ethnobotanical survey of plants has been carried out in Targuist area (North of Morocco), it aimed to collect information on the medical and cosmetic uses of plants. By using 3500 questionnaires, ethnobotanical survey was conducted during two periods (2016 and 2017), with traditional herbalists and users of these plants. The analysis of results identified 90 plants distributed in 43 families with a dominance of the lamiaceae (15.28%). The survey revealed that leaves were the most used part of the plants (43%) and the majority preparation used was a decoction (36.6%). Digestive diseases represent the most cited diseases (31%).

L'utilisation des techniques de mesure de l'accumulation d'amp cyclique (ampc) et de ... more L'utilisation des techniques de mesure de l'accumulation d'amp cyclique (ampc) et de la concentration intracellulaire de calcium (ca++i) nous a permis de definir plusieurs proprietes de l'inhibition par le pge2 de l'accumulation d'ampc induite par l'avp dans le canal collecteur medullaire de rat: 1) l'effet inhibiteur de la pge2 n'est pas bloque par la toxine de bordetella pertussis; 2) il disparait en milieu depourvu de calcium; 3) il est analogue a celui induit par de faibles concentrations d'ionophores a calcium; 4) il est bloque par l'addition de bapta; 5) la pge2 augmente le ca++i par une entree de ca++ a partir du milieu extracellulaire et par une liberation des reserves intracellulaires de calcium qui sont en partie celles mobilisees par l'avp; 6) l'activation de la proteine kinase c bloque l'inhibition par la pge2 en interferant avec l'augmentation de ca++i induite par cet agoniste; 7) le blocage de toutes les phosphodiesterases empeche l'effet inhibiteur de la pge2. L'utilisation d'inhibiteurs specifiques des differentes categories de phosphodiesterase suggere que l'inhibition par la pge2 de l'accumulation d'ampc est due a l'activation de phosphodiesterases dependantes du complexe calcium/calmoduline. Background: Natural resources are key for discovering medicinal compounds. Hence, the objective o... more Background: Natural resources are key for discovering medicinal compounds. Hence, the objective of this study was to evaluate the immunomodulatory activities of Cucurbita maxima (pumpkin) seeds, a component of Moroccan folk medicine believed to enhance immunity. Methods: We produced three distinct extracts employing ethanol, ethyl acetate, and water as solvents. The immunomodulatory effects of these extracts were assessed on rabbit immune cell proliferation and their functions, including IgG production, cytotoxicity, and phagocytosis. Results: The study findings reveal a significant stimulation in thymocyte proliferation, yielding a remarkable 285.7% response, along with a 146.5% increase in cytotoxicity (MLR) in response to the aqueous extract. Furthermore, there was a notable enhancement in complement activity by 119.9% in response to the aqueous extract, implying the potential of C. maxima to modulate both humoral and cellular immunity. Additionally, both EtOAc and aqueous extracts led to a reduction in macrophage phagocytic function. The assessment of the antibacterial properties of ethanol extract showed greater effectiveness against Bacillus, E. Coli, and Staphylococcus. In a separate analysis, antioxidant activity was gauged through DPPH, FRAP, and ABTS methods. These tests exhibited robust antioxidative effects across all extracts, characterized by higher levels of phenolic and flavonoid content. The FT-IR spectrum indicated the presence of compounds such as triglycerides, sterol esters, phospholipids, and unsaturated fatty acids in the extracts. Conclusion: Collectively, these outcomes prompt the consideration of utilizing the aqueous extract of Cucurbita maxima to strengthen humoral and cellular immunity, as well as lymphocyte toxicity, in various ailments.

Background: The aim of this study was to assess the sensitivity profile of the population of Fez ... more Background: The aim of this study was to assess the sensitivity profile of the population of Fez and Casablanca in Morocco to dry broad bean (Vicia faba), and to investigate the effect of food processing (heat and/or enzymatic hydrolysis by pepsin) on the human IgE binding capacity to broad bean proteins (BBP). Methods: Sera samples from 146 patients with atopic hypersensitivity were recruited in order to evaluate specific IgE levels to native and processed broad bean proteins by ELISA. Under the same conditions, we assessed the immunoreactivity of rabbit IgG obtained by immunisation with native BBP. Results: High IgE levels to BBP were found; in fact, 79.3% of children and 80.4% of adults had positive values. The heat treatment (70 • C during 60 min) of dry beans proteins showed slight reduction in recognition of these antigens by rabbit IgG (22%) and by human IgE (12%). Pepsin hydrolysis decreased rabbit-IgG recognition by 55% in the first 30 min of treatment. In contrast, and under the same conditions, pepsin increased human-IgE recognition with an average of 143% for all patients. However, the combination of the two treatments (heating and pepsin digestion) showed a decrease of 16% in BBP recognition for all patients. Conclusions: This study demonstrates a high sensitivity of a Moroccan population to broad bean proteins which was resistant to heat and digestion by pepsin.
This paper examines the marketing system for fish products at the Nouakchott fish market. Halieut... more This paper examines the marketing system for fish products at the Nouakchott fish market. Halieutic products exploited at market level come exclusively from artisanal fisheries and are of marine origin. The survey showed that there are 36 pelagic and demersal species, 7 crustacean species and 7 species of molluscs, these species are of significant commercial. Exporters (wholesalers) are interested in marketing their products to the countries of Europe (Spain, France and Portugal) followed by North Africa (Tunisia and Algeria), West Africa (Benin and Ivory Coast) and Japan. Fresh species account for 72% of exports and frozen 28%. The hygienic situation remains insufficient in the facilities dedicated to retailers, and the conditions of transport and conservation to be improved.

The aim of this study was to investigate the immunomodulatory activities of protein fractions iso... more The aim of this study was to investigate the immunomodulatory activities of protein fractions isolated from Delphinium staphysagria seeds used in Moroccan traditional medicine. D. staphysagria protein extract has been separated on sephadex column chromatography. The immunomodulatory activities were tested using primary culture of rabbit lymphocytes (splenocytes and thymocytes), by evaluation of macrophage phagocytosis and by studying the hemagglutination effect of proteins separated by chromatography. Three protein fractions were isolated on sephadex column. At 0.1mg/ml, these fractions didn't show any cytotoxic effect against lymphocytes. The fraction F1 with the high molecular weight of 115 kDa exhibited a mitogenic action on splenocytes and positive hemagglutinating activity associated to inhibition of macrophage phagocytosis capacity. The second protein fraction F2 was about 11 kDa inhibited phagocytosis without affecting lymphocytes proliferation. The third fraction F3 was the smallest with 2.25 kDa indicated a stimulatory effect on both splenocytes and thymocytes proliferation without hemagglutinating activity but inducing decrease of macrophage phagocytosis. In conclusion, protein fractions isolated from D. staphysagria have no cytotoxic effect. The fraction F3 acted as an immunostimulating by enhancing proliferation of thymocytes and splenocytes while the F1 stimulated preferentially splenocytes via probably lectin pathway. All fractions studied decreased phagocytosis impairing the antigen presentation to lymphocytes.
The aim of this study was to evaluate the microbiological quality and mycotoxic presence in peanu... more The aim of this study was to evaluate the microbiological quality and mycotoxic presence in peanuts and highlight the eating habits, distribution channels, and health stores in different areas of the city of Fes. The results of this study show that the majority of consumers buy peanuts in bulk from the nearest grocer whose purchases are casual in Ramadan and especially during religious festivals. The analysis showed that the health stores and equipments require a deep review to avoid contamination. The microbiological analysis showed that wholesalers and retailers represent the highest non compliance compared to supermarkets; however the percentage of compliance in all samples does not exceed 50 to 60%. The Samples analyzed did not contain aflatoxin B1, which allows us to think that the samples are not contaminated with fungal species secreting aflatoxin. This work has also helped to develop a basis for rapid microbiological tests on liquid medium.

Thirteen Jamaican-grown food crops − ackee (Blighia sapida), banana (Musa acuminate), cabbage (Br... more Thirteen Jamaican-grown food crops − ackee (Blighia sapida), banana (Musa acuminate), cabbage (Brassica oleracea), carrot (Daucus carota), cassava (Manihot esculenta), coco (Xanthosoma sagittifolium), dasheen (Colocasia esculenta), Irish potato (Solanum tuberosum), pumpkin (Cucurbita pepo), sweet pepper (Capsicum annuum), sweet potato (Ipomoea batatas), tomato (Solanum lycopersicum) and turnip (Brassica rapa) − were analysed for aluminium, arsenic, cadmium and lead by atomic absorption spectrophotometry and instrumental neutron activation analysis. The fresh weight mean concentrations in these food crops (4.25-93.12 mg/kg for aluminium; 0.001-0.104 mg/kg for arsenic; 0.015-0.420 mg/kg for cadmium; 0.003-0.100 mg/kg for lead) were used to calculate the estimated daily intake (EDI), target hazard quotient (THQ), hazard index (HI) and target cancer risk (TCR) for arsenic, associated with dietary exposure to these potentially toxic elements. Each food type had a THQ and HI < 1 indicating no undue non-carcinogenic risk from exposure to a single or multiple potentially toxic elements from the same food. The TCR for arsenic in these foods were all below 1 × 10 −4 , the upper limit used for acceptable cancer risk. There is no significant health risk to the consumer associated with the consumption of these Jamaican-grown food crops.

The aim of this work was to study the effect of industrial processing on the allergenicity of thr... more The aim of this work was to study the effect of industrial processing on the allergenicity of three commonly consumed Moroccan fish species in Fez region (sardine, common pandora, and shrimp). Methods. This work was conducted by a sera-bank obtained from 1248 patients recruited from Fez Hospitals. Their sera were analyzed for specific IgE binding to raw fish extracts. Among them, 60 patients with higher specific IgE levels were selected, and used to estimate the binding variation of IgE to these products under several processing (frying, cooking, canning, marinade, and fermentation) using ELISA analysis. Results. ELISA results demonstrated that all the studied processing cause a reduction in the immunoreactivity of human IgE to fish products, with a high action with marinade and fermentation compared to other processing. This alteration was also observed with rabbit IgG in all processed products, showing that the maximum reduction was marked in fermented sardine with 64.5%, in cooked common pandora with 58%, and in fermented shrimp with 69.2%. Conclusion. In conclusion, our study has shown that the allergenicity of the three studied fish could be reduced by different industrial processes with different degrees.

Objective.-The aim of the present study was to evaluate the prevalence of self-reported allergy t... more Objective.-The aim of the present study was to evaluate the prevalence of self-reported allergy to fish and shellfish among school children and its relation to breastfeeding. Patients and methods.-The study was based on a survey conducted between April 2014 and March 2015 in middle and high schools in Fez city and its surrounding areas. The total study population numbered 3010 people. Results.-The results show that 9.5% of children reported an allergy to fish and shellfish. Of these, 7% reported an allergy to sardines, 2.5% to mackerel and 2.1% to shrimps. The most common clinical manifestations observed in this population were cutaneous reactions (80.1%). The study of the effect of breastfeeding on self-reported fish allergy showed that such allergies were more frequent among children who have not been breastfed than in those who had, for all the types of fish studied (15.4% vs. 7.3%; P < 0.0001). Conclusion.-Self-reported allergy to fish and shellfish among schoolchildren, totalling 9.5%, indicates extensive sensitivity of school children to fish and shellfish. We showed that breastfed children were at lower risk of developing fish allergy than those who were not breastfed.

The work is based on a serum bank consisting of 146 sera from patients with suspected allergy. The evaluation of specific IgE to chicken meat showed that 46% of children and 38% of adults have positive values with 12.3% of children and 10% of adults have a higher rate than 20 UI/mL. This high sensitivity shows only partial cross-recognition to the egg whites ranging from 16 to 60%. Heat treatment of meat proteins in chicken showed that more than 80% of these patients show a decrease in the recognition of proteins above 30% after 1 hour at 80 • C. This demonstrates a high thermolability of epitopes recognized by sera from these patients indicating conformational antigenic sites rather than sequential.

The aim of the present study is to evaluate the effect of heat-treatment and enzymatic hydrolysis... more The aim of the present study is to evaluate the effect of heat-treatment and enzymatic hydrolysis on the allergenicity of cow's milk α-lactalbumin (α-LA) in a Moroccan population. A total of 557 patients were recruited from the University Hospital Complex and the Ibn El Khatib Hospital of Fez city. This population consented to realize a dosage of IgE levels to raw cow milk and then to α-LA native and treated with the studied treatments. The results revealed that 54.4% of the studied subjects presented positive values of serial IgE to raw cow milk. The effect of treatments on the allergenicity of α-LA showed that heat-treatment at 90°C and pepsin hydrolysis at 37°C, for 1 hour each, caused an important decrease in the IgE binding with an average of reduction of 59% and 74%, respectively.

The survey showed that there are 36 pelagic and demersal species, 7 crustacean species and 7 species of molluscs, these species are of significant commercial. Exporters (wholesalers) are interested in marketing their products to the countries of Europe (Spain, France and Portugal) followed by North Africa (Tunisia and Algeria), West Africa (Benin and Ivory Coast) and Japan. Fresh species account for 72% of exports and frozen 28%. The hygienic situation remains insufficient in the facilities dedicated to retailers, and the conditions of transport and conservation to be improved.

The aim of this study was to investigate the immunomodulatory activities of protein fractions iso... more The aim of this study was to investigate the immunomodulatory activities of protein fractions isolated from Delphinium staphysagria seeds used in Moroccan traditional medicine. D. staphysagria protein extract has been separated on sephadex column chromatography. The immunomodulatory activities were tested using primary culture of rabbit lymphocytes (splenocytes and thymocytes), by evaluation of macrophage phagocytosis and by studying the hemagglutination effect of proteins separated by chromatography. Three protein fractions were isolated on sephadex column. At 0.1mg/ml, these fractions didn't show any cytotoxic effect against lymphocytes. The fraction F1 with the high molecular weight of 115 kDa exhibited a mitogenic action on splenocytes and positive hemagglutinating activity associated to inhibition of macrophage phagocytosis capacity. The second protein fraction F2 was about 11 kDa inhibited phagocytosis without affecting lymphocytes proliferation. The third fraction F3 was the smallest with 2.25 kDa indicated a stimulatory effect on both splenocytes and thymocytes proliferation without hemagglutinating activity but inducing decrease of macrophage phagocytosis. In conclusion, protein fractions isolated from D. staphysagria have no cytotoxic effect. The fraction F3 acted as an immunostimulating by enhancing proliferation of thymocytes and splenocytes while the F1 stimulated preferentially splenocytes via probably lectin pathway. All fractions studied decreased phagocytosis impairing the antigen presentation to lymphocytes.
The aim of this study was to evaluate the microbiological quality and mycotoxic presence in peanu... more The aim of this study was to evaluate the microbiological quality and mycotoxic presence in peanuts and highlight the eating habits, distribution channels, and health stores in different areas of the city of Fes. The results of this study show that the majority of consumers buy peanuts in bulk from the nearest grocer whose purchases are casual in Ramadan and especially during religious festivals. The analysis showed that the health stores and equipments require a deep review to avoid contamination. The microbiological analysis showed that wholesalers and retailers represent the highest non compliance compared to supermarkets; however the percentage of compliance in all samples does not exceed 50 to 60%. The Samples analyzed did not contain aflatoxin B1, which allows us to think that the samples are not contaminated with fungal species secreting aflatoxin. This work has also helped to develop a basis for rapid microbiological tests on liquid medium.

Thirteen Jamaican-grown food crops − ackee (Blighia sapida), banana (Musa acuminate), cabbage (Br... more Thirteen Jamaican-grown food crops − ackee (Blighia sapida), banana (Musa acuminate), cabbage (Brassica oleracea), carrot (Daucus carota), cassava (Manihot esculenta), coco (Xanthosoma sagittifolium), dasheen (Colocasia esculenta), Irish potato (Solanum tuberosum), pumpkin (Cucurbita pepo), sweet pepper (Capsicum annuum), sweet potato (Ipomoea batatas), tomato (Solanum lycopersicum) and turnip (Brassica rapa) − were analysed for aluminium, arsenic, cadmium and lead by atomic absorption spectrophotometry and instrumental neutron activation analysis. The fresh weight mean concentrations in these food crops (4.25-93.12 mg/kg for aluminium; 0.001-0.104 mg/kg for arsenic; 0.015-0.420 mg/kg for cadmium; 0.003-0.100 mg/kg for lead) were used to calculate the estimated daily intake (EDI), target hazard quotient (THQ), hazard index (HI) and target cancer risk (TCR) for arsenic, associated with dietary exposure to these potentially toxic elements. Each food type had a THQ and HI < 1 indicating no undue non-carcinogenic risk from exposure to a single or multiple potentially toxic elements from the same food. The TCR for arsenic in these foods were all below 1 × 10 −4 , the upper limit used for acceptable cancer risk. There is no significant health risk to the consumer associated with the consumption of these Jamaican-grown food crops.

The aim of this work was to study the effect of industrial processing on the allergenicity of thr... more The aim of this work was to study the effect of industrial processing on the allergenicity of three commonly consumed Moroccan fish species in Fez region (sardine, common pandora, and shrimp). Methods. This work was conducted by a sera-bank obtained from 1248 patients recruited from Fez Hospitals. Their sera were analyzed for specific IgE binding to raw fish extracts. Among them, 60 patients with higher specific IgE levels were selected, and used to estimate the binding variation of IgE to these products under several processing (frying, cooking, canning, marinade, and fermentation) using ELISA analysis. Results. ELISA results demonstrated that all the studied processing cause a reduction in the immunoreactivity of human IgE to fish products, with a high action with marinade and fermentation compared to other processing. This alteration was also observed with rabbit IgG in all processed products, showing that the maximum reduction was marked in fermented sardine with 64.5%, in cooked common pandora with 58%, and in fermented shrimp with 69.2%. Conclusion. In conclusion, our study has shown that the allergenicity of the three studied fish could be reduced by different industrial processes with different degrees.

Objective.-The aim of the present study was to evaluate the prevalence of self-reported allergy t... more Objective.-The aim of the present study was to evaluate the prevalence of self-reported allergy to fish and shellfish among school children and its relation to breastfeeding. Patients and methods.-The study was based on a survey conducted between April 2014 and March 2015 in middle and high schools in Fez city and its surrounding areas. The total study population numbered 3010 people. Results.-The results show that 9.5% of children reported an allergy to fish and shellfish. Of these, 7% reported an allergy to sardines, 2.5% to mackerel and 2.1% to shrimps. The most common clinical manifestations observed in this population were cutaneous reactions (80.1%). The study of the effect of breastfeeding on self-reported fish allergy showed that such allergies were more frequent among children who have not been breastfed than in those who had, for all the types of fish studied (15.4% vs. 7.3%; P < 0.0001). Conclusion.-Self-reported allergy to fish and shellfish among schoolchildren, totalling 9.5%, indicates extensive sensitivity of school children to fish and shellfish. We showed that breastfed children were at lower risk of developing fish allergy than those who were not breastfed.

The work is based on a serum bank consisting of 146 sera from patients with suspected allergy. The evaluation of specific IgE to chicken meat showed that 46% of children and 38% of adults have positive values with 12.3% of children and 10% of adults have a higher rate than 20 UI/mL. This high sensitivity shows only partial cross-recognition to the egg whites ranging from 16 to 60%. Heat treatment of meat proteins in chicken showed that more than 80% of these patients show a decrease in the recognition of proteins above 30% after 1 hour at 80 • C. This demonstrates a high thermolability of epitopes recognized by sera from these patients indicating conformational antigenic sites rather than sequential.

The aim of the present study is to evaluate the effect of heat-treatment and enzymatic hydrolysis... more The aim of the present study is to evaluate the effect of heat-treatment and enzymatic hydrolysis on the allergenicity of cow's milk α-lactalbumin (α-LA) in a Moroccan population. A total of 557 patients were recruited from the University Hospital Complex and the Ibn El Khatib Hospital of Fez city. This population consented to realize a dosage of IgE levels to raw cow milk and then to α-LA native and treated with the studied treatments. The results revealed that 54.4% of the studied subjects presented positive values of serial IgE to raw cow milk. The effect of treatments on the allergenicity of α-LA showed that heat-treatment at 90°C and pepsin hydrolysis at 37°C, for 1 hour each, caused an important decrease in the IgE binding with an average of reduction of 59% and 74%, respectively.
