I have been trying to think of some more pizza ideas besides the plain-old pepperoni (don’t get me wrong, I love pepperoni), but last week I decided to try Taco Pizza. We loved it! It is a nice variation from the norm. I hope you enjoy it as well!
Taco Pizza
Ingredients:
(Crust)
2 cups almond flour
1 cup arrowroot
1 1/2 tsp. baking powder
1 1/2 tsp. salt
1 1/2 tsp. oregano
1/4 tsp. black pepper
3 eggs
1/2 cup almond milk
(Toppings)
3/4 lb. – 1 lb. cooked ground beef
2 Tbsp. taco seasoning (divided)
2-3 Tbsp. water
1 1/4 cup pizza sauce or pasta sauce (I usually use Hunt’s Traditional Pasta Sauce)
mozzarella cheese (optional)
lettuce
tomatoes
(0ther favorite taco toppings–salsa, olives, avocado, taco sauce, etc.)
Directions:
1. Preheat oven to 425 degrees. Grease a 10×15 pan (or similar sized pan) or line with parchment paper.
2. Whisk together dry ingredients for crust in a large bowl (almond flour, arrowroot, baking powder, salt, oregano & pepper).
3. Add eggs and almond milk to the dry ingredients and stir until smooth (batter will be very wet).
4. Spread batter evenly onto greased or parchment paper-lined pan. (I find it works well to use a silicone spatula for this.)
5. Bake at 425 degrees for 8-12 minutes or until very lightly browned on top.
6. Meanwhile, combine cooked ground beef with 1 Tbsp. taco seasoning and 2-3 Tbsp. water in a skillet and warm on the stove.
7. In a small bowl, combine pizza or pasta sauce with 1 Tbsp. taco seasoning and stir to combine.
8. Remove crust from oven (after the 8-12 minutes of baking) and spread pizza evenly over the crust.
9. Top sauce with the warmed taco meat and cheese (if using).
10. Bake for another 10-12 minutes or until cheese is golden brown.
11. Remove from oven and top with all your favorite taco toppings and serve!
