The study was anchored on the stimulus-organization-response theory. The study focused on customers who patronize casual dining restaurants in Kenya and adopted a cross-sectional survey design. A cluster sampling method followed by simple random sampling methods was used to select respondents from the target population. Four hundred and fifteen participants (n = 415) were drawn using simple random sampling from five Kenyan universities. The data collection tool included a questionnaire with a response rate of 69.1%. Data were analyzed using descriptive and inferential statistics. The study results demonstrated that consumer item choice is influenced by various factors. The results showed that there was a weak association (r = 0.36, p < 0.05) between descriptive language and consumers' menu item choices. The F-value (F (1) = 48.308, p < 0.05) impli...

Research paper thumbnail of Effect of Desmodium intortum and black soldier fly larvae (Hermetia illucens) based meal on sensory and physicochemical properties of broiler chicken meat in Kenya

Three formulations: T1:75%BSFL:25%DI; T2:50%BSFL:50DI, and T3:25BSFL:75% DI as a protein source were tested. A conventional feed was used as the control diet. On day 42, the chickens were slaughtered, and thigh muscles were used for sensory and physicochemical evaluations. T1 was preferred for its flavour and tenderness, T2 for its juiciness and T3 for its colour, flavour, taste and overall acceptability scores. In terms of physical properties, all three types of meat had significantly lower moisture content and a higher water holding capacity than the control. T3 had the lowest moisture content, cooking loss and pH, whereas the meat from control diet had the highest cooking loss and pH. No significant differences were found in terms of meat lightness; however, meat from control d...

Poultry Science, 2021

This study aimed to evaluate the performance of broiler chickens fed on 3 black soldier fly larva... more This study aimed to evaluate the performance of broiler chickens fed on 3 black soldier fly larvae (BSFL) (Hermetia illucens) and Greenleaf desmodium (Desmodium intortum)-based meals. We evaluated growth performance, carcass quality, and profitability under various commercial pathways (doorstep, retail, whole, and assorted). Desmodium and BSFL powders were formulated into 3 ratios: T1 25:75, T2 50:50, and T3 75:25. A commercial feed was used as a control. One hundred and twenty mixed-sex 1-day-old broiler chicks (Cobb) were reared in pens for 42 d in a completely randomized design. The chickens were weighed weekly to monitor their growth rate. After the 42-day rearing period, they were slaughtered for carcass quality evaluation and recording of the weights of internal organs. During the initial growth phase (7-21 d), significant effects of fish meal replacement were found on the chickens' average weight (P , 0.001), average daily body weight gain (P , 0.001), average daily feed intake (P , 0.001), and feed conversion ratio (P , 0.001). However, during the second phase (21-42 d), no significant effect of the replacement was detected except on average daily feed intake (P 5 0.003). No significant differences were found in terms of the relative weights of internal organs. It was found that Desmodium-BSFLbased feeds were more profitable than the control feed, and the assorted and retail modes of sale generated more revenue compared to when the chickens were sold at doorstep and on whole-chicken basis. The return on investment was higher for a push-pull adopter compared to a non-adopter. The study found that a BSFL-Desmodium mixture can be a valuable replacement for the protein component in conventional feed and would provide a new impetus for the adoption of push-pull.

The study sought to establish if M&E system promotes accountability in education to management or performance. Therefore, to expound on the practicability of M&E process in management accountability especially at ERFA-K. Methodology: The research employed mixed research method. The theory of change and empowerment theory in this study conceivably showed the application of M&E in promoting accountability in education. The study adopted descriptive research method. This research adopted the descriptive survey design approach since it involved collecting primary data to test or answer questions concerning the current status of the subject under study. The confidence level in this research was 95% with confidence interval of 9.32 from the populations of 141 at ERFA-K with sample size of 120 participants. Purposive sampling was used ...

The all-inclusive holiday concept was first introduced in the in 1840s, and later re-emerged in the 1930s. The concept exploded in the Caribbean in the 1950s and was introduced in Africa in the 1980s. An explosion of the concept was later realised along coastal strips in the late 1990s. At its inception, the allinclusive concept was a fundamentally different holiday where a guest had to carry no form of currency, paper, coin or plastic to a hotel, resort or while on a cruise. With time it was realised that the application of the all-inclusive concept had been modified and varied from the original. Due to its modification, the validity and efficacy of the concept has been questioned particularly with regard to service procedures, professionalis...

Although several studies on customer satisfaction and return intention have been done, studies on customer satisfaction regarding service quality at star rated restaurants has not been done in Kenya. The purpose of this paper is therefore to determine the influence of service quality towards customer satisfaction and return intention. A cross sectional survey study was employed in recording the information that is present in the population. Simple random sampling method was used in selecting 450 customers used in the study. The target population included all customers visiting the selected restaurants. Structured questionnaires were used in acquiring relevant information from customers. A five point liker type scale was used to measure satisfaction with service quality. Descriptive analysis was used in describing behavioral characteristics of respondents.
