additive for food processing.The study undertook the collection, stabilization and extraction of polysaccharide,
samples of Junín, Ancash, Cajamarca and Pachacamac (Lima). Also, the physicochemical, microbiological
and toxicological analysis was performed in order to ensure their safety and security for human consumption.
The results are: pH neutropH: 7.115 (N. sphaericum) and 7.679 (N. commune). Viscosity analysis N.
sphaericum gave a higher value of 38.3 cps, while the N. commune gained 4.5 cps. The gel point gave
greater value for N. sphaericum compared with N. commune. In the microbiological analysis found no
pathogenic microorganisms. The LD 50 in mice would be about 1500 mg / kg for the Nostoc sphaericum
whereas for Nostoc commune would be about 2000 mg/kg. Physiochemical parameters, microbiological
and toxicological studies indicate that polysaccharides extracted are within acceptable parameters.
