This bread is just... god it's so good. Just reading the recipe makes me salivate.
Ingredients:
2 ½ to 3 cups unsifted flour
1 ½ teaspoons baking powder
¾ teaspoons baking soda
1 teaspoon salt
4 tablespoons sugar
3 tablespoons shortening or margarine
1 ½ teaspoons Caraway seeds
1 cup of buttermilk (or to 1 tablespoon vinegar in a measuring cup, add milk to make 1 total cup)
2/3 cup raisins, dark or golden, chopped
1 tablespoon butter or margarine, melted
¼ teaspoon ground cinnamon
Preheat oven to 350-375 degrees.
1. Grease an 8" or 9" round layer cake pan
2. In a medium bowl, combine: flour, baking powder, baking soda, 3 Tablespoons of sugar and caraway seeds.
3. Add shortening, cut in until in fine pieces
4. Make well in the center of the flour mix, pour in milk and add raisins. Mix.
5. Turn out on lightly floured board and knead gently a few times – add more flour, if needed.
6. Shape into a 5" round and place in prepared pan.
7. Using a very sharp knife, cut dough crosswise (into quarters), about 2/3 of the way through. Brush top surface with melted butter and sprinkle with remaining 1 Tablespoon of sugar, mixed with cinnamon.
8. Bake between 30-40 minutes (you have to watch it!), until golden brown.
Best served warm.
OPTIONAL: Add 2 Tablespoons of wheat germ or 2 Tablespoons rolled oats.
