Shallot, garlic, and chicken or vegetable broth served as the base, while herbes de Provence and anchovy paste contributed layered flavor. Since pasta doesn’t reheat well we turned to rice for the starchy element in this soup, though you could certainly use your favorite pasta if you prefer. Since the rice may absorb some liquid as it sits, you may want to adjust the consistency of the soup with additional broth when reheating. 1 shallot, minced5 garlic cloves, minced2 teaspoons oil1/2 teaspoon herbes de Provence1/2 teaspoon anchovy paste3 cups chicken or vegetable broth6 ounces boneless, skinless chicken thighs, trimmed and cut into 1/2-inch pieces1/4 cup long-grain white rice, rinsed1 carrot, peeled, halved lengthwise, and sliced 1/4 inch thick1/8 teaspoon table salt1/4 cup frozen peasLemon wedges 1. Heat shallot, garlic, and oil in medium saucepan over medium-low heat, stirring occasionally, until shallot and garlic are softened and beginning to brown, 3 to 5 minutes. Stir in herbes de Provence and anchovy paste and cook until fragrant, about 30 seconds. 2. Stir in broth, chicken, rice, carrot, and salt, scraping up any browned bits. Bring to simmer and cook until rice and chicken are tender, about 12 minutes. 3. Off heat, stir in peas and let sit until warmed through, about 2 minutes. Season with salt and pepper to taste. Serve with lemon wedges. (Soup can be refrigerated for up to 2 days.)
