The objective of this work is, as a first step, to calculate the molecular structures and properties of the parent molecule, b,b-carotene using different levels of computation in order to establish the most accurate way of studying these compounds. The molecular structure of b,b-carotene is presented together with its infrared spectrum (IR), the UV-vis and fluorescence (fluo) spectra, the dipole moment and the isotropic polarizability, the free energy of solvation DG(solv) in different solvents, and the chemical reactivity sites through condensed Fukui functions.

The aim of this work was the determination of phenolic compounds presents in blue corn flour before and after a fermentation process, where different proportions were used of blue corn (Zea mays L.) flour and Czapek Dox culture medium (90 mL of culture medium with 10 g of blue corn flour, 80 mL of culture medium with 20 g of blue corn flour and 70 mL of culture medium with 30 g of blue corn flour) and were fermented at 3 different times (20, 25 and 30 days) with the Colletotrichum gloeosporioides fungus. A determination of the phenolic compounds was carried out with five standard solutions, which were cyanidin 3-glucoside (CYA), pelargonidin 3-glucoside (PEL), chlorogenic acid (CLA), quercetin (QRC) and cinnamic acid (CA). The obtained results showed the presence of CA and PEL. The most abundant phenolic compound in the fer...

The lipid evaluation was: 1.74% in bean seed and 1.214 %, 1.226%, and 1.417% in the retort pouch treatments. The enzyme Candida Antarctica lipase was used to transesterify the oil and was analyzed by chromatography (GC/ MS), identifying the acids: hexadecanoic, 9-octadecanoic, eicosanoic, and octadecanoic. Total protein content evaluation showed 15.88% in the bean seed and 4.75%,4.58%, and 5.18% in the retort pouch treatments with a one-factor analysis of variance (ANOVA) Tukey test p < 0.05. The Phaseolin protein was identified by the SDS-PAGE electrophoresis method. These results showed that the nutrients of retort pouch pinto beans were conserved despite the high temperature and constant pressure.

Carbonic anhydrase (CA) (EC: 2.4.1.1) catalyzes the rapid conversion of carbon dioxide plus water... more Carbonic anhydrase (CA) (EC: 2.4.1.1) catalyzes the rapid conversion of carbon dioxide plus water into a proton and the bicarbonate ion (HCO3-) that can be found in prokaryotes and higher organisms; it is represented by four different families. Carbonic anhydrase is a metalloenzyme that requires Zn as a cofactor and is involved in diverse biological processes including pH regulation, CO2 transfer, ionic exchange, respiration, CO2 photosynthetic fixation, and stomatal closure. Therefore, the review includes relevant aspects about CA morphology, oligomerization, and structural differences in the active site. On the other hand, we consider the general characteristics of Zn, its geometry, reactions, and physiology. We then consider the CA catalysis mechanism that is carried out by the metal ion and where Zn acts as a cofactor. Zinc deficiency can inhibit growth and protein synthesis, and there is evidence that it reduces the CA content in some plants, which is a relationship addressed i...

M05-2X/6-31+G(d,p) level of theory calculations were used to obtain their molecular structures, as well as to predict the infrared (IR) and ultraviolet (UV-Vis) spectra, the dipole moment and polarizability, the pKa, and the chemical reactivity parameters (electronegativity, hardness, electrophilicity and Fukui functions) that arise from Conceptual DFT. The calculated values were compared with the available experimental data for these molecules and discussed in terms of their usefulness in describing photovoltaic properties.

However, the betalains are highly thermolabile, and their application in thermal process, as extrusion cooking, should be evaluated. The aim of this study was to evaluate the effect of extrusion conditions on the chemical components of red cactus pear encapsulated powder. Cornstarch and encapsulated powder (2.5% w/w) were mixed and processed by extrusion at different barrel temperatures (80, 100, 120, 140 °C) and screw speeds (225, 275, 325 rpm) using a twin-screw extruder. Mean residence time (trm), color (L*, a*, b*), antioxidant activity, total polyphenol, betacyanin, and betaxanthin contents were determined on extrudates, and pigment degradation reaction rate constants (k) and activation energies (Ea) were calculated. In vitro strawberry and raspberry establishment techniques were evaluated from meristematic explants, apices and internodes. Finally, in 0.05% timerosal solution for 15 min. Apices were evaluated in the case of strawberry apices, and meristems and internodes in the raspberry. For the establishment, Murashige and Skoog salts added with cytokinin 6-benzylaminopurine (BAP), gibberellic acid (GA) and indole butyric acid (AIB) in different concentrations were used for the strawberry case. Koch] is one of the most important nut crops in arid and semiarid regions of Mexico. Here, most pecans are grown in saline soils having poor permeability which are further degraded by the use of low-quality irrigation water. Salinity adversely affects both pecan nut quality and yield. Little work has been done to explore the physiological effects of salinity on native pecan trees. Here we examine physiological changes determined by exposure of pecan seedlings to sodium sulfate (Na 2 SO 4) at four concentrations: 1000, 2000, 3000 and 4000 mg/L applied twice weekly over a 70 d period. Control plants were similarly irrigated but with water free of Na 2 SO 4. The aim was to identify and quantify the putative salinity damage to native pecan seedlings growing in Chihuahua, Mexico. Seedlings exposed to Na 2 SO 4 were of reduced height and stem diameter. At the highest exposure level (4000 mg/L), proline concentration in the leaflets was 820% higher (2.63 mg/g) than in the controls (0.32 mg/g), and chlorophyll was 35% lower (23.4 mg/L) than in the controls (36 mg/L). Meanwhile, sulfate ion concentration was increased by 104% from 84.47 to 172.5 mg/g. Root biomass decreased by 310% (from 30.5 to 9.5 g) and foliar biomass decreased by 260% (from 26.7 to 10 g). No disease symptoms were apparent in any seedlings suggesting that these changes were induced by Na 2 SO 4 stress alone. Of the physiological parameters measured, proline, chlorophyll and sulfate ion concentration, as well as root and shoot biomasses were strongly affected by irrigation with Na 2 SO 4 at concentrations of 2000 mg/L and above.

Increases in barrel temperature and screw
