Creamy Sweet Potato Soup
Ingredients:
1 chopped onion
1 cup frozen bell peppers
1 teaspoon ginger powder
1 teaspoon cinnamon
3 cups vegetable broth
1 teaspoon coriander
2 large sweet potatoes chopped, cubed, and pealed
3 tablespoons tomato puree
1 tablespoon coconut aminos
2 tablespoon maple syrup
2 tablespoon lemon juice
1/4 cup cilantro
Garlic powder
2 tablespoon PB2 powder. (low fat peanut butter flavor.)
Instructions:
Add a splash of vegetable broth to a pot and saute’ onions in coriander, garlic powder, ginger powder, and cinnamon on high heat until they become golden. Keep adding splashes of water and stir so the onions don’t stick to the pot. Add the frozen bell peppers, coconut aminos, lemon juice, tomato puree, PB2, and maple syrup. Add another splash of vegetable broth and stir well.
Add the sweet potatoes and the rest of broth along with the cilantro and simmer on medium heat for 10-15 minutes and occasionally stir. To check if sweet potatoes are soft poke a knife through one and it should slide in. Using a blender give the soup a blend until the texture is more creamy.
(Note: this soup goes great with croutons.)
