Ce document synthétise les principales caractéristiques de plus de 70 variétés de blé tendre adaptées à une conduite en agriculture biologique : caractéristiques physiologiques (précocité, alternativité, hauteur, résistance au froid, résistance à la verse…), résistances faces aux agresseurs (pouvoir couvrant, résistance à la fusariose, à la rouille, à l’oïdium, à la septoriose…), valeurs technologiques (poids spécifique, indice de Zélény, force boulangère…).
